Pork  rib roast deliciously seasoned and roasted to perfection.

Herb Crusted Pork Rib Roast

Pork Rib Roast (I used a 8 bone roast)

Start by bringing the roast to room temperature for 30 minutes.

Preheat oven to 400º F.

Mix seasonings together in a small bowl. Generously rub the seasoning into the roast.

Place roast fat side up on roasting pan equipped with a rack.

Roast uncovered for 15 minutes until a golden-brown crust forms.

Reduce the heat to 325 º F and continue to roast uncovered for about 1 and a half to 2 hours. This will vary depending on the size of your roast. Pork roast is done when a meat thermometer reaches an internal temperature of 160 degrees Fahrenheit for a well-done roast. For a more rare roast, a temperature of 145º F is a safe temperature.

Remove pan from oven and place on cutting board. Let rest for 10 minutes before slicing. This keeps all those tenderizing juices inside the roast.

bone-in pork rib roasts (about 5 bones each)

Stir first 6 ingredients and 4 cups water in large saucepan over medium heat until salt and sugar dissolve. Remove from heat and add remaining 2 cups cold water. Cool brine to room temperature.

Place 1 pork rib roast in each of 2 large resealable plastic bags. Divide brine and seasoning equally between bags. Chill 12 to 16 hours.

Remove pork from brine. Rinse; pat dry with paper towels. Let stand at room temperature 1 hour.

Preheat oven to 325°F. Heat heavy large skillet over medium-high heat. Place 1 pork roast, fat side down, in skillet and cook until brown, about 5 minutes. Transfer roast to rimmed baking sheet, fat side up. Repeat with second pork roast. Arrange roasts with ribs meeting in center of sheet.

Roast until thermometer inserted into center of pork registers 145°F, about 1 1/2 hours. Let rest 15 minutes.

Carve 6 chops from roast. Serve with Fig and Pistachio Stuffing.

Crown Roast of Pork with Dirty Rice Stuffing and Creole Mustard Sauce

In a small bowl combine well the thyme, the salt, pepper to taste, and the oil and rub the mixture all over the pork, patted dry. Arrange the pork on an oiled round of heavy-duty foil slightly larger than the bottom of the pork in the middle of a lightly oiled shallow roasting pan and fill the center of the crown with some of the stuffing, mounding it. Roast the stuffed pork, the stuffing covered with another oiled round of foil, in a preheated 450°F. oven for 20 minutes, reduce the heat to 325°F., and roast the stuffed pork for 2 1/4 hours more, or until a meat thermometer registers 160°F., or for 2 1/2 hours more, or until a meat thermometer registers 170°F., for well-done meat. In a 2-quart shallow baking dish bake the remaining stuffing in the 325°F. oven during the last 30 minutes of the pork'1s roasting time. Transfer the pork to a platter and let it stand for 15 minutes.

While the pork is standing add the wine to the roasting pan, deglaze the pan over moderately high heat, scraping up the brown bits, and strain the mixture through a fine sieve into a small saucepan. Add 1/2 cup water and boil the mixture until it is reduced to about 2/3 cup. Add the cream, boil the mixture, stirring, until it is reduced to about 3/4 cup, and whisk in the mustard and salt and pepper to taste. Discard the foil from the stuffing, arrange the parsley and the tomatoes decoratively around the pork, and serve the pork with the mustard sauce and the remaining stuffing.

A roasted rack of pork (or pork rib roast) is a great choice for a family or company meal because it&#39;s relatively inexpensive, it&#39;s easy to make and it&#39;s impressive. Not to mention delicious!

BRINE PORK RIB ROAST: Note 2. Optional but recommended.

HEAT OVEN TO 325F/163C, Note 3. Line a roasting pan with aluminum foil for easy clean up.

SEASON PORK: In a small bowl, mix together seasoning ingredients. Spread over entire surface of the rack of pork. Place meat, fat side up, in prepared pan.

ROAST THE PORK: Place pan with pork on rack in middle of oven. Roast for about 30-35 minutes per pound at 325F/163C (I prefer this temp) or 20-25 minutes per pound at 350F/177C. Check temperature 10-15 minutes before it&#39;s done with instant read thermometer. It&#39;s best not to rely on timing alone as most oven temperatures are not exact. Remove pork roast when meat thermometer reads 140F/60C. The temp will rise by 5 degrees f on resting.

REST MEAT, SLICE AND SERVE: Place pork on cutting board and loosely cover with foil. You can make gravy in the meantime (or see Note 4). Rest meat for 10-15 minutes. To slice, use a sharp knife to slice off all the bones together. Then slice between ribs to separate them. Place roasted pork cut side down and slice roast. Alternatively, slice between the ribs for thick pork chop style servings. Transfer to platter and serve with gravy and your favorite sides. If you didn&#39;t brine the meat, consider a light sprinkle of sea salt to bring out the flavor.
