Followed this recipe as written.  Way too much flour.  Made them too dense and didn’t get too crispy.  Would not make again.

Simple recipe, with endless possibilities. I made a double batch, first half I cooked straight (delicious). The second half I added shredded cheese and bacon. Just as good.

Potato Pancake Recipe

Preheat a large frying pan or griddle to medium heat.

If your potatoes are cold from the fridge, I recommend warming them up slightly and giving them a second mash or beating with an electric mixer so they're easier to work with.&nbsp;

In a large bowl add the mashed potatoes, eggs, flour, cheese, parsley, salt and pepper.&nbsp;

Stir the ingredients together.

Grease the frying pan/skillet lightly.

Form the dough into patties about 1/4 cup of batter each. Flatten the patty between your palms.

Fry on the one side until golden (about 3-5 minutes), then flip and fry on the second side until golden.

Parmesan Crusted Smashed Potatoes

Fire up your Pit Boss Platinum Series KC Combo and preheat the griddle to medium-low flame. If using a gas or charcoal grill, preheat a large cast iron skillet over medium-low heat.

Evenly distribute the cooled potatoes on a metal sheet tray, drizzle with olive oil, and use a potato masher or small metal bowl to gently smash each potato to a height of about ¼ to ½ inch (thinner potatoes will be crispier).

Mix together the butter and garlic. Brush the mixture over each potato, then season with salt and pepper. 

Pour vegetable oil on griddle, then add flattened potatoes. Cook for 3 minutes, then flip and sprinkle with half of Parmesan. Cook for 3 minutes, then flip, sprinkle with remaining Parmesan, and cook 1 minute.

Transfer to a pan, sprinkle with parsley  and serve hot.

Vegan Stuffed Potato Cakes

cornstarch (or tapioca flour (1/3 cup))

salt, pepper, nutmeg ((to taste))

zucchini (diced)

Peel potatoes, cut into small pieces and cook in salted water for about 20 minutes.

Season with salt, pepper, and nutmeg and mash them with a potato masher. (Please do not use a food processor, otherwise, the mashed potatoes will be sticky).

Allow the mashed potatoes to cool (in the meantime you can prepare the filling), then add flour and cornstarch and mix well with a spoon or your hands.

Dough:

Chop the veggies into small pieces, fry the onion in a pan with a little oil for about 3-4 minutes, add the mushrooms, garlic, and also the diced peppers and the zucchini. Sauté everything for a couple of minutes, season with salt, pepper, and the spice mix.

Split the dough into 8 parts (about 1/2 cup or 120 g each). Form into balls, make a well in the middle, and add about one and a half tablespoons of the filling. You can also add some vegan cheese (I used vegan cheese sauce) in addition. Carefully &quot;seal&quot; the balls with more dough and flatten them slightly to make them look like thick pancakes.

Heat approximately 2 tablespoons of oil in a pan and fry the potato cakes at medium heat until golden brown on both sides. They will be crunchy on the outside and soft on the inside. If you want them to be slightly more crunchy, you can bake them additionally for about 20 minutes at 375 degrees Fahrenheit in the oven. Enjoy!

Coarsely grated potatoes and onions are mixed with flour, egg, salt, and pepper to make incredibly crisp potato pancakes right on the stovetop.

Potato Pancakes

Coarsely grate the potatoes and onion. Place into a colander in the sink and allow to drain of excess liquid for about 30 minutes. Use a paper towel to press out any excess liquid as needed.

To a large bowl, add potatoes, onion, flour, egg, salt, and pepper. Mix thoroughly.

Heat a 12-inch skillet over medium-low heat with 1 Tablespoon of oil and 1 Tablespoon butter. Use a 1/4 cup measurement to scoop potato mixture and form into loose patties about 1/4 inch in thickness. Work in batches to fry in the skillet 4 minutes on each side until golden brown.

Repeat the process in three batches.

To keep previous batches warm and crunchy, place on a baking sheet in an oven set to warm or 200F.

German potato pancakes, called &quot;Kartoffelpuffer&quot; or &quot;Reibekuchen&quot;, are one of the most delicious German dishes! They are crispy on the outside, soft on the inside, and have the best flavor. And be sure to serve them with sweet applesauce to fully enjoy this German comfort dish!

German Potato Pancakes (Kartoffelpuffer)

First, peel and grate the potatoes and onion finely. You can also use a food processor to speed up the process.

Next, place the grated potatoes and onions in a fine mesh strainer or nut milk bag and remove any excess moisture. Catch the liquid in a bowl and let it sit without moving it too much to separate the potato starch from the water.

Place the drained potatoes and onions in another bowl. Add the eggs, salt, pepper, and ground nutmeg. Then stir until combined.

Now gently pour the leftover potato water into another small bowl to separate the potato starch from the water. The potato starch looks like a thick white mass that is sitting at the bottom of the bowl. Add the potato starch to the potato pancake dough and stir until combined.

Next, preheat the vegetable oil in a large pan over medium-high heat. Then add some of the dough to the pan and shape it into a pancake. Repeat until there is no space left in the pan.

Pan-fry the pancakes for 7-10 minutes per side over medium heat. Remove them from the pan and let the pancakes sit on a plate lined with paper towels to remove any excess oil. Add more oil to pan-fry the next batch if needed and repeat until there is no dough left.

Serve the pancakes with applesauce and enjoy!

These crispy latkes are filled with hand grated potatos and are dairy-free and eggless! Making fried latkes is easier than you think and will be a hit at your Hannukah gathering.

Vegan Potato Latkes

russet potatoes (about 3.5-4 cups grated)

onion (about 1 cup grated)

Potato starch (from potatoes- see instructions)

First, make the flax egg and set aside.

Next, grate the onions and potatoes into a large bowl. Add to a cheesecloth or nut milk bag and strain the potatoes over the bowl. Don't discard the potato liquid yet as you will want to use the starch that settles to the bottom of the bowl in the batter.

Add the strained grated potatoes and onions to a separate bowl. Then, add in the flax egg, all-purpose flour, and spices. As a final step, dump out the water from the bowl containing the potato liquid. At the bottom there should be a layer of potato starch. Add this to the bowl with the rest of the latke ingredients and stir until well mixed. The potato pancake batter should be slightly sticky, but not too wet. If it's too dry, add in 1-2 Tbsp of almond milk and mix.

Next, fill up your frying pan until it is 1/4 inch high in oil. Once the oil is hot, scoop out the latke batter and add it to the pan. Use a spatula to immediately press down and flatten each latke so it is not too thick. Make sure not to overcrowd the pan.

Fry each latke for 2-3 minutes on each side or until browned and crispy. Once the latkes are done, remove and place onto a paper towel lined plate to soak up any excess oil.

Serve the latkes while still warm with your choice of toppings. Enjoy!

Classic Potato Pancakes

If using food processor: peel and cube the potatoes and onion. Place the vegetables in food processor and process for about 2 minutes, until potatoes look "grated" and no lumps remain. 
If using grater: peel the potatoes and onion and grate.

Place the potato mixture into a fine strainer or kitchen towel and try to squeeze almost all of the liquid into a mixing bowl.

Discard the liquid. You'll notice white powder on the bottom of the bowl after you pour the liquid out. It is potato starch and it gives texture to the pancakes, so you should keep it.

Return the potato mixture into the bowl and add eggs, flour, with some salt and pepper, and mix everything well.

Heat up some vegetable oil in a large, non-stick skillet over medium heat. Add a spoonful of potato mixture, spreading it slightly. Fry for about 2-3 minutes on each side, until the pancakes are crispy and brown.

Place the pancakes on a paper towel, to absorb the excess oil and ENJOY!
