Add all ingredients except for second amount of coconut to a stand mixer or food processor in order given and blend to combine evenly, OR mix ingredients in a mixing bowl in the order given, stirring after each addition.

Allow to sit 10 minutes.

With wet hands, shape into balls of approximately 1 inch, roll each one in some more coconut to coat, and place on a platter to serve.

No Bake Oatmeal Energy Balls

1½ cup old fashioned oats

almond butter

honey

mini chocolate chips

unsweetened coconut flakes

Place the oats in a food processor or blender and pulse until finely ground.

In a mixing bowl, stir together the almond butter and honey.

Add the ground oats and mini chocolate chips to the almond butter mixture and continue to stir until thoroughly combined.

Using 1 tablespoon of the mixture at a time, roll into balls.

Place the coconut in a separate plate and roll the balls in the coconut to completely cover.

Place balls on a sheet tray and freeze for 30 minutes to set. Remove, place in a ziptop bag, label and keep in the refrigerator for up to a week or frozen for up to 3 months.

These no bake chocolate energy balls are a raw vegan, nutrient dense sweet treat that take just minutes to throw together.

No Bake Chocolate Energy Balls

60 g Oats

g Cashews

g Desiccated coconut

g Pumpkin seeds

tbsp Chia seeds

tbsp Flax seeds

g Pitted dates

Cocoa powder

Water

Maple syrup

Almond butter

Add 60 g Oats, 100 g Cashews, 40 g Desiccated coconut, 40 g Pumpkin seeds, 2 tbsp Chia seeds, 2 tbsp Flax seeds, 100 g Pitted dates and 2 tbsp Cocoa powder to a food processor.

Process until everything is finely chopped. A few large pieces are okay as these will add texture.

Transfer to a bowl then add 3 tbsp Water, 80 g Maple syrup and 180 g Almond butter. Mix well to combine everything.

Roll into balls. Each ball is about 4cm/1.5in in diameter and weighs around 35g/1.25oz. Refrigerate for 2 hours.
