Remove your roast from all its packaging and  let it sit out for an hour until it's about room temperature.

Take the butter and cover not only the ends, but if you don't have a layer of fat on the top, cover that as well. This roast didn't have a layer, it was butchered too close,  so I put a layer of butter on top.

Preheat your oven to 450 degrees at this point.

Once it's covered, place on a wire rack in a pan deep enough to catch the drippings.

Now we want to sear the roast. Place it in the 450 degree oven for about 20 minutes.

Turn down the oven to&nbsp;325 degree and cook some more. Below are guidelines for roasting a prime rib roast .You want to pull the roast out a minimum of 10 degrees BEFORE you hit these temperatures.

Once the roast is out, tent it with foil, and let it sit for about 20 minutes. The temperature will rise at least another 10 degrees if you cover it in foil. It also lets the juices set and flow back to the meat.

 Now it's time to remove the bones. You want to slice along the curve of the bones and remove the meat. Slice it off, then slice as you would normally slice a roast.

Rare- 120-125 degrees in the middle

Medium-rare- 125- 135 degrees in the middle

Medium - 135- 140 degrees in the middle. You don't want it cooked this much.

With the rack in the middle position, preheat the oven to 500°F (260°C). Line a baking sheet with foil.

In a bowl, combine all of the ingredients, except for the roast.

On a work surface, rub the roast all over with the seasoning mixture.

Place the roast on the baking sheet, fat side up. Bake for 25 minutes. Turn the oven off and do not open the door for 2 hours. It is very important not to release any heat from the oven. Remove the roast from the oven and slice. Serve with béarnaise sauce, if desired.

Followed exactly, even though very dubious, but did shorten the time by about 15 min. Ideally when removing from oven, internal temp would be around 120 F...it was 165. Since the rest of my meal was planned around a later time, to let the meat rest, it ended up being grey dry. If I try this again, I’ll cut the time by 1 hour. So disappointed...waste of a good cut of meat.

This is the only method I will ever use to cook Prime Rib roast. My roast was 2 kg roast was still a teeny bit frozen in the middle so I roasted for an hour before turning off the oven, left in the oven for 2 hrs and the result was just a bit more than mid rare. Just made this tonight for Valentine's Day. Came out perfect as described. This is a tested and true recipe. Very easy to make. No need to sear on stovetop - saves cleanups time. Cooking time is only 25 minutes (for 2Kg) - saves energy. 

I used a Samsung electrical convection oven. I read all comments and learned from my predecessors. Just in case if my oven loses heat like some of theirs, I used several kitchen towels and cardboard to block the areas where heat might leak. Works like a charm!

A Prime rib roast that is tender, juicy and delicious. This roast is cooked low and slow at 200°F with an internal temp of 130°F to bring out the natural flavors and retain the juices.

This process takes longer than traditional methods but it gives spectacular results. Make sure you plan the time accordingly. See the chart in the notes for general timelines.

Rub 2 tablespoons kosher salt over entire roast and into the slits. Transfer to a large plate, and refrigerate, uncovered, for at least 24 hours or up to 4 days.

Remove your roast from all its packaging and let it sit out at room temperature for one to two hours. Also make sure your roast is fully thawed, you do not want to cook a roast from frozen. Using paper towels, pat the roast completely dry.

Preheat your oven to 450 F degrees for at least 30 minutes, while the prime rib comes to room temperature.

In a bowl mix the butter with the chili powder, cumin, thyme, rosemary, garlic, salt, and pepper until well combined.

With either a spatula or your hands, spread the compound butter mixture over the entire roast.

Place the onions, garlic, thyme and rosemary in a large skillet that will fit your roast. If you don't have a large enough skillet, use a roasting pan.

Place the roast over the onions in the skillet.

Cook the roast for 15 minutes at 450 F degrees, then reduce the oven temperature to 325 degrees. Continue to cook the roast until your meat thermometer reads 120 degrees. Estimate about 15 minutes of cooking time per pound of prime rib.

Once the thermometer hits 120 F degrees, remove the roast from the oven and transfer it to a cutting board. Cover it with aluminum foil and let it rest for 20 minutes. The roast will continue to cook as the juices inside settle, raising the internal temperature to 130 degrees for a perfect medium-rare prime rib.

Slice and serve with gravy over mashed potatoes.

While to roast is resting, place the skillet with the onions, garlic and herbs over medium high heat.

Add the red wine and beef broth and bring to a boil. Lower the heat and simmer for about 5 minutes. The sauce should reduce a bit.

Mix the 1 tbsp of cornstarch with 2 tbsp of water and to the skillet. Whisk it and continue to cook for a few more minutes. The sauce should thicken. Use more cornstarch if wanting a thicker gravy.&nbsp;

Strain into a bowl, then pour it into a gravy boat.

Smoked Prime Rib Recipe

prime rib roast (about 8-12 pounds)

tbsp black pepper (coarse)

tbsp kosher salt

tbsp thyme (chopped)

tbsp rosemary (chopped)

Trim off any bulging pieces of fat from your roast

Combine rub ingredients in a bowl.  Coat the roast generously and thoroughly with rub

Preheat smoker to 250ºF

Place seasoned prime rib on your smoker&#39;s grate. Insert a probe thermometer and cook until the centermost point of the roast reaches an internal temperature of 118ºF (this can take 2.5-4 hours depending on the size of your roast

Once roast reaches temperature, remove from your smoker and let rest for about 20 minutes

While the roast rests, preheat your grill to 450ºF.  Alternatively, place a large cast iron skillet over high heat on your stove (this is to prepare to sear the meat)

Place roast on grill or cast iron skillet.  Sear for about 3-4 minutes on each side, or until meat has developed a crust on all sides

Remove from heat and let the beef rest for another 15 minutes.  Then slice, serve, and enjoy!

