Slow Cooker Poor Mans Stew

Ground beef

½ lb Potatoes

Carrots

c Water

Onion (chopped)

oz tomato paste ((I used a 6 oz can))

tsp oregano

Onion powder

tsp Minced garlic

Salt and pepper

Brown the ground beef in a skillet over medium high heat, and drain the excess fat.

Place the ground beef into the slow cooker along with the potatoes, onions and carrots. Stir to combine.

In a bowl, whisk together the water, tomato paste, oregano, onion powder, minced garlic and salt and pepper to taste.

Pour the mixture over the meat and vegetables in the slow cooker.

Cook on low for 7 hours.

Serve with a side of bread if desired.

Ground Beef Stew (Poor Man’s Stew)

packet beef stew seasoning mix

Bay leaf

In a large pot or dutch oven, add ground beef and cook until browned, breaking it apart with a spoon or spatula. Drain any excess grease.

Add in chopped potatoes, carrots, onion, and diced tomatoes.

Pour in beef stock, worcestershire sauce, beef stew seasoning mix, and bay leaf and gently stir to combine.

Bring the stew to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 25-35 minutes, or until the vegetables are tender. The cook time may vary depending on how large the vegetable pieces are.

Ladle the stew into bowls and serve hot. Enjoy!

Italian seasoning ((or oregano))

Add the cooked ground beef, potatoes, carrots, onions, and garlic to a 5-quart or larger slow cooker.

In a small bowl whisk together the tomato paste, water, salt, pepper, onion powder and Italian seasoning. Pour this mixture over everything in the slow cooker. Stir.

Cover and cook on LOW for 7-8 hours, without opening the lid during the cooking time.

Serve with buttered sandwich bread or rolls and Enjoy!

I have made this a couple of times, and it's excellent tasting, but the potatoes and carrots are not soft. Almost to the point of being crispy. 

I am using a Greenpan Slow Cooker that has a non stick metal pan (has a searing function) instead of the crock style insert. Is that my problem? 

Otherwise I will go back to the Dutch Oven for this recipe.

I did like this but note a couple things - it needed another .5 - 1 cups of liquid, I used low sodium beef broth, also needed more garlic. I only had 4 medium sized red potatoes on hand but it was fine since the recipe didn't use much liquid. I threw in a few rosemary sprigs so used half the oregano but next time would use maybe twice the oregano and use 1.5x the salt, the stew felt a little bland. Mine was done at the 5 - 6 hour mark on low. The potatoes and veggies were perfectly tender and the beef was good. Will make again just gotta tweak those things.

Since I didn't want to dirty a pan just to transfer contents to my Crock Pot, I did the entire recipe on my stovetop and used ground turkey. I used (2) 14 oz. cans of reduced sodium beef broth instead of water. Other than browning the meat with the onion and adding garlic, it was just a dump, stir, and simmer recipe and smelled so good while simmering. I did add a handful of green peas at the last minute and used a slurry of cornstarch and water to thicken it. The tomato paste adds enough salt that no extra is needed. I added pepper and parsley at the last minute. Served this with a loaf of crusty French bread. Wonderful on a cold day.

I have been eating that soup for 70 years. My mom would thicken it with flour and water. Comfort food for sure .

I have been making this recipe for a while, and my family enjoys it. However, my husband is a recently diagnosed type two diabetic, while the nutrition information is appreciated, it would be very helpful to know what the serving size is. While I know the recipe does say it is five servings. What size are those servings? Having to figure out myself while recovering from my own health issues, it’s just another thing that makes dinner a little more difficult. 
Do you perchance know what the measurement of the serving size is?

I made this today. Loosely followed the recipe but did double check for the spices I was supposed to use. I made it on the stove top in about an hour with precooked ground beef. It was good just missing….something. Some kind of spice was missing for our taste.  I did add a ton more water and added one can of mild rotel, one small can of drained corn and two knorr tomato cubes for extra flavor. Not sure what it’s missing but I’d definitely make this again to see if I can make it tastier next time.

I've made this recipe a few times over the last 2 years. My teen daughters really enjoy it.  Especially on cold winter days. 
I use beer broth instead of water and a little extra garlic as we are garlic lovers here.

I made this today for a second time, I used boneless skinless chicken thighs &amp; the end result.. .deeeelicious! A great simple, no fuss recipe so thankyou!
