Make the curtido: In a large bowl, combine the cabbage, onion, and carrots. Pour the boiling water over the vegetables and toss. Let sit for 10 minutes, then drain.

In a liquid measuring cup or small bowl, combine the vinegar, oregano, and salt. Pour over the slaw and toss to coat. Once thoroughly mixed, transfer the curtido any any leftover liquid in the bowl to an airtight jar or container.

Chill for at least 20 minutes in the refrigerator, or chill overnight for best results.

Make the chicharrón: Heat the vegetable oil in a large pan over medium-high heat. Add the pork shoulder and salt. Cook for 15 minutes without disturbing. If the pork is browning too quickly, reduce the heat to medium. Turn the pork over and let cook on the other side for 10 minutes more, or until crispy and golden brown.

Transfer the pork to a food processor and add the tomato, green bell pepper, and onion. Pulse until a thick paste forms. The mixture should not be watery. Set aside.

Make the pupusa dough: In a large bowl, whisk together the masa harina and salt, then add the water. Use your hands to mix until the dough comes together with a clay-like texture.

Fill a small bowl with water and a bit of oil and set near your work station. You’ll wet your fingers with the mixture as you work to keep the dough from sticking to your hands.

Take a golf ball-sized portion of dough and roll into a ball, then flatten into an even round.

Fill the dough round with ½ tablespoon chicharrón paste, 1 teaspoon refried beans, and 1 teaspoon mozzarella cheese. Fold the dough over the filling until it’s completely sealed. Then, pat out the ball between your hands until flat. If the pupusa cracks, patch it with a bit of dough and a little oil. Repeat with the remaining ingredients.

Heat a large pan or griddle over medium heat. Brush with vegetable oil, then place 2-3 pupusas on the pan and cook for 2-4 minutes, or until the bottoms are golden brown. Flip and cook on the other side for 2-4 minutes more, until golden brown and warmed through. Repeat with the remaining pupusas.

Add masa harina (corn flour) and salt to a large mixing bowl.&nbsp;

Add the warm water, little by little, mixing the dough with your hand. You may not need all of the water. You want the masa to be the consistency of a soft play dough. If the dough is too wet, mix in some more masa harina. If it’s too dry, add a little more water.Mix in butter and chicken bouillon, if using.

Scoop the dough into large, golf-ball-size portions. You can scoop all of the dough into balls before continuing, or make 1 pupusa at a time. Be sure to keep the dough covered with a damp cloth as you work, to keep it from drying out.

Use the palms of your hands to pat the dough into a disc, about 4 inches in diameter.

Scoop about half a tablespoon of the beans and place it in the center of the dough circle, followed by a pinch of shredded cheese.&nbsp;

Gently bring the edges of the dough up and around the filling, pinching it closed into a ball. Gently pat the dough between your palms to form it into a disc again.Be gentle so you don’t have big cracks of filling come through, but if you do have some, its fine! They don’t need to be perfect :)

Heat a large ungreased skillet or pan over medium heat. Place pupusas on the hot pan and cook for about 2-4 minutes on each side. You will know the pupusas are ready to flip when the edges are set and the bottom is lightly golden.

Serve immediately, topped with Curtido and Salsa Roja.

Pupusas are an easy recipe to make at home. These homemade traditional Central American pupusas have a thick corn tortilla stuffed flavorful red beans.

Heat vegetable oil in large nonstick skillet over medium high heat. When hot, add the minced onion. Allow to brown and stir only to prevent burning. When onion is brown and fragrant, scoop out onion with a slotted spoon and allow to cool on a paper towel lined plate.&nbsp;

Combine cooked and cooled onions with refried red beans and cheese in medium bowl. Set aside.&nbsp;

To make the pupusa dough, use a stand mixer fitted with the paddle attachment and beat masa flour, salt and hot water on medium speed until dough is very thick and sticky. Mix for about 5 minutes until light and fluffy. Allow dough to rest, uncovered, 15 minutes.

