Antonio Carluccio's not above an easy tuna pasta recipe. A store cupboard favourite with a twist of fresh ginger.

Tuna pasta sauce 

375 grams/13 ounces dried linguine or other pasta

tbsp extra virgin olive oil

tbsp finely chopped parsley

garlic cloves, finely chopped

chilli pepper, finely chopped

1cm/½in fresh ginger root, thinly sliced

grams/1lb passata

tinned tuna

salt and black pepper

Puttanesca is a fiery, easy sauce for pasta that can be made in less time than it takes to cook a pan of linguine.

Three ingredients, three steps to a speedy midweek supper of trendy cacio e pepe (‘cheese and pepper’). Tangy pecorino cheese combines with the pasta cooking water to make a creamy sauce that clings to the pasta.

Homemade pesto is such a treat. This version comes from Trapani in Sicily, and uses almonds and tomatoes instead of pine nuts.

300 grams/10½oz cherry tomatoes, halved

grams/1¾oz pecorino cheese

500 grams/1lb 2 ounces spaghetti, linguine

I absolutely adore eating this Sicilian pasta cold, should any be left over. It is so easy to make and, being both simple and spectacular, is first on my list for a pasta dish to serve when you have people round.

At the time of writing, I confess you will need to go to an Italian deli or specialist food outlet for fregola, the sun-dried and toasted Sardinian “couscous” specified for this recipe. I wouldn’t substitute regular couscous for the fregola, which is rather more like dense pasta peas than semolina grains, and thus most comparable to the larger Midde-Eastern or Israeli couscous which could be used in its stead.
