Instant Pot Carrots

(454 grams) baby carrots

unsalted butter

(25 grams) brown sugar

½ teaspoon (2.8 grams) table salt

black pepper

Pressure Cook Carrots: Pour 1 cup (250ml) cold water, then place a stainless steel steamer basket in Instant Pot. Add 1 lb (454g) carrots in steamer basket. Pressure Cook at High Pressure for 2 minutes, then Quick Release.

Make Buttery Sweet Carrots: Set aside the pressure cooked carrots. Discard the water in inner pot. Towel dry inner pot, then heat up the Instant Pot using the "Saute" button. Once the indicator says HOT, add in 2 tbsp (28g) unsalted butter. Add in the cooked carrots, 2 tbsp (25g) brown sugar, and ½ tsp (2.8g) table salt. Saute for roughly 2 minutes until the sugar melts and coat the carrots.

These Instant Pot carrots make a delicious vegetable side dish for an everyday meal or holiday meal. They take only 15 minutes to make, have a fresh, naturally sweet taste and require only a few ingredients and minimal seasoning.

Rinse and peel the carrots. Slice off the ends and slice diagonally.

Add water to the Instant Pot and arrange carrots.

Close the Instant Pot lid, set the valve on "sealing", and cook on high pressure for 2 minutes. Once completed carefully quick release the steam, remove the lid, and drain the carrots.

In a separate bowl, toss the carrots with extra-virgin olive oil, salt, pepper, and fresh herbs (if using). Serve and enjoy.

Sweet Pressure Cooker Carrot Puree

½ pounds (680 grams) carrots (, roughly chopped)

(14 grams) butter (, room temperature)

(21 grams) honey

sea salt

(250 milliliters) water

Brown Sugar for more sweetness ((Optional))

Prepare Carrots: Clean, peel, and dry the carrots well. Roughly chop them into small pieces (as shown in our video).

Pressure Cook Carrots: Pour 1 cup of water in your pressure cooker. Place chopped carrots into the pressure cooker in a steamer basket. Close lid and cook at High Pressure for 4 minutes, then Quick Release. Remove the carrots and dry well.

Puree Carrots: Place the carrots in a deep bowl. Use an immersion hand blender to blend the carrots until desired consistency. Add butter, honey, and sea salt to the carrot puree, then mix well.

Taste and Serve: Taste the carrot puree and add brown sugar if necessary. Serve immediately with a main dish!
