Moist, fluffy Protein Banana Bread full of banana flavor and with 9 grams of protein. This easy, one bowl recipe is also naturally sweetened!

Protein Banana Bread Recipe

large over ripe bananas (1 1/3 cups mashed)

eggs

applesauce (unsweetened)

maple syrup

vanilla extract

cinnamon

baking powder

baking soda

salt

whey protein powder (I used vanilla flavor)

oat flour

Preheat oven to 350 degrees F, line metal 9 x 5 loaf pan with parchment paper and set aside.

In a large mixing bowl, add bananas and mash with a fork or masher. Then add eggs, applesauce, maple syrup, vanilla extract, cinnamon, baking powder, baking soda and salt. Whisk until combined.

Add whey protein powder and oat flour, stir gently with spatula to combine.

Pour batter into previously prepared loaf pan and bake for 60-65 minutes or until the toothpick inserted in the middle comes out clean.

Remove protein banana bread from the oven and let cool off for 10 minutes. Then remove bread from a loaf pan, transfer to a cooling rack and let it cool for another hour or so.

Slice with serrated knife, it works best with breads to keep them from falling apart.

Preheat the oven to 350 degrees Fahrenheit.

Spray and line a 9x5 loaf pan and set aside.

Puree the bananas and measure out 1 1/2 cups and add to a large mixing bowl.

Whisk in all remaining wet ingredients until smooth.

Whisk in the dry ingredients, making sure to spoon and level the flours, don&#39;t scoop right from the bag.

Fold in the chocolate chips if using, you can also used chopped walnuts.

Transfer to your prepared loaf pan and top with additional chocolate chips if desired.

Bake for 55-65 minutes or until a toothpick comes out clean.

Because of the nature of almond flour, you may notice the top browning before the center is done. I usually just leave as is, but you can tent the top with foil if desired.

Remove from the oven and let cool in the pan for 10 minutes, then carefully lift out from the pan and let cool on a wire rack for at least 1 hour before slicing.

Slice and enjoy as is or with melted butter or nut butter.

Whisk together the dry ingredients. Add the flour, vegan protein powder, sugar, baking powder, baking soda, salt, and cinnamon to a large mixing bowl. Whisk until everything is combined.

Mash the bananas. Peel the bananas and mash them using a fork, or transfer them to a blender and blend until smooth. The first method will give you a texture with small chunks of bananas, while the blender method will yield a smoother, more uniform texture.

Add the liquid ingredients. Next, add the mashed bananas, oil, almond milk, and vanilla extract to the dry ingredients.

Mix until combined. Using a wooden spoon or spatula, mix the liquid ingredients with the dry ingredients until combined. Do not overmix.

Stir in your add-ins. At this point, feel free to customize the batter by incorporating chocolate chips, nuts, or dried fruits.

Transfer the batter. Transfer the banana bread batter to the prepared baking pan and spread it into an even layer. At this point, you can top it with chocolate chips or nuts.

Bake. Finally, bake the banana bread for 45-50 minutes or until golden brown.

You can keep this protein banana bread for up to 5 days at room temperature. Keep it covered with plastic wrap to maintain its moisture.

I just made this today after making your oat flour banana bread every week since the recipe came out.  I wanted to try a higher protein option and I must say they taste similar but I think this one might be better.  I used Sun Warrior vanilla protein powder and I didn't have any yogurt on hand so I used sour cream! I think it really made the difference. So good!
