Chocolate almond cups

almonds, plus extra chopped almonds to serve

(70 grams) almond or other nut butter

(65 grams) coconut oil, melted

(50 grams) shredded coconut, plus extra to serve

tbs rice malt syrup

cinnamon

tsp vanilla extract

(100 grams) puffed rice

(160 milliliters) maple syrup

coconut oil, melted, extra

(70 grams) cacao powder (from health food stores and selected supermarkets)

These homemade chocolate crackle bars are a great nut-free treat for lunch boxes.

Chocolate crackle bars

(2 cups) puffed rice

(1 cup) quinoa puffs

(1/2 cup) moist coconut flakes

medjool dates, pitted, finely chopped

85% dark chocolate, melted, plus extra, to drizzle

16.80 gm coconut oil, melted

These are a fat-free version of rice krispie treats.  They are made with honey instead of butter.  They are just as quick to make and prepare as the original.

Fat-Free Rice Krispie Treats

(283 grams) marshmallows

(180 grams) puffed rice cereal

tbs (42 grams) honey

tsp (1 grams) salt

Prep a 9x13 (23x33cm) dish by lightly spraying with non-stick cooking spray.  (You can use oil, margarine or butter, but it will add a trace amount of fat.)

In large saucepan, spray with cooking spray if the pan with cooking spray.  (Do not use cooking spray on non-stick pans.)  Melt honey over low heat. Add marshmallows and salt.  Stir until completely melted.

Remove from heat; immediately stir in rice cereal until well coated.

Pour mixture into prepared dish and press mixture down with the back of the spoon, or a piece of wax paper that is coated with non-stick cooking spray.  Let cool before cutting and slicing, about 1/2 hour.

Store in an airtight container.