Combine remaining oil and warm water in a small bowl. Dip both hands in this mixture and rub your hands together to coat. This will prevent dough from sticking to your hands, and will hydrate dough as you assemble.

Add some dough to the palm of your hand and flatten.&nbsp;

Add a scoop of the bean mixture to the center.&nbsp;

Pull up sides of dough and pinch dough around filling to enclose. Add extra dough to patch any holes, if needed.&nbsp;

Gently flatten into a disk. Repeat with remaining dough and bean mixture (I ended up making 8 pupusas that were about 5 inches in diameter).

Heat nonstick griddle over medium to medium high heat and cook for about 5 minutes on each side until cooked thru and starting to darken.

Serve hot with Salvadoran Curtido cabbage slaw and Salvadoran Salsa Roja alongside.

These homemade traditional Central American pupusas have a thick corn tortilla stuffed flavorful red beans. I share my easy step by step instructions for this delicious recipe.

This is a step-by-step on how to make pupusas! This recipe hails from El Salvador and is made by mixing corn flour with water and salt. It&#x27;s topped with a quick pickled cabbage slaw called curtido.

To a medium bowl, toss together the cabbage, carrots and Mexican oregano. In a measuring cup, stir together the hot water, vinegar, salt and sugar; pour it over the cabbage/carrot mixture. Allow it to come to room temperature and then cover it with plastic wrap and transfer it to the fridge for at least 4 hours and preferably a day before serving.

To Make the Pupusa Dough:

In a medium bowl, whisk together the masa harina and salt. Pour in the cold water and using a spatula, stir the masa until mostly combined. Then, using your hands, mix the dough until a very soft dough forms. The dough will be very soft. This is totally okay; this means a delicious pupusa is on the way!

I found it easiest to use a 2 ounce ice cream scoop and scoop out the masa into balls onto a piece of parchment. You could also do this with your hands but be sure to make the water/oil mixture above and coat your hands with it first.

To Make the Curtido:

Add the water to a measuring cup and pour in the oil (you can eyeball this). Lightly dip your hands in the water/oil mixture, making sure your palm are evenly coated. This will make it so the masa doesn’t stick to your hands.

Preheat your oven to 200 degrees F. I like to place the pupusas in the oven while I make the rest of the pupusas so they can stay warm and melty. I placed a cooling rack atop a baking sheet and placed it in the oven.

Working one at a time, flatten the balls gently until they're about 1/2-inch thick discs. Place a tablespoon or two of mozzarella cheese, a small bit of diced jalapeño and squash into the center and wrap the dough around the filling creating a half moon shape. Pinch the edges to seal it completely. And then pat the dough gently, flattening it and alternating hands until it reaches about 1/4-inch thick and about 4-inches in diameter. Feel free to re-grease your hands as needed. Repeat with the remaining balls of dough.

Meanwhile, preheat a cast iron skillet over medium heat. Add a teaspoon of neutral oil and brush the surface with a silicon brush. Add the pupusas to the pan, fitting two to three at time. Don’t be shy to break out another cast iron skillet (if you own it). Cook each pupusa for 4 to 6 minutes per side and then transfer to the baking sheet in the oven. Repeat this process until you’ve worked your way through all of the pupusas.

To Assembe the Pupusas:

Serve the pupusas with the curtido, wedges of lime and salsa.

masa harina corn flour (corn meal or polenta is not the same)

½ -1 cup shredded cheese- Oaxacan Cheese, mozzarella or jack

½ -1 cup refried beans (homemade beans

Mix the masa harina flour with salt in a medium bowl. Add the warm water and oil and kneed until it becomes a pliable dough. (see notes)

Fill a bowl with warm water ( for hand dipping) with a tiny splash of olive oil.

Line a sheet pan with parchment or simply place a piece of parchment on the counter.

Prepare your fillings, gathering them around. If using the shallot, finely chop and saute until deeply golden and tender.

