Per la ricetta dei pomodori ripieni, lavate e asciugate bene i pomodori poi togliete a ciascuno una calottina, tagliandola dalla parte inferiore. Sfornateli appena pronti, disponeteli su un piatto da portata adeguato e serviteli: sono ottimi tiepidi o anche freddi.

For the spaghettoni, mussels and cherry tomatoes recipe, wash the tomatoes and cut them into quarters. Clean the mussels. Heat a saucepan with 2 tablespoons of oil; brown the garlic clove with the peel for a couple

of minutes, then remove it and add a bunch of parsley, including the stems, and the tomatoes and cook for about 3 minutes; add the mussels, mix in with half a generous glass of white wine, cover and continue cooking for about 5 minutes, until the mussels open; at the end remove the parsley stalks and keep the cooking liquid. Shell the mussels. Chop some basil leaves and a sprig of parsley to obtain 1 generous tablespoon of mince. Cook the spaghetti in salted boiling water for half the time indicated on the package. Drain and finish cooking in the mussel broth, adding the shellfish 2-3 minutes before turning off. Distribute the spaghetti into dishes, finish with the chopped basil and parsley and serve.

Prima di tutto con l’aiuto di un batticarne appiattite un poco la fette in modo che abbiano più o meno lo stesso spessore.  Poi passate ogni cotoletta nel pan grattato, poi nell’uovo sbattuto e infine di nuovo nel pan grattato.  Al fine di ottenere una panatura omogenea e  presente in ogni parte. Quindi schiacciate bene.  Poi scaldate una padella larga con il burro chiarificato. Aspettate che si fonda ad una temperatura non eccessiva e fate cuocere le vostre costolette circa 3 minuti per lato. prolungate di 1 minuto per lato se le volete ben cotte.  Mi raccomando, con un cucchiaio irrorate con il burro caldo anche l’osso, in modo che la carne si cuocia ovunque in maniera uniforme.  Riducete il tempo di cottura a 1 minuto per lato se avete fettine sottili, oppure aumentate i tempi se le vostre fette hanno uno spessore piuttosto alto .  Il risultato finale dev’essere un colore dorato – caramellato  Infine polverate di sale e servite calda; in questo caso con rucola e pomodorini conditi precedentemente con un filo d’olio e sale. Cut each tomato into 4 round slices. Make 8 “sandwiches” using 2 circles of prosciutto and 1 circle of mozzarella between 2 slices of tomato. Dip the sandwiches in flour, then in the beaten eggs, the bread crumbs, then again in the eggs and bread crumbs (double breading). Fry them in plenty of hot oil. Cut them in half, sprinkle with salt and serve immediately.

Basil Tart With Fresh Cheese and Roasted Tomatoes

1LB. robiola cheese

1 1/3CUP all-purpose flour

1/2CUP unsalted butter, softened

For the dough: Purée 30 basil leaves with 1/4 cup water. Dissolve 1 tsp. salt in 1 Tbsp. water. Mix the softened butter with the flour, the dissolved salt and water, and basil leaf purée. Knead until you have a soft dough. Wrap in plastic wrap and refrigerate for around 30 minutes.

Preheat the oven to 320 °F. Blanch the tomatoes in boiling water. Peel them, cut into quarters, and remove the seeds; arrange on a baking sheet covered with parchment paper. Dress with a drizzle of oil, basil and coarse salt and roast for 30-40 minutes. Remove the tomatoes and increase the oven temperature to 350 °F.

Roll out the dough to around 1/8" thick. Butter and flour a 8 1/2" baking dish and line with the dough. Cover with parchment paper, fill with dried beans and bake at 350 °F for 13-15 minutes (blind baking). Remove the beans and bake for another 10 minutes; remove the tart from the oven and let cool.

Mix the robiola cheese with 3 chopped basil leaves and spread on the tart. Top with the roasted tomato petals, arranging them in a sunburst pattern. Garnish with basil leaves and serve.
