Potato fritters are a deliciously easy recipe to make - they make a tasty snack that even the littlest of kids will love, or are fabulous as an accompaniment to a bigger meal like a barbecue and salad.

Basic Potato Fritters Recipe

These easy Air Fryer Latkes are made with a traditional blend of Russet potatoes, onions, and egg, and cook up into golden-brown perfection in your air fryer!

Air Fryer Latkes

russet potatoes, (peeled)

onion

eggs

panko crumbs

salt

black pepper, (to taste)

chopped fresh chives, (for garnish)

sour cream

applesauce

Preheat the Air Fryer to 400˚F.

Grate the potatoes and onion on the large holes of a box grater.

Transfer the mixture to a kitchen towel, pull up the sides of the towel, and squeeze out the moisture as much as possible.

Place the potato mixture in a large bowl.

To the potato mixture add the eggs, panko crumbs, salt, and pepper; stir until well combined.

Grease the air fryer racks or basket with cooking spray.

Drop the potato mixture in 2 to 3 tablespoon dollops into the air fryer, flattening the top to make a patty. DO NOT crowd the air fryer - arrange the latkes in one single layer, and cook them in batches.

Spray the tops with cooking spray.

Cook in the air fryer for 8 minutes.

Flip them over, grease with cooking spray, and continue to cook for 5 more minutes, or until golden brown and crisp.

Garnish with fresh chopped chives and serve with sour cream, apple sauce, etc...

(about 800 grams) sebago potatoes, peeled

40.00 ml plain flour

egg, lightly whisked

Salt and black pepper

olive oil

These delicious crispy potato pancakes are a favorite with children and adults alike. Serve sweet with some cinnamon and sugar or apple sauce. It also goes great with sauerkraut or smoked salmon.

German Potato Pancakes (Kartoffelpuffer / Reibekuchen)

Peel the onions. Then grate them roughly with a hand grater, or if you prefer a kitchen machine

Peel the potatoes and grate them with the hand grater or kitchen machine. Place the grated potatoes into a kitchen towel and squeeze out all the starchy water in a bowl. 

Whisk the eggs and combine them with the potato and onion. Season generously with salt and pepper (optional add some muscat). 

Now slowly pour out almost all the starchy potato water from the bowl. At the bottom of the bowl, you will find the remaining starch. Pour out the water and add the starch to the potato mixture as it will help the consistency (see picture).

Add a generous amount of oil or clarified butter to a large frying pan. The bottom of the pan should be entirely covered. Once the oil is heated, add your potato mixture into the pan. The size is up to your preference, mine had about 15 cm in diameter. Press them flat with the back of a fork, as you do not want them to be too thick. 

Fry your potato pancakes at medium heat for 6-8 minutes on each side. They should have a golden colour. Test the first one, to check that they are cooked all the way through. 

Line a plate with some kitchen towel and place your finished Kartoffelpuffer in it. You can put your oven on low heat to keep them warm while you fry the remaining ones.

Similar to potato rösti and hash browns, these fritters make an excellent base for your favourite toppings at brunch or breakfast. We've opted for fried eggs and avocado

Potato fritters

(3 large) potatoes peeled

tbsp plain flour

eggs lightly beaten

tbsp soured cream

avocado

eggs fried

Grate the potatoes and onion on a coarse box grater. Wrap in a clean tea towel and squeeze out as much liquid as possible. Transfer to a large bowl and mix in the flour and plenty seasoning. Stir in the egg.

Heat a little of the oil in a large non stick frying pan. Use 2-3 tbsp of the mix per fritter and drop into the pan, cooking for 3-4 mins on each side over a medium-high heat, using a spatula to turn. Transfer to a plate lined with kitchen paper and continue with the remaining oil and mixture (it's best to cook in batches so as not to overcrowd the pan).

Serve 3 fritters per person, each stack topped with the soured cream, avocado and a fried egg. Sprinkle over spring onions to serve.
