The perfect recipe for beer braised, fork tender pork carnitas. This recipe is so delicious you won&#039;t want to put anything else in your tacos.

Instant Pot Beer Braised Pork Carnitas

pork shoulder (boneless, skinless)

pork

250 ml beer (you can also use orange juice if you'd like)

tbsp cumin (ground)

coriander seed (ground)

oregano

bay leaves

garlic (peeled)

chili

salt

olive oil

lime (juiced)

Preparing the Instant Pot

Dice all the meat into 2cm/1inch pieces and place in the instant pot.

Mix the spices

Mix all the ingredients except the lime juice and mix with the meat in the instant pot.

Pressurize

Close the lid and set the time to high pressure for 27 minutes.

De-pressurize

When the timer beeps let the instant pot naturally de-pressurize for 10 minutes. Manually let out the rest

Strain

Strain the meat from the liquid, saving the liquid.

Get a frying pan hot over medium heat and add the olive oil. Fry the meat in batches until nicely browned. Always be careful when adding wet ingredients to hot oil as it will splatter a bit.

Add the braising liquid

Add all the fried meat back in the pan and add the saved braising liquid.  Cook over medium heat until most of the liquid is evaporated. Season with lime juice and salt and pepper to taste.

Pulled Pork with BBQ Sauce

brown sugar

paprika powder

garlic powder

mustard powder

apple cider vinegar ((Note 3))

tomato ketchup ((or Aussie tomato sauce))

water ((or use remaining beer!))

tbsp molasses (, orginal (not blackstrap, Note 4))

Worcestershire sauce

Tabasco

Mix the Rub together, then rub all over the pork.

Place in a slow cooker, pour over beer. Slow cook on low for 10 hours. Pork should be tender enough to easily shred.

Preheat oven to 180°C / 350°F.

Transfer from slow cooker into a roasting pan (reserve liquid).

Scoop fat off surface of juices in slow cooker and drizzle over pork (about 1/3 cup), then roast pork for 20 minutes.

Remove from oven, cut thick layer of fat off top and discard. Spoon over 1/4 cup fat from slow cooker juices, then roast 15 minutes.

Browning in oven (optional, recommended):

Shred pork using 2 forks. Pour over BBQ sauce, toss gently.

Serve stuffed in sliders with Coleslaw, or make a Southern dinner plate with Coleslaw, Mac and Cheese, Corn bread, steamed corn &amp; green beans tossed in butter, with Margaritas to quench your thirst!

Shredding:

Place all ingredients in a saucepan and simmer over medium heat, stirring occasionally, for 45 minutes or until thickened.

Add 3/4 - 1 cup of juices from slow cooker until sauce is syrup consistency.

Adjust to taste: sweetness with brown sugar / honey, salt and sour with vinegar. Use per recipe.
