Indian restaurants need to cook curries to order in a matter of minutes and this is how they do it


Curry Base (Indian Base Gravy)

Vegetable Oil: 140 milliliters

Brown/White Onion: 700 grams

Green Pepper: 1

Carrot: 1

Garlic Paste: 1 tbsp

Ginger (Grated): 1 tbsp

All Purpose Seasoning: 1 tbsp

Coriander Powder: 1 tbsp

Cumin Powder: 1 tbsp

Turmeric Powder: 1 tbsp

Tomato Paste: 3 tbsp

Tinned Tomatoes: 300 grams

Water: 3 litres

Made this after trying your Korma from scratch. My sister only eats Korma and is really fussy needless to say she loved it made with your base gravy even more and ended up taking all the leftovers home. Going to try your other recipies now. thanks Maddie

Love this recipe. Well worth the time it takes to make.

Really easy to make, just roughly chopped everything up and followed the instructions. Made a huge difference to the Indian recipes I've been trying so far so will continue to experiment.

Spice Mix Powder / Chef&#8217;s Blend Curry Powder

Mild Madras Powder: 2 tbsp

Paprika Powder: 4 tsp

Coriander Powder: 2 tsp

Cumin Powder: 2 tsp

Turmeric Powder: 2 tsp

Garam Masala Powder: 1 tsp

Garlic Powder: 1/2 tsp

Ginger Powder: 1/2 tsp

Easy Indian Base Gravy (Quicker Recipe, Less Fuss, Same Great Result)

Vegetable Oil: 150 milliliters

Brown/White Onion: 750 grams

Paprika Powder: 1 tsp

Plum

Water: 2-3 litres

Miso glazed fish

kg Fish fillet, thick,

Sake

Mirin

Tbsp White miso paste

Tbsp Sugar

Bring sake and mirin to the boil. Turn the heat to low, add white miso paste and sugar and whisk until dissolved and thick. Remove from the heat and cool.

Cut fish into 5-10cm portions and pat dry with a paper towel. Place fish skin-side down in a dish and cover with miso marinade. Refrigerate for at least an hour, preferably overnight.

Remove fish from marinade and place skin side down on a hot, lightly oiled grill pan. Sear until the skin has darkened, turn the fillets over and finish in the oven under a hot grill, approx. 5-10 minutes. Alternatively, place the fish skin side down on a lightly oiled foil covered tray, and grill in a hot oven until deeply caramelised and flaky, 10-15 minutes.

Serve as a small plate with finely chopped pickled ginger or serve as a main with warm sushi rice and a Japanese salad (seaweed or baby kale with a sesame oil and rice wine vinegar dressing).

Faire bouillir l&#039;eau avec le sel et le beurre.&amp;nbsp;

M&amp;eacute;langer vigoureusement jusqu&#039;&amp;agrave; l&#039;obtention d&#039;une boule de p&amp;acirc;te.&amp;nbsp;

Remettre de nouveau sur feu doux pendant quelques secondes pour que la p&amp;acirc;te dess&amp;egrave;che.

Placer la p&amp;acirc;te dans un saladier, ajouter les oeufs un par un en m&amp;eacute;langeant bien.

Placer la p&amp;acirc;te dans une poche &amp;agrave; douille puis former les choux sur une plaque.&amp;nbsp;

Placer les choux dans un four pr&amp;eacute;chauff&amp;eacute; &amp;agrave; 200&amp;deg;C durant 20 minutes.
