Instant Pot Lemon Quinoa Vegetable Salad

Rinse the quinoa in a fine-mesh sieve until the water runs clear. Drain and place the quinoa in a 6-quart Instant Pot. Add the water.

Lock on the lid and set the Instant Pot to one minute cooking time at high pressure. Be sure the sealing valve is set to &#8220;sealing&#8221;.

Once the cooking time is up, let the pressure come down naturally for 10 minutes and then release any remaining pressure.

Remove the lid and use a fork to fluff the quinoa.

Add the red bell pepper, cucumber, olives, cranberries, and pumpkin seeds to the quinoa and stir to combine.

Add the oil, lemon juice, salt, and pepper. Stir one more time to combine.

Rinse Quinoa: Most packaged quinoa has been pre-rinsed to remove the saponin to reduce the bitterness. If necessary, give it a quick rinse with cold water, and drain really well.

Toast Quinoa (Optional Step): Press the Saute button on Instant Pot, then wait 1 minute. Pour in 1 tbsp (15ml) olive oil, then add in the quinoa. Toast the quinoa until fragrant (~2 - 3 mins).

Pressure Cook Quinoa: Add in ¼ tsp fine salt + 1 cup (250ml) unsalted chicken stock or cold water. Use a wooden spoon to scrub the bottom to make sure no quinoa is stuck to the bottom. Close lid and pressure cook:Pressure Cooking Method:-Toasted Quinoa: High Pressure 0 minute, then 10 minutes Natural Release-Non-Toasted Quinoa: High Pressure 0 minute, then 12 minutes Natural ReleaseRelease the remaining pressure after the natural release time.

Serve Quinoa: Fluff quinoa &amp; serve. You can use quinoa as a side dish, toss into your salads or soups. Enjoy~

How to Cook Perfect Quinoa in the Instant Pot

Spray the Instant Pot liner with cooking oil and add the rinsed quinoa (still damp), water and salt.

Lock the lid and set the steam valve to its “sealing” position.&nbsp;

Select the “MANUAL” button and cook for 1 minute on high pressure. It will take about 5 minutes for the pressure to build, then the countdown timer will start.&nbsp;

Allow the pressure to release naturally for 10 minutes and then release any remaining pressure.

Fluff quinoa with a fork and serve.

Transfer it to the Instant pot, pour in the liquid, and a pinch of salt, if using.

Secure the lid. Move the steam release valve to Sealing position.

Select Manual/Pressure Cook to cook on high pressure for 1 minute for white quinoa and 3 minutes for red, black, or tricolor quinoa.

When the cooking cycle is complete, let the pressure naturally release for 7-8 minutes, then move the steam release valve to Venting position to release any remaining pressure.

Carefully open the lid. Fluff it with a fork and serve.
