How to make Instant Pot pot roast that is so tender, it melts in your mouth. This easy recipe makes ultra-flavorful beef guaranteed to satisfy the entire family. Use an Instant Pot or other brand of electric pressure cooker. The best cuts of beef for pot roast are tougher cuts of meat like chuck, brisket, and round. Baby potatoes are optional. They get very soft and can be served whole or mashed and served alongside the pot roast.

Instant Pot Butter Chicken is tender chicken cooked in a creamy, spicy, tomato-based sauce. This version uses no cornstarch so it is low carb, and keto.

Instant Pot Butter Chicken

Onion (diced)

Garlic (minced)

Butter

Chicken thighs (boneless, skinless, cut into bite-size pieces)

Chicken broth

Tomato sauce (no added sugar)

Tomato paste

Red curry paste

Garam masala

ginger

½ teaspoon Smoked paprika

Heavy cream

Cilantro (garnish)

Set your Instant Pot to SAUTE and add butter, onion and garlic. Saute for approximately 5 minutes until the onions are tender. Press OFF to cancel the saute.

Add the chicken broth, tomato sauce, red curry paste, and tomato paste to the pot. Sprinkle in the garam masala, ground ginger, salt, and smoked paprika and stir everything together.

Add the chicken to the liquid and lock the lid in place. Turn the pressure valve to seal it. Set to HIGH PRESSURE for 7 minutes.

When the timer goes off do a natural release for 5 minutes and then turn the valve on top to VENTING to let the remaining steam out of the pressure cooker.

Remove the lid and using a slotted spoon remove the chicken from the sauce and set aside.

Add the heavy cream to the pot and, using an immersion blender puree the sauce until smooth.

Set the Instant Pot to SAUTE and stir the sauce while simmering for 7-10 minutes, or until it thickens. Turn OFF saute.

Add the chicken back to the sauce, stir together, and serve with a garnish of cilantro.

Instant Pot Sirloin Roast Beef with Mushroom Sauce

sirloin beef roast (trimmed)

Tablespoons avocado or vegetable oil

yellow onion (chopped fine)

Trim sirloin beef roast, there won’t be a lot of fat to trim,m but remove any large pieces of visible fat.

Remove any twine or elastic netting.

Pat your roast dry with paper towels, and season roast with salt, pepper, garlic powder, and dried rosemary.

Set the instant pot to the “saute” setting, and add oil to the liner.

Heat oil until hot and just smoking.

Brown roast on all sides, about 8-10 minutes.

Once browned, transfer the roast to a plate.

Add the onions and mushrooms to the instant pot liner.

Cook until softened and browned. About 5-7 minutes.

Stir in tomato paste and garlic. Cook for 3 minutes.

Add in the white wine, and simmer until slightly reduced, about 1 minute.

Stir in broth.

Use a wooden spoon, and scrape all the browned bits off the bottom of the liner.

Add roast back into the instant pot liner, place lid on pot.

Lock the lid into place, and set valve to sealing.

Cook on high pressure for 20 minutes.

When cook time is up, let the pressure release naturally for 15 minutes. Temperature of the roast should be about 105 degrees.

After 15 minutes, quick release the remaining pressure. Then carefully remove the lid.

Transfer the roast to a carving board, tent with foil, and let sit for 15 minutes. During this time, the internal temperature should be 120-125 degrees.

Skim the excess fat off the surface of the sauce.

Stir in the marsala. Then bring sauce to a simmer. Let it cook until thickened, about 10 minutes.

Whisk in butter and parsley. Then taste, and season with salt and pepper to taste.

Slice meat thin, to ¼ inch thickness, against the grain, and transfer to a serving dish.

Serve with sauce spooned over the top, and fresh parsley as a garnish.
