Thyme &Amp; White Bean Pot Pies

olive oil

vegan butter ((or sub room temperature coconut oil*))

4-7 Tbsp cold water

Thyme &amp; White Bean Pot Pies

Preheat oven to 400 degrees F (204 C) and arrange 6 (amount as original recipe is written // adjust if altering batch size) ramekins on a baking sheet. Set aside.

Heat a large pot over medium heat. Once hot, add oil and onion. Season with a pinch each salt and pepper and stir. Sauté until soft and translucent - 4-5 minutes.

Add carrots and season with a pinch more salt and pepper. Cook 2-3 minutes, then add flour and stir well to thoroughly coat.

Cook for 1 minute, then slowly add white wine (optional) followed by vegetable broth, whisking to prevent clumps.

Add thyme and white beans and bring the mixture to a simmer. Then lower heat to low and simmer for a few minutes. Cover and remove from heat while preparing crust.

To prepare pie crust, add flour and salt to a mixing bowl and whisk to combine.

Next add vegan butter (or coconut oil) and use a pastry cutter (or fork) to cut the two together, until it resembles wet sand - about 30-45 seconds.

Add ice cold water 1 Tbsp at a time and use a wooden spoon to gently mix. Add only as much water as needed to help it come together and form a dough - about 4-6 Tbsp (amount as original recipe is written // adjust if altering batch size).

Use your hands to gently knead/form the dough in the bowl and gather any loose scraps. Then transfer directly to a well-floured surface and form into a disc with your hands.

Lightly flour the top of the dough, as well as a rolling pin, and gently roll out until about 1/8-inch thick. Add more flour as needed to prevent sticking.

Use a pizza cutter or knife to cut into 6 (amount as original recipe is written // adjust if altering batch size) large squares slightly larger than the size of your ramekins.

At this time, scoop the white bean filling into the ramekins until almost entirely full (reserve any leftovers to enjoy as soup or future pot pies).

Use a lightly floured spatula to scoop each pie crust square onto a ramekin. Repeat until all ramekins are covered. Use a knife or toothpick to create small holes in the top of the pie crust to allow steam to escape.

Bake pot pies for 35-40 minutes, or until the filling is bubbly and the pie crust is golden brown. Let cool 10 minutes before serving.

Store leftovers covered in the refrigerator for 3-4 days, or in the freezer up to 1 month. Reheat in a 350 degree F (176 C ) oven until completely warmed through.

Hooray for pot pies! These don’t have pastry - just fluffy mash with two cheeses on top.

This rich and hearty keto beef stew &amp; cheesy biscuit crust is going to satisfy all of your keto comfort food cravings!  Low carb and Atkins friendly.

Keto Beef Stew &amp; Cheesy Biscuit Crust

avocado oil, oil

lbs stew beef, cut into 1 inch pieces

coconut flour

salt

black pepper

onion, chopped

garlic, chopped

celery

radishes, cut into 1/2 inch pieces

Worcestershire sauce

whiskey

water

dijon mustard

parsley

thyme leaves

xanthan gum (to thicken)

butter

granulated erythritol sweetener

almond flour

garlic powder

baking powder

xanthan gum

almond milk

cheddar cheese

Combine the coconut flour, salt and pepper in a medium sized bowl.

Add the raw beef pieces and mix well to coat the meat thoroughly.

Heat 2 tablespoons of the oil in a large, heavy bottomed sauce pan.

Add the beef and cook over medium high heat to brown, stirring occasionally for about 5 minutes.  Remove the meat from the pan.

Add the other tablespoon of oil to the pan, then add the garlic, onion, celery and radishes.

Saute, stirring occasionally, for about 5 minutes, or until softened and fragrant.

Add the Worcestershire sauce and whisky to the pan and cook an additional 2 minutes.

Add the cooked beef back to the pan, along with the water, dijon mustard, parsley, and thyme &#8211; then stir well.  Cover and simmer for 1 hour over low heat.

Remove the cover and whisk in the xanthan gum.

Turn the heat up to medium, and simmer uncovered for 15 minutes to reduce.