How to Cook the Perfect Prime Rib Roast: Recipe

prime rib, size determined by need

Generously salt the roast, insert a thermometer probe near the edge of the roast, set the low-temp alarm of your ChefAlarm for 30°F (-1°C) and place the roast in the freezer.

Meanwhile, preheat your oven to 225°F (107°C).

When the low-temp alarm sounds, remove your roast from the freezer.

Heat a heavy skillet (cast iron is preferred here) over high heat. 

Sear the roast well on all sides in the skillet. 

Season with pepper and/or any other seasonings you like.

Place the roast on a rack set into a rimmed baking sheet. Insert a probe into the very center and set the high-temp alarm for 125°F (52°C). 

Cook the roast in the oven until the high-temp alarm sounds. Verify that there are no lower temperatures in the meat with your Thermapen Mk4. 

Remove the meat from your oven and let it rest for 30 minutes, lightly tented with foil.

Prime Rib Compound Butter

Preheat oven to 500 degrees Fahrenheit

Make the compound butter:

Remove Prime Rib From packaging- check the weight of Prime Rib.  Rinse Prime Rib under cool water and then pat dry.  Place Prime Rib into roasting pan on a roasting rack, fat side up.  Cut 1-inch holes into the top of Prime Rib at varying depths every 3 inches (approximately 10-12 cloves, adjust based on your preference) Insert garlic gloves into holes.  Evenly coat Prime Rib with ¼ cup minced garlic.  Evenly coat Prime Rib with compound butter.

Prepare the Prime Rib:

Bake Prime Rib, uncovered, at 500 degrees Fahrenheit for 30 minutes.  After 30 minutes, adjust oven temperature to 350 degrees Fahrenheit and cook for approximately 15 minutes per pound.

Rare- cook until the internal temperature is 125 degrees Fahrenheit.

Medium-Rare- cook until internal temperature is 130 degrees Fahrenheit (Recommended temperature).

Medium- cook until the internal temperature is 135 degrees Fahrenheit.

Medium-Well- cook until the internal temperature is 140 degrees Fahrenheit.

Well- cook until the internal temperature is 150 degrees Fahrenheit.

Remove from oven and let rest for 25 minutes. The Prime Rib will continue to cook while resting.  Strain the au jus from the roasting rack and put it into ramekins. Carve Prime Rib and serve with au jus.

A simple, traditional boneless prime rib recipe that ensures a tender and juicy roast with a gorgeous, crispy crust.&nbsp;

Boneless Prime Rib Recipe

Pat the prime rib dry with a paper towel. Lightly score the fat cap of the roast by making a cross-hatch pattern with a sharp knife. Do not cut too deep.

Drizzle canola oil over the roast and rub to adhere. Sprinkle with Kosher salt and black pepper, and rub all over once more.&nbsp;

If you have time, intensify the flavor of the beef by transferring the roast to a rimmed pan and placing it in the refrigerator (taking care to avoid any cross-contamination) overnight or up to 3 days, uncovered. If you do not have time, proceed directly to step 4.

Preheat the oven to 450° and have ready a rack fitted in a roasting pan or over a sturdy rimmed baking sheet.

Remove the roast from the refrigerator to sit at room temperature 1 hour prior to roasting to remove the chill. Then, transfer to prepared rack and pan.

Roast for 15 minutes at 450°. Decrease the temperature to 300° and roast until the internal temperature reaches 120°, about 1 hour and 45 minutes to 2 hours more.&nbsp;

Remove from the oven and allow to rest at least 15-20 minutes before carving. Slice the roast in 3/4" slices, serve and enjoy.

lb beef prime rib (bone-in)

tsp sea salt (divided)

Tbsp black pepper (freshly ground)

Cut the ribs away from the roast, cutting right along the ribs and keeping the ribs together. Replace the ribs back onto the roast and use kitchen string to tie them tightly onto the roast in 1-inch intervals.

Sprinkle meat all over with 2 tsp salt, cover loosely with plastic wrap and let it rest at room temperature for 3 hours to come to room temperature (it will bake more uniformly). Then preheat Oven to 500˚F with rack in the lower third of the oven.

Make your Prime Rib rub: In a small bowl, stir together: 1/2 Tbsp salt, 1/2 Tbsp black pepper, 1 tsp minced rosemary, 1/2 tsp minced thyme leaves, chopped garlic, and 3 Tbsp olive oil.

Lightly pat the roast dry with a paper towel then rub all over top and sides with garlic rub. Place into a roasting pan bone-side-down (the bones will serve as a rack) and put a meat thermometer into the thickest portion of the meat. Bake at 500˚F for 15 minutes.

Reduce heat to 325˚F and continue baking following these guidelines: 10-12 min per pound for rare, or 13-14 min per pound for medium rare, and 14-15 min per pound for medium. Roast until the thermometer registers: 120˚F for rare, 130˚F for medium rare, 140 for Medium, 150 for medium well.* 

Transfer to a cutting board, tent loosely with foil and rest 30 minutes before carving. Remove string and rack of ribs then slice to desired thickness.
