posh kebabs

Traditionally made in a tandoor, these tandoori chicken skewers taste great cooked on a barbecue or grill. 

For this recipe, you will need skewers (see tip), a clean muslin and a blender or small food processor.

Tandoori chicken skewers

grams/3½oz garlic cloves, roughly chopped

grams/3½oz fresh root ginger, peeled and roughly chopped

4–5 small whole green chillies, chopped

coriander leaves, chopped

vegetable oil

chicken thighs, skinless and boneless, cut into bite-sized pieces

½ lemon, juice only

250 grams/9 ounces plain yoghurt

Beyti is a traditional Turkish dish where lamb kofte-style kebabs are rolled in flatbreads, brushed with garlic butter and grilled until crisp. Finished with a rich tomato sauce drizzled over the top, with salad and a yoghurt dip alongside.

For this recipe you will need a mincer or food processor, 8 skewers (if using wooden skewers, soak in cold water for 30 minutes before using), and a griddle pan or a barbecue.

This recipe is based on the Beyti served at Enver's Turkish Grill in Sheffield. It has been adapted to make it easier to cook in a domestic kitchen.

This recipe is my take on the kontosouvli, a souvlaki marinated in oregano and chilli.

This is a really easy chicken kebab recipe that's flexible enough to work with what you have in. A great barbecue staple that can go on couscous salad or stuffed into a pitta. Swap the coriander for any soft herbs, or just leave it out.

These easy chicken skewers are the perfect party food that can be cooked on a griddle or  barbecue.

Chicken yakitori

500 grams/1lb chicken breast,

onions

shiitake mushrooms, stem removed and halved

mirin

tbsp Japanese soy sauce

tbsp sake (rice wine)

tsp sugar

Shashlik is a Russian version of shish kebabs. If you don't like pork you can use lamb or beef, just make sure you give the meat enough time to marinate and you cook it quickly over a high heat to keep it moist.