Dip your hands in the oiled water, divide the dough in half. Then form 4 equal-sized balls (with each half), a total of eight similar-sized balls, dipping your hands in the water as needed to prevent sticking.

Flatten a ball into a 4 inch round in the palm of your greased hand, creating a cup. (TIP: If the edges crack or crumble, the dough needs a little more water.)

Place a little of the filling inside (1 tablespoon beans, 1 tablespoon cheese, 1 teaspoon shallots, cilantro and scallions) and fold the edges up and around up to enclose. Roll into a neat, sealed round ball.

Flatten one more time using your two palms  ( to about ½ inch thick) and place on a parchment-lined sheet pan. Repeat with all the pupusas.

Heat 1-2 tablespoons oil in a cast iron skillet over medium heat. Cook each side until crispy and golden, about 5-7 minutes, each side. Keep warm in an oven until serving.

Serve with Curtido, Salsa Roja or  hot sauce, sour cream or avocado, cilantro and lime.

Place all ingredients (except the oil) in a blender and puree.  Heat oil in a medium pot.  Carefully pour in the tomato mixture- it will spatter so hold a lid over the pot at an angle, like a shield with the other hand. Bring to a simmer, and simmer gently for 20 minutes, until thickened and darkened. Cool and serve.

I did not have time to make the curtido so I served with cabbage tossed with apple cider vinegar salt and dill. It was a nice compliment.

Wow—this was so fast, simple  and delicious—definitely the sum is greater than the parts.  Reminiscent of tamales but with much less effort and with a lovely toothsome crispness from the shallow fry (I liked the darker fried ones best).  I added fresh corn kernels  to my refried beans + cheddar but am looking forward to trying more fillings.  Any suggestions (I presume dryish ones work best)?  I didn’t need the bowl of water/oil—my dough was really easy to work with and held together without being sticky at all (I made it by adding 1 ¾ c boiling water to the masa+salt, mixing and then letting that sit covered until it was cool enough to handle—or longer if you want—then I smushed in the oil by hand making a nice moist dough.  I rolled it into a fat log that I cut into 8 slices that I flattened and filled.  Worked great.  Pupusas were a discovery for me — this was something I’d never heard of and we loved it.  Thanks for that!

Pupusas, the national dish of El Salvador, are a simple and affordable recipe to make. Stuff them with cheese, meat, or vegetables, and fry them up for a filling snack or lunch!

In a mixing bowl, whisk together salt and masa harina. Then use a mixing spoon to mix in the water. When the dough gets too hard to mix, begin kneading the dough with your hands until everything is combined.

Form the dough into balls about 2 inches in diameter. Use your palm to flatten the balls into a disk.

When they are flat, lay about 1 tbsp of shredded cheese in the middle, then ball up the dough to form a ball again. Finally, flatten into a disk again now that the cheese is inside.

Heat a cast iron skillet over medium heat, and allow to heat up. Add the pupusa into the pan, and cook for about 5-10 minutes on one side, until the outside is crispy and you see a few small char marks. Flip the pupusa and grill again on the other side. Enjoy!

The avocado (Persea americana) is a tree that is native to South Central Mexico, classified as a member of the flowering plant family Lauraceae. Avocado (also alligator pear) also refers to the tree's fruit, which is botanically a large berry containing a single seed.

Rinse cabbage in a mesh strainer then slowly pour boiling water over the cabbage. Rinse with cold water. Drain well, and dry.

Add cabbage to a large bowl with the carrots, jalapeno, 2 tablespoons jalapeno brine, vinegar, oregano, and salt and toss well to combine.

Set aside in the fridge until ready to eat.

Curtido:

For the dough: In a large bowl, combine flour and salt.  Whisk to combine. Add the water and oil and mix with a spatula until combined and dough forms. Cover with a damp towel while you make the filling.

For the bean filling: Heat a medium skillet over medium heat. Add the oil, when hot add the poblano pepper, onion, cilantro and garlic and cook until soft, 2 to 3 minutes.

