Season generously on both sides with sea salt and freshly ground black pepper.

Lightly crush the fennel seeds and again, season both sides of the pork.

Place on a baking tray and cook in a preheated oven at 200°C or 400°F for 25-30 minutes.

Check halfway through cooking and drain some of the fat if there is too much.
