In a large glass bowl, combine the olive oil, minced garlic and rosemary.  Salt and pepper the chicken thighs and add them to the olive oil mix.  Coat thoroughly and turn, covering all of the chicken.

Wrap each chicken thigh length-wise with one piece of prosciutto and tuck under the bottom.  Wrap another piece of prosciutto width-wise and tuck under.  (The chicken thigh will be wrapped like a little package).  Sprinkle very lightly with salt and pepper.

Carefully place the chicken thighs in a single layer (seam side down) in a 13x9" glass casserole.  Spoon the remaining oil marinade evenly over the chicken.  Drizzle a little extra olive oil over the chicken if needed.  (The bundles should be lightly shiny with olive oil so it doesn't dry out during baking.)

Whole30 + Keto Creamy Apple Cider Prosciutto Wrapped Chicken

chicken tenders (or 4 chicken breast

prosciutto

sage leaves (at least 16)

salt black pepper

olive oil

shallots (finely chopped)

garlic (grated

bone broth

apple cider vinegar

tapioca starch

monk fruit (see notes for Whole30)

dijon mustard

heavy cream (see notes for dairy free/Whole30)

Set up your chicken wrapping station. Season each chicken tender with kosher salt + pepper. Top each chicken tender with 2 or more fresh sage leaves, then wrap in 1 slice of prosciutto. Set aside on a plate and repeat with all the chicken tenders.

Heat your cast iron skillet over medium heat for 5 minutes.

In a mason jar or large mixing glass, combine the bone broth, apple cider vinegar, tapioca starch, monk fruit + dijon mustard. Stir to fully combine. Set aside.

When the pan is warm, add in the olive oil. Brown the prosciutto wrapped chicken tenders for about 3-5 minutes per side until golden brown. Depending on the size of your skillet, you may need to do this in batches. Transfer the cooked chicken to a plate.

In the same pan, add the shallots and a pinch of kosher salt. Cook for 1-2 minutes until soft, scraping up any brown bits from the bottom of the pan. Add in the garlic and cook for 30 seconds until fragrant.

Pour the bone broth apple cider mixture on top of the shallot mixture, whisking constantly to remove any lumps. Bring to a simmer, which will activate the tapioca starch to thicken. Reduce the heat to low. Add in the heavy cream, then season to taste with kosher salt + black pepper. You can also add in more apple cider vinegar/monk fruit/heavy cream to taste as well. Add the chicken back in to the skillet with the gravy to warm for 1 minute.

Serve the chicken warm, topped with the creamy apple cider gravy. I love serving this with my mashed cauliflower and roasted brussels sprouts.

Leftovers will keep in an airtight container refrigerated for at least 5 days, or frozen for at least 6 months.

Prosciutto-wrapped chicken stuffed with Boursin garlic and herb cheese. This ridiculously delicious chicken dinner is surprisingly easy to prepare making it weeknight perfect.

Prosciutto-Wrapped Boursin Chicken

boneless skinless chicken thighs

prosciutto (sliced thin)

pkg Boursin Cheese Spread (with Garlic and Fine Herbs)

kosher salt

cracked pepper

milk

flat-leaf parsley

Heat oven to 400°F.

Put the chicken between to pieces of plastic wrap and pound the chicken to an even thickness (~¼- to ½-inch).  

Season chicken with salt and pepper on both sides. Divide the Boursin among the chicken pieces, placing ~1 tablespoon dollop on each. Roll chicken around the cheese and place seam side down in a nonstick or cast iron skillet.

Wrap each chicken roll in a slice of prosciutto. Drizzle with olive oil and sprinkle fresh cracked pepper. 

Bake at 400°F for 20 minutes or until chicken is cooked through and juices run clear.

Once done, transfer chicken from the skillet to a dish or serving plate to rest. Add the milk to the skillet over medium-high heat, whisking until smooth. Simmer up to 1 minute to thicken if necessary. 

Serve the sauce spooned over the chicken rolls, and sprinkle over some parsley.

Prosciutto-Wrapped Chicken Breast with Fontina is an easy, quick (30 minutes!), and delicious chicken dish made with only six ingredients. Stuff the chicken, wrap it prosciutto, sear it in some butter, and make a quick pan sauce. Finish it off in the oven and serve.

Prosciutto-Wrapped Chicken Breast with Fontina

chicken breasts``

oz fontina cheese

dry white wine

lemon juice

Preheat oven to 350 degrees.

Take a small pairing knife and cut a 1/2-inch slit at top of the thickest part of the chicken breast. Use your knife to cut an opening in the middle of the chicken without cutting through to the side. You want to be able to slide a 1/4-inch piece of fontina into the slit.

Cut the fontina into 1/4-inch pieces. Stuff the fontina into the pocket of the chicken breast. If needed, put a toothpick in the chicken to secure. (If you made a small enough pocket, you may not need any toothpicks.)

Season each chicken breast on both sides with salt and pepper. Wrap each chicken breast with two slices of prosciutto. (You want the prosciutto ends to be on the bottom of the less smooth side of the chicken breast.)

Heat a large skillet to a medium heat. Add 2 tablespoons of butter. Once the butter has melted and started to foam, swirl the pan to evenly distribute the butter. Add the chicken breast, smooth-side up. Sear until golden brown and prosciutto is crisp, about 3-4 minutes. The chicken should release easily when it&#x27;s brown. Flip and repeat on the other side. Remove chicken from the pan and set aside.

Add remaining butter to the pan. Turn the heat up to medium-high and once the butter melts, swirl the pan until the butter begins to brown. Once the butter turns a deep brown and smells nutty, remove from the heat and add white wine. (It will spit and splatter, be careful.) Use a woooden spoon to scrape up all the brown bits at the bottom of the pan. Reduce wine by half over a medium heat. Add lemon juice, stir to combine. Add the chicken breasts back to the pan, smooth/pretty side up. Place in the oven until cooked through, another 12-15 minutes until it reaches 165 degrees.

Spoon sauce over chicken. (If some of the cheese has come out, that&#x27;s ok!, just transfer it to the plate along with the chicken.) Serve with mashed potatoes, crusty bread, or rice.