Add the beans and season with salt, cook over medium heat stirring until all the liquid has evaporated and beans have thickened, 2 to 3 minutes.

Transfer to a medium bowl and let it cool 5 minutes. Once cool add the mozzarella cheese.

To make pupusas: Knead dough in the bowl for 20 seconds with the spatula. Turn the dough out onto a lightly floured surface, form into a slightly flattened dough ball. If dough seems dry and cracks, add a little more water, 1 tablespoon at a time.

Cut dough into 8 equal pieces. Covering with a damp towel.

Place a small bowl with 3/4 cups water and 1/2 teaspoon oil, this will help you work the dough and prevent it from sticking. With slightly damp hands, working one at a time roll each piece into a ball then flatten into a 1/4 inch disk using your fingers pressed onto your palm of your hand.

Scoop 3 level tablespoons of the filling into the middle of the disc.  Bring all the edges to the center to cover the filling completely. Dampen your hands once again and start flattening to form a 5 to 5-1/2 inch disc, careful not to squish out the filling.

Repeat with remaining dough and filling. Discard the water with oil.

When ready to cook, heat a large skillet over medium-low heat and spray with oil.  Cook 7 to 10 minutes turning halfway, or until browned and crisp on the outside.  To keep cooked pupusas warm, place them on a sheet pan in a 200 degree F oven while you make the rest.

Serve the pupusas with sliced avocado and curtido on top.

Pupusas:

With only 5 ingredients and about 30 minutes, you can have this easy and flavorful Pupusa Recipe. A great side dish or appetizer that is cheesy and delicious.

Add the masa, water, and salt to a large bowl. Stir together. Start kneading with your hands until a soft, smooth, moist dough forms. You may need to add a little more water, up to ¼ cup. You know it is ready when you can gently pinch some together and it doesn’t crack.

Cover the bowl and let the dough rest for 15 minutes.

In a small bowl, toss together the mozzarella and queso fresco, set aside.

Divide the dough into 8 equal portions. I like to weigh them to make sure they are the same size, but you can eyeball it.

Take one of the dough portions and pat it into a large disc in your hands. Add 1/8th of the cheese mixture to the center. Fold and pinch the dough over the cheese. Roll into a ball.

Gently pat and press the ball into a round disc about 1/4th inch thick. Repeat with the remaining dough and cheese. Keep any dough you are not working with covered so it doesn’t dry out.

Heat a griddle over medium heat. Once hot, spray with cooking spray. Cook for about 5-6 minutes per side until golden brown and slightly charred. Place on a wire rack while you are cooking the remaining pupusas. Serve immediately.

How to Make Pupusas

Maseca

Add the Maseca and salt to a mixing bowl and mix well.

Slowly add the warm water to the bowl and mix with your hand until you have a moist and soft dough.

Divide the dough into 6 even sized balls.

Cut through the sides of a ziploc bag making a flap. Then put one of the dough balls inside the bag.

Use a heavy pot to flatten the ball.

Put as much cheese that will fit on top of the flattened ball.

Fold the dough as if making an empanada. Use the plastic bag to help you do this.

Shape it back into a ball. Use the bag to help you do this.&nbsp;

Put the flap back over the ball and flatten again. It shouldn't be thin like a tortilla. They should be thick.

Heat up a skillet over medium heat.

Coat the pot with enough oil to keep the pupusa from sticking.

Once the oil is hot add the pupusa and cook for 3-4 minutes. Then flip and cook for an additional 3-4 minutes or until the pupusa is nicely browned and cooked through.

Transfer the pupusa to a paper towel lined plate and repeat the above steps with the remaining five balls.

Add more oil as needed to keep the pupusas from sticking.

Crispy corn flatbreads are stuffed with gooey oaxaca cheese and chorizo, pan-fried until irresistibly crispy and then served with a simple slaw. Simple, but so delicious.