To make the beef stew:

Preheat the oven to 375 degrees Fahrenheit.

Place the butter in a medium-sized microwave safe bowl.

Microwave on high, uncovered, for 30 seconds or until melted.

Add the sweetener, almond flour, coconut flour, salt, garlic powder, baking powder, xanthan gum, egg, fresh thyme, almond milk and cheddar and mix well with a fork.

To make the cheesy biscuit dough:

Transfer the beef stew to an oven safe casserole or cast iron pan.

Top with 8 scoops or balls of biscuit dough.

Bake at 375 for 25 minutes &#8211; or until the tops are golden brown and have puffed up slightly.

Remove from the oven and cool for 10 minutes before serving.

To assemble:

This was very delicious!  I made the stew portion in a pressure cooker, 20 minutes on high, and finished in the oven as written.  I didn’t have whiskey, but I did swap water for mushroom stock.  The biscuits were light and very flavorful.

I’m just getting back into the swing of keto and wanted to make something my boyfriend would love as well. Stew is one of his favourites and I was assumed he would find it just ok but he ate almost half the recipe! He really loved the biscuits on top and how well it went with the dish. Finally got a chance to make this, on our first snowy day in NYC. It was fantastic! Only modifications I made were using rosemary instead of thyme and arrowroot instead of xanthan gum. Seriously perfect meal for a cold day stuck inside.

Made this tonight and the hubs and I agreed, we will look forward to having this again! Only two of us so I halved the recipe and still enough for one of us to have lunch!!  I did use homemade beef bone broth instead of water, and a splash or two of red wine. Make sure your pan size is appropriate, because my pan was a little too big and so my gravy dried out more than it should have. My mistake, hope you learn from it.  Flavor was wonderful! I love a good beef stew, but this didn't thrill anyone in my family and took sooo much time. Maybe I reduced it a bit too much, but it tasted just meh. And the biscuits disintegrated so that it looked like brown much by the time it was served up. Also seemed like too much salt. Apparently, this is just me, though, so maybe I did something wrong.

These biscuits are the best! I baked them separately and they are now are favorite bucuits! The stew was really good, but next time I’ll leave out Worcestershire sauce and whiskey and just use beef broth. The beef is so tender and really good.

I also did swap out whiskey for red wine, and I added a can of diced tomatoes as well. The thyme and cheddar cheese in the biscuits were perfect. They kept their shape and fluffiness without issue. My family loved this recipe - the meat was so tender. I didn't have any whiskey, so I just left it out. Some of my biscuits turned mushy, but I think it was because I wasn't patient enough to reduce the stew as much as I should have. Even my 12 year old said this needs to be made again!

Love this stew!  I've started making it in 9 oz ramekins, perfect portion size.  I sub turnips if I don't have the radishes on hand.  I also added 1/2 tsp Old Bay seasoning to the biscuits the last time I made it, and got pretty darn close to the taste of the cheddar bay biscuits from a certain sea food chain restaurant. Changed up a bit.  Added cabbage instead of radishes.  Added extra garlic too.  Added beef broth instead of water.  Used heavy cream instead of almond milk in the biscuits.   Also added bay leaf to stew.  Smells so good and looks yummy.  Can’t wait to dig in.  Trying to figure out how to add picture of finished product.

Oh Melissa, yet another great recipe. Thank you. I live in UK and my son introduced us to Pieminister when it opened in Bristol, I think your recipe gives them a good run for their money.  Really tasty and loved the biscuit/dumpling.  We live on a narrowboat and in the cold weather have our coal/wood burning stove going day and night at the moment.  Cooked the stew slowly on top the stove for a few hours, so yummy.

Made this for dinner tonight and it was the perfect warm dish for a cold and rainy Michigan evening. I substituted beef broth for water and left out the whiskey because I don’t have any but followed the rest of the recipe and it was delicious, will definitely make again!

I made the keto beef stew &amp; cheesy biscuit crust and it was delicious! I changed things up a bit though. I normally freeze soups and stews for single meals to save time later. I made the cheesy biscuit crust into cheesy biscuits to freeze and reheat separately. I like crispy crunchy toppings. The stew freezes really well, and you definitely think you're eating potatoes rather than radishes!

