Baked Thai pineapple salmon in foil is an easy and healthy 30 minute salmon dish with a sweet and spicy sauce and juicy pineapple all made on one pan with minimal cleanup and maximum flavor. 

Baked Thai Pineapple Salmon in Foil

salmon

salt and pepper (to taste)

sweet chili sauce

hoisin sauce

rice vinegar

pineapple

peanuts (roughly chopped)

cilantro (roughly chopped)

Preheat oven to 375 degrees. Line a baking sheet with nonstick foil. Lay salmon in the center and season with salt and pepper. Slip pineapple slices underneath the edges of the salmon.q

Whisk together sweet chili sauce, hoisin sauce, rice vinegar, and 1/4 cup pineapple juice. Pour mixture over salmon. Fold edges of foil up around the salmon.

Bake for 15 minutes. Pull back the edges of the foil to expose the salmon, switch to broil and cook another 5-10 minutes until edges just barely begin to blacken.

Sprinkle chopped cilantro and peanuts over the top and serve.

Absolutely amazing recipe! I used the exact ingredients and it turned out better than I expected! I have to say this is my new favourite dish, my mom loved it and said it was the best salmon she's ever had. Only difference was that I had to broil it for almost 10 minutes to reach the Golden color. Never tried Pineapple with Salmon before so this was delicious!! Also paired it with some brown rice, was an explosion of flavour in each bite! Shared this recipe for sure. 🙌

It was really good! Very easy to make. The only thing thing I would do differently is to put pineapple on top if I left the skin on. I did add some of the natural juice in the sauce too. I couldn’t really taste pineapple.

Husband and i loved it. I used 1.5lbs of salmon but kept the rest of the quantities the same.  Just had a little bit of sauce leftover.

This is an amazing dish packaged with a lovely blend of flavors and just a touch of heat (most likely from the red pepper flakes). Keep to all the ingredients. The cilantro really makes this dish and the warm pineapple slices underneath the salmon are an added plus. If you want to impress company, serve them this dish! Not only is it delicious and easy to make but it has a lovely presentation. And don’t forget the garnish!

(Pic is before cooking.) I put jalapeños with the pineapple rings, which was tasty!  Added the cilantro after cooking. I had to broil much longer to cook all the way through. Other than that, it was a hit! Served with ginger garlic rice.

Made this exactly per the recipe and paired it with coconut rice. Delicious!!! I’ll use fresh pineapple next time for stronger flavor. Also worth noting it took longer in my oven to broil than 2 minutes to get color. Closer to 10.

This turned out really good! The flavour were fresh and the salmon cooking time was perfect! 
It was also really interesting and pleasant how the pineapples paired with the marinade. 
I would cook this for 4 -6 people for a gathering as it is no hassle at all!

This was super good.  Easy to make and I even substituted the sweet chili sauce and made my own with Sriracha and sugar and pineapple juice.

This Pineapple Salmon Is Our New Favorite Dinner

This is a tasty, healthy Thai inspired baked pineapple salmon that will be ready in only 20 minutes. You can make it all in one pan, with minimum clean-up and maximum flavor.

(1.2 kg) side of salmon

Salt and pepper,

unsalted butter, melted

lemon juice

garlic cloves,

pineapple slices,

cilantro,

Lime slices,

Preheat your oven to 375°F | 190°C. Line a baking sheet with nonstick aluminium foil.

Place the salmon on the sheet and season with salt and pepper on both sides.

Arrange pineapple slices underneath the salmon.

In a small bowl whisk together sweet chili sauce, butter, hoisin sauce, garlic, lemon juice and 1/4 cup reserved pineapple juice. Pour the mixture over the salmon.

Bake for 15 minutes or until flaky and cooked through. You can broil  for the last 5 minutes until the edges are charred.

I made it today and it was beyond delicious! A great recipe!

Oh my gosh!  I made this tonight and it was so delicious!  I made. The sauce (amazing), in advance so dinner came together in just a few minutes.  I only had two fillets, so cut the sauce by half and cooked it for eight minutes.  It was incredible.
