Super Easy Homemade Pizza Pockets

store bought pizza dough

pizza sauce

mozzarella cheese (grated)

pepperoni (I used turkey pepperoni)

mushrooms (sliced)

green pepper (diced)

red onion, diced

Preheat oven to 425 F.

Roll out pizza dough until it is about 1/2 an inch thick. Cut into rectangles that will easily fold over. On one half of the rectangle, spread a bit of sauce, cheese and toppings, leaving space around the edges for the dough to touch together. NOTE: you only want about 1 tbsp per topping (eg 1 tbsp mushrooms, 1 tbsp green pepper, etc.)

Seal all edges, using a bit of water if necessary. Bake on a parchment lined baking sheet for 20 minutes until dough is crisp and golden. Wait 5 minutes before eating - they will be hot!

TO FREEZE: You can also freeze pizza pockets for up to 3 months. If freezing, make sure to freeze them after you have baked them in separate freezer bags, and then microwave for 1-2 minutes to thaw. Place paper towel over pizza pocket and then microwave another 1-2 min to completely heat through. You can also freeze raw, then bake for 30-40 minutes from frozen for fresh pizza pockets.

Homemade Pizza Pockets

These easy homemade pizza pockets are like mini-calzones bursting with gooey cheese, savory sauce, and your favorite toppings, all wrapped up in a golden crust.

Pizza Pockets

flour

yogurt

shredded cheese

vegetables

unsalted butter, melted

oregano

garlic powder

Preheat oven to 400°F.  In a mixing bowl combine the flour and yogurt and mix using a spoon first then hands. At first, dough will seem dry and crumbly, but keep mixing until it forms into a ball.

Once the dough comes together, transfer it onto a lightly floured surface. Knead the dough for a few minutes until it&#39;s smooth and elastic. If the dough feels too sticky, you can add a little extra flour as needed.

Divide the dough into 4 or 6 balls. Using a rolling pin dusted with flour, roll the dough out to about 1/4 inch thickness. Transfer to a baking sheet lined with parchment paper.

Spread a spoonful of pizza sauce onto one half of each dough, leaving a small border around the edges. Sprinkle shredded mozzarella cheese over the sauce, then add the vegetables or any of your favorite pizza toppings.

Fold the other half of the dough over the toppings, creating a pocket. Use your fingers or a fork to press the edges together firmly, sealing the pocket shut.

Brush the tops of the pizza pockets with melted butter (or oil). Sprinkle oregano and garlic powder.

Bake the pizza pockets in the preheated oven for about 18-20 minutes, or until the crust is golden brown.

Once baked, remove the pizza pockets from the oven and allow them to cool for a few minutes before serving. Be careful, as the filling will be hot! Serve with extra pizza sauce for dipping, if desired, and enjoy!

Best vegan Calzone recipe! These delicious pizza pockets are a great alternative to regular pizza or Stromboli. The Calzones are stuffed with mushrooms, peppers, and vegan cheese. The recipe is not only dairy-free and egg-free, but also gluten-free, and easy to make!

Vegan Calzone

gluten-free pizza dough

oz mushrooms

bell peppers (colors of choice, chopped)

onion

garlic

tomato sauce ((e.g. marinara sauce) (see notes))

(or cheese

onion powder

tsp oregano

Sea salt and black pepper (to taste)

olive oil

First, prepare the gluten-free pizza dough, as described in this recipe or make your own favorite pizza dough (for example, with wheat flour, if not gluten-free).

Heat oil in a pan/skillet over medium heat and add the onion. Fry for about 3-4 minutes, then add garlic, mushrooms, and peppers. Fry for a further 6-10 minutes until the water from the veggies has evaporated.

Add onion powder, ground oregano, salt and pepper to taste and turn off the heat. Set aside until ready to use.

Preheat oven to 480 °F (250 °C). Line a large baking sheet with parchment paper. Divide the pizza dough into 4 equally sized pieces.

Roll out one piece of dough on a floured surface into a 6-7&quot; (15-18 cm) circle, about 1/4&quot; (0.6 cm) thick.

Spoon a little of the tomato sauce on one half of the dough, add the mushroom/veggie mixture, and vegan cheese of choice or this vegan cheese sauce. Make sure to leave at least 1/2&quot; (1.25 cm) of space around the edge of the dough.

Carefully fold the other half of the dough over, and pinch the edges of the pocket with your fingers to seal (check pictures in the blog post above). Please note that gluten-free doughs can be quite brittle and tend to burst easily. So make sure to handle it carefully.

Repeat this step with the remaining dough. Use a spatula to transfer the pizza pockets to the prepared baking sheet. Optional: Brush tops with a mixture of 1/2 tbsp soy sauce, 1/2 tbsp water, a few drops of oil, and a pinch of smoked paprika and turmeric.

Bake the calzones for about 14-18 minutes. Let cool for 5 minutes, then serve with the remaining pizza sauce on the side. Please don&#x27;t burn your mouth as the filling is very hot. Enjoy!

The recipe came out amazing!!! The only thing I didnt like was the fact that I  didn’t get more dough!!! Lol. The only thing I changed was adding a bit of spinach for preference but this recipe will have you full, balanced, and amazed with flavor. As a culinarian I am so grateful to have a new loved blog that pushes my creativity and usual go to’s.
