Pineapple tarts are a must for Chinese New Year. This is an easy and the best pineapple tarts recipe ever. Makes 30 crumbly and buttery pineapple tarts.

Pineapple Tarts

(350 g) all-purpose flour

corn starch

salt

confectioners’ sugar or icing sugar or powdered sugar

(8 oz./ 1 cup

unsalted butter

(20 oz. can) sliced pineapples

(1/2 cup) sugar, more or less to taste

If you are using canned pineapple slices, drain...

If you are using canned pineapple slices, drain the pineapple slices and then squeeze the extra water/juice with your hands. Blend the canned pineapples until they are mushy, about 10 seconds. If you use fresh pineapples, remove the skin, cut into pieces and blend for 10 seconds.

Transfer the blended pineapple into a deep pan...

Transfer the blended pineapple into a deep pan (non-stick preferably). Add sugar and cloves and stir well. Cook on medium to low heat until most liquid has evaporated, and the pineapple jam turns golden in color. Stirring constantly and continuously using a wooden spoon to avoid burning. Taste, and add more sugar as needed. Remove and discard the cloves and let cool in the fridge.

Sieve the flour, cornstarch, salt and sugar in a big bowl or container. Soften the butter to room temperature. Combine the flour mixture, butter, and egg yolks together. Knead to form the dough. The dough is ready when it doesn't stick to the hand. If the dough is too crumbly or dry, add a little bit more butter (about 1 tablespoon) until the dough is easy to work with.

Divide the dough and pineapple jam (filling) each into 30 equal rounds. Flatten the pastry dough with your palms and put the pineapple filling in the middle and use the dough to cover the filling. Use your palms to round it up and then shape it into a roll about 1 1/2-inch long shape. Use a small paring knife to make criss-cross patterns on the tart and then brush it with the egg wash (see picture above) using a small pastry brush. Place the pineapple tarts on a tray lined with parchment paper, arrange the pineapple tarts so they are at least 1 inch apart of each other.

Add the pineapple juice and cornstarch to a small pot on medium high heat. Whisk occasionally until the juice thickens, about 10 minutes. Cool. Add the pineapple to the mixture and stir.

These highly addictive pineapple tarts are made from scratch using homemade chunky spiced pineapple jam, which sit atop a buttery, crumbly tart pastry. One piece will not be enough, so make all you want!

Highly Addictive Homemade Pineapple Tarts (凤梨挞 ／ 黄梨挞)

Pineapple Jam (Click on link for recipe)

Plain Flour

Salt

1.5 tbsp (Optional) Milk Powder

g Icing Sugar

375 g Cold Butter (Unsalted)

tsp Vanilla Extract

Egg Yolks

Egg White

Corn flour (For flouring the surfaces)

Sift the plain flour. Then add in the salt, milk powder (optional) and icing sugar, and mix well.

Cut the cold butter into cubes, then use a dough blender or your fingers to blend the butter into the dough until it achieves a breadcrumb-like consistency.

Add the vanilla extract and eggs (2 egg yolks and 2/3 egg white), and use your fingers to gently bring the dough together. Be careful not to overwork the dough.

Divide the dough into 2 batches. Place each batch in a separate bag, then flatten it and chill it in the fridge for about 30 minutes.

Meanwhile, weigh out and roll the pineapple jam into balls of about 6g each.

PREPARATION METHOD

Preheat oven to 170&deg;C,&nbsp;then roll out the 1st batch of dough to about 0.5cm thickness on a well floured surface. Ensure that the rolling pin is well floured as well.&nbsp;

Cut out the dough using a pineapple tart cookie cutter. First, press firmly on the outer cookie cutter to cut the shape out. Then press down on the inner mould to get a nice deep impression. Flour the cookie cutter before every use.&nbsp;Place the cut out cookies on a greased baking tray.

Add 3 egg yolks into a bowl and beat it. Then brush egg wash over the surface of each tart using a soft bristled brush.

Bake batch #1 tarts for 5 minutes at 170&deg;C on the middle lower rack of the oven. Meanwhile, work on batch #2.

After 5 minutes, place the pineapple jam balls on the batch #1 tarts, pressing down gently to remove any air pockets. Then bake for another 10 minutes at&nbsp;170&deg;C.

Take out batch #1 to cool, and place batch #2 in oven to bake as per instructions above. Allow cookies to cool completely on a cooling rack before storing in an airtight container.
