Club-Style Pinwheel Sandwiches

lb bacon (about 6 slices, cooked and crumbled)

oz cream cheese (softened

mayonnaise

ranch seasoning

burrito tortillas (9 inch)

American cheese (or colby jack, provolone, and cheddar)

lbs sliced turkey (or ham)

beefsteak tomatoes (optional.

buttercrunch lettuce (or kale)

Cook the bacon if you are not starting with pre-cooked bacon. Chop the bacon into fine bacon bits.

Using an electric hand mixer, beat the cream cheese. Add in the mayonnaise and ranch seasoning. Mix to combine. Add the chopped bacon and mix using a rubber spatula.

Lay out the 10 tortillas and start to assemble. Spread the cream cheese mixture evenly onto the tortillas, dividing evenly between the 10 of them.

Lay three slices of cheese in a line on top of the cream cheese in the center of the tortilla. On top of the cheese cover the tortilla with deli meat of your choice. Leave a bit of open room at the top of the tortilla as everything shifts when you start to roll.

Add the tomato and fresh lettuce in the same fashion as the cheese.

Roll from the bottom up, tightly.

Place in a casserole dish or wrap with plastic wrap and store in the refrigerator seam side down, until you are ready to slice.

Each roll is to be sliced about 1 inch in thickness and can make 7-8 pinwheels from one tortilla roll. Secure with toothpicks if needed and for easy dipping.

red bell pepper strips

Mix together the cream cheese and ranch powder until thoroughly combined.

Spread the cream cheese mixture evenly over the 4 tortillas.

Leaving a 1 inch border on all sides, lay out 2 tablespoons of each vegetable in rows across the tortillas; top with shredded chicken.

Roll up each tortilla tightly; if the ends don't stay shut you can add a bit more cream cheese to seal. Cut crosswise into pinwheels and serve.

Place the cream cheese, fresh parsley, minced garlic and salt in a medium size mixing bowl.  Use a hand held mixer to blend and combine all the ingredients.

Lay the flour tortillas out on a flat working surface and spread the cream cheese mixture evenly onto each of the tortillas.

Then layer the ham out evenly on the flour tortillas.  Next layer the provolone cheese on top of the ham and then layer the deli turkey on top of the cheese.

Finally, layer the Romaine lettuce leaves on top of the turkey.  Use enough lettuce to cover the deli meat.

Then tightly roll up each tortilla.

Use toothpicks to secure the tortillas and then slice each tortilla into 8-10 pieces (secure each piece with a toothpick).

Then the pinwheel sandwiches are ready to serve and enjoy!
