Basically good recipe for roasted potatoes. However both garlic and chopped rosemary burned. Next time will omit adding until last 20 min of cook time.

So this is my first time try to make this and it’s delicious but then I saw a review about the rosemary and garlic they burn and is it just for taste and things?

These Salt &amp; Vinegar Smashed Potatoes Will Be Gone In 60 Seconds

Salt &amp; Vinegar Smashed Potatoes Recipe

Combine potatoes, 1 cup vinegar and 1 tablespoon salt in a large saucepan over high heat

Bring to a boil; cover and simmer until potatoes are just tender, 15 to 20 minutes

Line a rimmed baking sheet with parchment paper

Whisk 4 cups cold water and remaining 4 tablespoons salt in a large bowl until salt is dissolved

Using a slotted spoon, transfer cooked potatoes to ice water

Meanwhile, melt butter in a saucepan (or in a microwave) with pepper and 1 tablespoon chives

Remove from heat and whisk in remaining 2 teaspoons vinegar

Use the heel of your hand to gently smash and flatten each potato to a ½-inch thickness

Arrange smashed potatoes in a single layer on prepared baking sheet

Brush potatoes with butter mixture, and sprinkle generously with salt

Bake until edges are crispy and golden, 30 to 40 minutes

Brush generously with more vinegar; transfer to a serving platter

Sprinkle with remaining 1 tablespoon chives and desired amount of salt

My Polish Great Grandmother&#039;s Potato Pancakes recipe is a family favorite comfort food!

Great Grandmother's Potato Pancakes Recipe

russet potatoes (about 3 lbs.), peeled

onion,

all-purpose flour

Kosher salt,

pepper

baking powder

Butter and vegetable oil,

Preheat oven to 200°F. Place 2 nonstick baking sheets in oven.

Using box grater or food processor fitted with grating disc, coarsely grate onion. Transfer the grated onion to a colander and set the colander in a sink to drain.

Next, use the grater or food processor to coarsely grate the potatoes. Add the potatoes to the colander with the onion, and leave in the sink to drain for a few minutes.

In large bowl, whisk together egg, flour, salt, pepper and baking powder.

Using a dish towel, gently squeeze excess liquid from the potatoes and onion. Add potato mixture to the bowl with the egg.

Use your hands to gently combine the ingredients.

Heat 1 tablespoon oil and 1 tablespoon butter in a large skillet over medium-high heat. Scoop about ¼ cup of the potato mixture at a time, and place in the skillet. Use a spatula to gently flatten the potato mixture into a pancake. Repeat with remaining potatoes.

Fry the potato pancakes until golden brown on each side (about 3-4 minutes per side). Then use a spatula to remove the pancakes from the skillet and drain on paper towels. Once drained, place the pancakes on the warm baking sheets in the oven to keep them warm while you finish frying the rest of the pancakes in batches.

Use paper towels to carefully wipe out the skillet in between each batch of pancakes, adding 1 tablespoon of oil and 1 tablespoon of butter to the skillet with each new batch. Continue frying 3-4 pancakes at a time until you have used all of the potato mixture.

Serve the pancakes warm with applesauce, maple syrup or sour cream.

thyme

dry sherry

veal stock beef consommé

Gruyère cheese

Melt butter in a large skillet over medium-low heat

Add bay and thyme, and cook low and slow until caramel in color and very soft

Add stock to onions and bring to a bubble

Cut the top third off of the baked potatoes, scoop inside flesh into a bowl and arrange the potato shells on a baking sheet

Combine the flesh of the potatoes with about half the onions and refill the potatoes

Top stuffed potatoes with remaining onions and lots of Gruyère

Place potatoes in a large pot and cover with salted water to cover potatoes by about an inch. Heat over high heat and bring to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes, until potatoes are soft when you insert a fork.

Drain potatoes and place back in the pot. Use a potato masher (or a fork) to mash the potatoes.

Add in the butter and cream cheese and use an electric hand mixer to mix until melted and incorporated  into the potatoes.

Slowly add in the cream and continue to whisk with the electric mixer. Add salt and pepper.

Remove from heat and transfer to a serving dish, garnish with parsley, extra butter and serve warm.