The flavors in this recipe are so good, I come back to again and again.  I do find I modify to cook in instant pot and usually leave out coconut flour because of texture it gives, and thicken with a bit of of glucommanan or xantham gum.  Biscuits are usually made to the side, but are still delicious,

Keto Beef Stew with Cheesy Biscuit Crust

Utilize vegan crescent roll dough, versatile fresh/frozen veggies, optional tofu, and a simple 4-ingredient gravy to make these comforting hand-held, bite-sized mini vegan chicken pot pies (ramekin &amp; family-sized version also below). Perfect for potlucks, dinner parties, and the holidays and ready in just 30 minutes!

Mini Vegan Pot Pies [Quick and Easy]

(8-count) package of vegan crescent rolls

servings of Simple Gravy

tiny cubed extra firm tofu (optional)

Preheat the oven to 375 degrees F (190 degrees C). Line a cupcake tin with crescent roll dough triangles as pictured.

Add the veggies and tofu (if using) to the gravy and let them cook for 5 minutes. Spoon the gravy vegetable mixture into the dough triangles and wrap the dough, as pictured.

Bake for 10-12 minutes until golden. Remove from the oven and let sit for five minutes to firm up.

These savory and creamy pies are the perfect way to use leftover roasted turkey or chicken and vegetables! You&#039;ll never look at leftovers the same way again.

Turkey Pot Pies with Puff Pastry

Tbsp butter

leek (finely sliced or 1 medium onion, diced)

flour (all-purpose/plain)

chicken stock

milk (whole/full fat,

roasted vegetables (leftover, chopped see notes 200 grams)

turkey

puff pastry (I use all-butter puff which comes

Preheat oven to 375°F/190°C. Lightly grease the inside of 6 x 12oz/1½ cup ramekins or an 8 cup baking dish or casserole. Set aside.

Regular/conventional oven

Preheat oven to 400°F/200°C, combination steam setting. If your oven has variable steam settings, choose 50%. If not, don’t worry! Just select combi steam at the correct temperature and the oven will work out the humidity for you. Lightly grease the inside of 6 x 12oz/1½ cup ramekins or an 8 cup baking dish or casserole. Set aside.

Combi steam oven

Heat the butter in a saucepan over medium heat. Add the leek and cook, stirring often, until very soft, about 5 minutes.

Add the flour to the pan and cook for a further 2 minutes, stirring constantly.

Whisk in the chicken stock and milk, a little at a time. Whisk well after each addition, until the mixture smooths out. It’ll be very thick to start with, but will loosen as you add more liquid. When all the liquid has been added, bring to a boil over medium heat, stirring constantly. Simmer until the mixture thickens enough to coat the back of a spoon, then remove from heat. Stir in turkey, then fold through the roasted vegetables. Add salt and pepper to taste.

Fill the prepared ramekins or large dish with the turkey filling. Lightly beat the egg with a tablespoon of water in a small bowl, and set aside.

Cover the top of the dish/es with the puff pastry. It should hang ⅜ inch (1cm) over the edges of whatever you’re cooking in, to allow for a good lid which covers the entire top of the pie. Trim any excess with a sharp knife. Cut a decorative shape for the top of each pie from any pastry scraps.

Brush the pastry all over with egg wash, then cut a few slits in the pastry to allow steam to escape.

Put the pie onto a sheet pan in case it bubbles over in the oven, and cook until the filling is bubbling and the pastry is puffed and golden brown, about 30 minutes for individual pies (20 minutes combi steam) or 45 minutes (30 minutes combi steam) for a larger pie. Serve individual pies in their baking dishes. For a large pie, cut through the pastry with a sharp serrated knife to make neat portions, then scoop the filling and pastry onto warmed plates.

For both methods

we had these tonight for our dinner using leftover chicken.  I quickly steamed some potatoes and carrots and added some frozen veges. Added a bit of cherry chutney for extra flavouring.   I also made my own rough puff pastry, as I didn't have any frozen.
