One Skillet Queso Fundido

Mexican chorizo (casings removed)

onion

poblano pepper

monterey jack cheese

oaxaca cheese

Roma tomatoes (diced, for garnish)

cilantro (for garnish)

Heat a 9-inch cast iron skillet over medium-high heat. Add in chorizo and cook, stirring occasionally until browned, about 5 minutes.

Add in onion and poblano pepper and saute until soft and chorizo is completely cooked through, about 7 to 10 minutes.  Drain excess grease and moisture.

Stir in shredded cheeses and transfer the skillet to the oven, about 8 inches from the broiler. Broil on high 3 to 5 minutes, until cheese is melted, bubbling, and starting to brown.

Garnish with Roma tomatoes and cilantro.  Serve hot with tortilla chips.

One Skillet Queso Fundido With Chorizo

Queso Fundido

chorizo

white onion,

whole Poblano pepper, stemmed, seeded and diced small (about 1 cup)

Monterey Jack cheese, shredded

In a cast iron skillet sprayed with a little kitchen pan spray over medium high heat, add chorizo and break up as you cook.

After the beef has cooked and slightly browned, drain into a sieve and discard the fat. Then pour the cooked chorizo out onto paper towels to absorb any remaining grease.

Spray a little more kitchen pan spray if needed in the skillet and add the diced white onion and diced poblano pepper and cook 4-5 minutes to soften.

Add the cooked drained chorizo into the pan with the onion and peppers and stir to combine.

Sprinkle on the jack and Oaxaca cheese and place into the preheated oven for 5-8 minutes just to melt the cheese. Do not leave in longer or the cheese will go from stringy to tough and hard. Ours was ready in five minutes.

Garnish with the drained canned tomatoes and the fresh cilantro.

Place a pot holder over the handle of the pan to remind guests that it is hot &#8211; then serve right out of the skillet with tortilla chips.

You can make this restaurant-style Tequila Queso Fundido at home for a decadent and indulgent cheese dip with a hint of tequila.

Tequila Queso Fundido

Cut the garlic in half and rub it along the inside of the saucepan and serving dish. Discard any leftover garlic.

Grate the cheese and add it to a medium mixing bowl. Add the cornstarch chile powder, and cumin and stir to coat the cheese. Set aside.

Quickly transfer the queso to the serving bowl, garnish and enjoy immediately. If the cheese becomes too thick and cool, you can reheat it in the microwave at 30-second intervals, stirring in between.

Heat a cast-iron skillet over medium-high heat. Cook the chorizo being sure to break it up as the meat cooks. It&#039;s done when the meat is cooked through and crispy, after about 10 minutes. Transfer the chorizo to a bowl, leaving the rendered fat in the skillet.

Add the onions and garlic to the same skillet. (I had to add a tablespoon or two of vegetable oil if need to have enough fat in the skillet.) Cook until the onions have softened and are fragrant, about 5 minutes. Be sure to stir often so the garlic doesn&#039;t burn.

Preheat your oven to broil on HIGH.

Pour the beer into the skillet and stir to combine. Reduce the heat to medium and cook for another 5 to 10 minutes, or until the beer has evaporated.

Add the cheeses and chorizo to the skillet and stir everything together.

Place the skillet under the broiler for 2-3 minutes until the cheese is melted. It will be bubbling and slightly browned on top when it&#039;s done.

Carefully remove your skillet from the oven and serve immediately with chips.

Cook the chorizo in a large oven safe frying pan set over medium heat, until crumbly

Reserve 1/4 a cup of chorizo for the topping

Set an oven-safe skillet over medium heat, and add the tablespoon of oil. Cook the chorizo for 7 to 8 minutes, until the fat renders and the sausage is bubbly.

Preheat oven to 400 degrees F.

To a skillet, set over medium heat, cook the soyrizo or chorizo, breaking it up into crumbles until cooked and fragrant. Remove all of it and transfer it to a small bowl. If needed, add a teaspoon or two of olive oil. Next, add the diced red onion and minced garlic to the skillet; add a pinch of salt and cook until softened, about 5 minutes.

Add most of the chorizo/soyrizo back to the skillet (reserving about 1/4 cup for the topping) to the skillet. Mix it all up and spread it into an even layer.

Pour in the shredded cheese and milk. Give it a loose mix and spread it into an even layer.

Transfer to the oven to bake for 5 to 7 minutes, until cheesy and melty.

Preheat your oven to 375°F (190°C).

Preheat the Oven:

Hatch Green Chile Queso Fundido

Hatch green chile (small diced)

Red bell pepper (small diced)

Wash and prep all ingredients; starting with the vegetables first and the cheese cutting last. Refrigerate the cheese after its been cut.

Add hatch green chile and water to the pan and gently stir it into the mixture. Once evenly mixed turn stove off.

If baking at later time. Covered baking dish in the refrigerator. Baking instructions: 375 degree for 15 minutes, then uncover for last 5 minutes.

To make the Hatch Chile Fundido
