Preheat the grill to medium. Tip the spaghetti into a large pan of boiling salted water and cook according to the packet instructions until al dente. Drain, drizzle with olive oil and set aside.

Meanwhile, place the ciabatta crumbs on a lined baking sheet. Drizzle with 2 tbsp olive oil, scatter with the thyme leaves, season with salt and freshly ground black pepper and grill for a few minutes until golden and crisp. Remove from the grill and set aside.

Place 2 tbsp olive oil in a saucepan, add the sliced onion and fry over a medium heat until softened but not coloured. Add the garlic, chilli and anchovies and fry for 1 minute. Add the semi-dried tomatoes and olives and warm through for 1-2 minutes. Toss the spaghetti in the sauce and mix well to coat. Serve scattered with the ciabatta crumbs.

Slow-cooked chicken puttanesca

Heat the oven to 150°C fan/gas 3½. To make the puttanesca sauce, heat 2 tbsp of the oil in a hob-safe casserole (with a lid). Add the onion and a pinch of salt, then fry over a medium heat for 10 minutes or until soft. Add the garlic, chilli flakes and oregano, then fry for 1 minute. Add the tomatoes, olives, anchovies and capers. Cover and cook for 5 minutes, then season. Keep warm.

Heat the remaining oil in a large non-stick frying pan. Season the chicken skin with salt and fry skin-side down for 5-7 minutes over a medium-high heat or until golden brown and crisp. Nestle the chicken skin-side up into the puttanesca sauce in the casserole. Put the lid on or cover tightly with foil, cook in the oven for 1 hour, then remove the lid/foil and cook for 15 minutes to reduce the sauce. Scatter with chopped parsley and serve with creamy mashed potatoes or cheesy polenta.

Combine ingredients in a Dutch oven or large stockpot.

Bring the pot to a slow boil over medium high heat and allow the pasta to cook to al dente. Stir occasionally help the pasta cook evenly and prevent the bottom from sticking.

When pasta is tender, remove from heat and allow the pot to rest for a few minutes to absorb any remaining liquids.

If desired, garnish with fresh parsley and grated dairy free cheese or nutritional yeast before serving.

Linguine Puttanesca Recipe

28- ounce can whole peeled tomatoes

Place the whole tomatoes in a large bowl; use your hands to squeeze and crush the tomatoes into a thick sauce. Set aside.

Heat the olive oil in a large skillet set over medium heat. Add the grated garlic and red pepper flakes; fry for 60 to 90 seconds, until the garlic is fragrant. Immediately add the tomatoes, olives, capers, salt, pepper, and miso (if using) to the pan. Stir well; turn the heat down to low and simmer, uncovered, for 20 minutes.

Meanwhile, prepare the linguine according to package instructions for al dente. Drain the pasta and add to the pan of simmered puttanesca sauce. Toss well; serve with grated parmesan if desired.

Easy Pasta Puttanesca Recipe

long pasta noodles (spaghetti, bucatini, etc)

Bring a large pot of of salted water to a boil (about 1 tablespoon kosher salt). Boil the pasta until al dente.

Meanwhile, mince the garlic. If the olives are not sliced, slice them in half. In a separate large pot or saucepan, warm the olive oil over medium low heat. Add the garlic and anchovy paste and cook until lightly browned, about 1 minute. Add the tomatoes, red pepper flakes, and kosher salt, and simmer for 10 minutes over low heat.

Add the olives and capers to the tomato sauce. Continue to simmer until the pasta is done.

Drain the pasta and stir it into the tomato sauce. Serve garnished with Parmesan cheese and finely chopped parsley, and additional red pepper flakes to taste.

Chicken Puttanesca Recipe

Rub the chicken with salt, pepper, and 1 tsp dried oregano on both sides.

Heat 1 tbsp oil in a large skillet over medium heat.

Add chicken and cook, until cooked through and golden-brown on both sides, about 10-12 minutes. Set aside on a plate. You might have to cook the chicken in batches to avoid overcrowding the pan, so divide the oil if so.

Add the remaining 1 tbsp of oil to the hot skillet, and sauté the garlic and anchovy for 1 minute.

Add in the tomatoes and oregano. Use the back of a wooden spoon to crush the tomatoes into small pieces.

Stir in the capers, olives; Simmer over low heat partially covered, for 8-10 minutes, until the sauce thickens.

Taste the sauce and season with salt and pepper, if needed.

Return the chicken to the pan and spoon over the sauce. Allow it to cook for a bit more into the sauce, until hot.

Garnish with freshly chopped parsley and enjoy. Serve with warm crusty bread.

Roasted Spaghetti Squash with Eggplant Puttanesca

lb Spaghetti Squash-

eggplant

red onion- diced

garlic- rough chopped

red bell pepper- diced

dry Italian herbs

red chili flakes,

red wine

slice olives

Italian parsley, grated Romano or Parmesan cheese, or a drizzle olive oil

Cut squash in half widthwise, place open side down, on a parchment-lined baking sheet in the oven and roast for 30- 40 minutes (depending on size) or until knife tender. Turn on their sides, allowing steam to escape, continue roasting 5-10 minutes, so they dry out a bit.

While the squash is roasting make the Eggplant Puttanesca sauce.

In a large heavy bottom skillet or dutch oven, heat 3 tablespoons oil over med-high heat. Add diced onion and eggplant, and saute, stirring often for 4-5 minutes. Add garlic and red bell pepper, turn heat down to medium and continue cooking until eggplant is tender, about 10-12 more minutes, stirring occasionally.

Add crushed tomatoes, a generous splash of wine, chili flakes, salt, pepper, Italian herbs, and simmer on low heat 5-10 more minutes. Add capers and olives.

Taste, adjust salt, spice level and add more capers or olives to taste. Sometimes I&#8217;ll add a little splash of the caper or olive brine, to bump up the flavor.

When spaghetti squash is tender, scoop the seeds out- then scoop out spaghetti squash strands into a bowl, and fluff and toss well with salt, pepper and 1 tablespoon olive oil.

 Divide among bowls and top with the eggplant puttanesca. Sprinkle with fresh Italian parsley and grated cheese (optional)  or drizzle olive oil.

Alternatively, you can serve this right out of the spaghetti squash shell ( making sure to season the squash, mixing with a fork before topping with the putttanesca.

I added some grated carrot( to up the veggies), about 1/8 cup of chocolate chips( to counter the acid)and some Italian strained tomatoes (for a more saucey consistency). Very yummy and easy. Thank you!

I used your updated method for roasting spaghetti squash with this and subbed sriracha for chili flakes (hey... it's what I had on hand), and oh man it is so good. We had this with some breaded baked shrimp last night and it was excellent!

I love this so much … the flavors of the puttanesca stay bright, I sometimes have an issue with eggplant dishes becoming muddled but that is not the case here.
Also cutting the spaghetti squash through the middle instead of lengthwise?  Game changer!
I used basil instead of parsley because I had it, that’s the only change that I made.

This was delicious and also economical! I got eggplant in the clearance section...2 for .99! I had some leftover pizza, and this sauce was a perfect match with the edge crusts, which I might have otherwise thrown away. The combo tasted intentional, even though I was just scavenging in my fridge for a quick lunch.

Not fans of this recipe. The flavor was an odd combination that just didn’t cut it for us. I thought we’d love it since puttanesca is a favorite of ours. This was our first run with spaghetti squash. Not sure what all the fuss is about. More trouble than it’s worth to prepare for minimal flavor unlike other squashed we love. Oh well, into the trash with the leftovers.
