Jamaican Plantain Porridge Recipe

green plantains (peeled, washed and sliced)

oatmeal

Pour the 4 cups of water into a medium pot with the salt and allow to boil up. If you are using cinnamon stick, add it to the water to boil also.

Peel, wash and sliced the green plantains into about 1 inch size. Add them to the blender along with the oatmeal and the 3 cups of water and blend until smooth. Just about 1 to 2 minutes.

Pour the blended mixture to the boiling water as you stir with a whisk. Continue to stir to prevent the mixture from forming lumps as it cooks on medium low heat. Cover and let it cook for about 20 minutes, stirring after 5 to 7 minutes to prevent lumps as it thickens while it cooks.

Add the 1 cup of coconut milk and stir. Let it cook for another 10 minutes.

Add the ground cinnamon (if you didn't use the cinnamon stick), nutmeg and vanilla extract and stir. Open the can of sweetened condensed milk and pour to sweeten the porridge to your taste. If it is not sweet, then you can add some sugar to it. Make sure to check the consistency, if it is too thick, you can add about 1/2 cup to 1 cup of water or evaporated milk to porridge.

Remove from the heat. Serve warm and enjoy.

An easy oatmeal that is delicious, easy to make and will satisfy your sweet tooth without added sugar! Top it with your favourite fruits and nut butter to keep you fuller for longer.

Healthy Banana Almond Oatmeal

rolled oats (1/2 cup)

water (1/2 cup)

120 milliliters unsweetened almond milk (1/2 cup)

tsp vanilla extract

stevia

almond

Pour everything except almond butter and banana into a deep saucepan and stir to mix together.

Bring it to boil then turn the heat down to low.

Cook until oats are soft, stirring occasionally. Depending on the cut of your oats, this will take about 5 mins or more.

Remove from heat then cover the pot with a lid and let it sit for another 2 mins.

Serve with some freshly sliced bananas and nut butter! Some choc chips or shredded coconut are great for oatmeal too!

This Spiced Orange Porridge is the perfect winter breakfast that is comforting and sweet, and easy to adapt with your favourite toppings.

Spiced Orange Porridge

g Oats (we use rolled oats)

600 ml Whole milk (we used whole milk)

Honey

Jaffa Easy Peelers (juice only)

Jaffa Easy Peelers (zest only)

0.5 tsp Ground cinnamon

0.5 tsp Ground ginger

0.5 tsp Vanilla extract

Raisins, Jaffa Easy Peeler slices and sunflower seeds

Put 100 g Oats, 600 ml Whole milk, juice of 2 Jaffa Easy Peelers and zest of 1 Jaffa Easy Peelers, 2 tbsp Honey, 0.5 tsp Vanilla extract,  0.5 tsp Ground cinnamon and 0.5 tsp Ground ginger into a pan and bring to the boil. Simmer for around 5 minutes, until starting to thicken.

Divide the porridge between two bowls and top with Raisins, Jaffa Easy Peeler slices and sunflower seeds to serve (optional).

Didn't have raisins in cupboard, used goji berries instead. So delicious I want more!
