Thai Red Prawn Curry, Quick & Easy

This quick and easy Thai red curry prawn recipe made with king prawns, vegetables, coconut milk, and red curry paste. So creamy, aromatic and packed with authentic flavour. Pair it with a bowl of jasmine rice to complement the dish. If you are Thai food lover you will like this recipe with no doubt!

400 gram Prawns (About 14 ounces prawns/shrimp, peeled & deveined.)

250 ml Water (About 1 cup, add more or less to desire consistency)

tbsp Fish sauce (Or salt to taste)

Lemongrass (Bruised)

tbsp Brown sugar (Or palm sugar

½ Bell pepper (Red bell pepper, cut thin slices)

Bamboo shoots

Basil leaves (Thai / Italian or Regular Basil)

Green beans (Or long beans (3.5 ounces))

tsp Lime zest (Or 3 kaffier lime leaf)

Heat the pan into low-medium heat. Add 200ml coconut milk ( half tin ) and bring it to simmer. Next add the red curry paste, stir it well and cook for 2-3 minutes until the coconut milk reduce and the oil starts to separate.

Then pour in the rest of coconut milk ( 200 ml ) and water. Bring it to simmer and add the lemongrass. Season with fish sauce and brown sugar.

Add prawns, bamboo shoots, and green beans. Cook for another 2-3 minutes with medium heat, until prawns are cooked through.

Next add the lime zest, bell peppers and stir for few seconds.

Turn off the heat and stir in, basil leaves. Combine everything evenly and transfer to serving plate.

Garnish with fresh coriander and lime wedges. Serve with plain jasmine rice or coconut rice.

This red Thai Prawn Curry is a so easy to make. The fragrant sauce is made with red curry paste, coconut milk and peppers, topped with the protein packed prawns.

Simple Prawn Red Thai Curry

½ jar red thai curry paste ((£1.30/2)=(£0.65))

400 ml low fat coconut milk ((£0.95))

g egg noodles ((£1.50))

160 g mange tout ((£1.00))

325 g large cooked prawns, frozen ((£4.35))

coconut oil

tomato puree

fish stock

tsp chilli flakes

Salt

Start by adding the sliced peppers into a deep non-stick frying pan with 1 tbsp coconut oil. Season with salt and fry for around 5 minutes.

Next, add the chilli flakes, garlic, red thai paste, finely chopped coriander stalks and tomato puree into the pan. Fry for 3 minutes until fragrant.

Add the coconut milk, fish stock, mange tout and noodles. Cover with a lid and simmer for 6 minutes.

After this time, remove the lid and stir everything in the pan. Pour the prawns into the pan and cover with a lid, cooking for another two minutes

Serve a portion of the prawn thai curry with a sprinkle of fresh coriander, spring onions and optional chilli flakes/or optional sliced red chilli to serve.
