Position oven racks in the upper and lower thirds of the oven and preheat the oven to 375 degrees F. Place the Brie in the freezer for 15 minutes to firm up. VERY generously coat 2, 24-cup mini muffin pans with nonstick spray (if you only have 1 pan or if you have 2, 12-cups pans, make the Brie bites in batches).

Unroll 1 sheet puff pastry on a lightly floured work surface (leave the second sheet in the refrigerator until you are ready to use it). Roll into a 10 x 14-inch rectangle. Cut the sheet lengthwise into 4 even strips. Cut crosswise into 6 even strips. You will have 24 squares total (each square will be about 2 1/2 inches on each side). Gently separate the squares and press them into the mini muffin tins to create a puff pastry cup. With the tines of a fork, prick the bottom of each puff pastry in 2 to 3 places.

Cut the piece of Brie in half, then place 1 half back in the freezer. Dice the remaining Brie into 24 pieces (they will be between 3/4 and 1/2-inch on each side). Place one piece of Brie in the center of each mini muffin cup. Top each piece of Brie with 1 teaspoon cranberry sauce. Sprinkle with 1/2 teaspoon salt, then half of the chopped pecans. Place in the refrigerator. Repeat with the second sheet of puff pastry, second half of Brie, and the remaining salt and pecans.

Place each muffin pan on a rimmed baking sheet to catch any cheese or cranberry that bubbles over. Bake the pans on the upper and lower thirds of the oven for 18 to 20 minutes, until the pastry is puffed and the corners are golden brown, switching the pans' positions on the upper and lower racks once halfway through. Let cool in the pans for 3 minutes. If any of the Brie or cranberry has bubbled out, use a fork to scoot it back into the center of the bites (no one will know!).

Gently transfer the bites to a serving plate (I find a fork works well to transfer them). Garnish each with a small piece of fresh rosemary. Enjoy hot or at room temperature.

Asparagus Puff Pastry Bundles

chive & onion cream cheese spread

egg beaten with 1 Tbsp. milk or water

Tbsp. everything bagel seasoning (ad)

Preheat oven to 425 degrees. 

Cut stems off of asparagus and place in a bowl. 

Sprinkle stalks with olive oil and a dash of salt &amp; pepper.

Roll out puff pastry. Use a pizza cutter or knife to cut it into 8 rectangles.

Spread cream cheese onto each rectangle.

Stack 5 asparagus stalks diagonally across each rectangle.

Sprinkle asparagus with shredded parmesan cheese.

Wrap the asparagus by taking the top left edge of each rectangle of puff pastry and folding it over the bottom right edge. 

Press pastry together tightly and seal. Repeat the process for each rectangle.

Brush tops of pastry with egg wash, then sprinkle with bagel seasoning.

Place pastries on a half  sheet pan and bake at 425 degrees for 10 to 15 minutes until pastry is golden brown. Serve immediately.

An easy puff pastry appetizer that uses Hormel canned chili. They are quick to whip up and have turned into my go-to appetizer for tailgate or football parties!

Package Frozen Puff Pastry Dough ((2 Sheets))

Can Hormel Chili ((with

Tsp. Red Wine Vinegar

Scallions

Cup Shredded Cheese ((Jack, Mozzarella & Cheddar bag mix))

Cup Sour Cream ((Optional))

Preheat your oven to 425 degrees F and take out your puff pastry dough.

Mix chili, vinegar, and scallions together in bowl and set aside. (Reserve 1-2 tbsp of scallions to garnish.)

Prepare your puff pastry dough by opening puff pastry sheets and cutting each sheet into 12 equal squares. (Tip* Working with cold dough is easier than room temperature!)

Place a tbsp of chili mixture onto the center of each square. Refreeze any extra dough for another time. You should get at least 18 bites (1 1/2 sheets.)

Bake for 12-14 minutes or until pastry dough is golden brown.&nbsp;

You can choose to add the cheese and stick it back in the oven to melt the cheese OR you can just add the cheese and serve right away!

Then add a dollop of sour cream to each followed by chopped scallions for a better presentation!

The holiday season is all about delicious appetizers that are easy to make, and these Goat Cheese Beet and Balsamic Puff Pastry Appetizers fit perfectly into that category! You only need 5 basic ingredients and there's minimal prep and cook time required. Make these for a Christmas or New Year's party, or just enjoy them yourself for lunch or a snack.

Goat Cheese Beet and Balsamic Puff Pastry Appetizers

(18 oz

plain goat cheese,

Balsamic glaze

Optional toppings: fresh herbs, such as thyme or parsley, and chopped walnuts or pecans

Pre-heat oven to 400 degrees F.  Open the package of beets, drain out the liquid and pat the beets dry.  Dice beets into small pieces.  I usually cut the smaller beets into quarters and the larger beets into about 6 pieces.  Spray a muffin tin well with cooking spray and set aside.

Add a little bit of flour to a large, clean surface, like a cutting board and place your unrolled puff pastry down.  Use a rolling pin to roll it out, just a little bit into a rectangle.  Use a pizza cutter, or knife, to cut the puff pastry into about 6 equal pieces.  You can also use a mini muffin tin and cut the dough even smaller*.

Place each piece of puff pastry into the muffin tin and use your fingers to push the edges down a little bit, into a cup shape.   To each one, add 3-4 pieces of diced beet and then top with a tablespoon or so of the crumbled goat cheese.  It&#8217;s up to you how much of it you want to use.

Place the muffin tin in the oven and bake until puff pastry is golden brown and completely cooked through, 30-35 minutes.  Remove from the oven and let cool for about 5 minutes.  Then, use a knife to carefully remove the puff pastry bites from the pan and place them on your serving plate.

Drizzle the top of each with a little bit of balsamic glaze and then top with fresh herbs and toasted nuts, if desired.  These should be enjoyed immediately, or kept at room temperature until ready to serve.

Summer Savory Tarts Recipe

puff pastry sheets (thawed)

yellow summer squash (thinly sliced)

zucchini (thinly sliced)

cherry tomatoes (halved)

salt and pepper (to taste)

egg (beaten)

creme fraiche

chives (snipped)

dill (chopped)

garlic (minced)

Preheat your oven to 400 F and line baking sheets with parchment. Thinly slice the zucchini and summer square. A handheld mandolin makes this super easy in 1 to 2 minutes—half the cherry tomatoes.

Prep

Mix creme fraiche with fresh herbs and minced garlic. Taste and season with salt and pepper as desired. Set aside.

Herbed Sauce

Unfold the puff pastry and roll slightly to even the sides. With a pastry cutter or pizza wheel, cut each sheet into squares, using the fold lines as guides.

Score each square with a 1/2-inch border inside the pastry edge with a sharp knife. Be careful not to cut all the way through.  With a fork, prick the inside square of each pastry.

Spread a dollop of herbed creme fraiche over the inner square of each pastry. Place your choice of thinly sliced vegetables in the center. Drizzle with olive oil and season with salt and pepper.

Brush the edges of each square with the beaten egg and bake for 12-14 minutes, or until the pastry has puffed up around the edges and is golden brown.
