These chewy oatmeal cookies are soft, packed with texture, and have a delicious caramel flavor with a hint of cinnamon.

Chewy Oatmeal Cookies

unsalted butter (softened)

white sugar

brown sugar (packed)

tsp vanilla extract

tbsp honey

all-purpose flour

cinnamon

tsp baking soda

tsp salt

Preheat the oven to 350F degrees. Line baking sheets with parchment paper or silicone baking mats.&nbsp;

In a large bowl beat together the butter and sugars until fluffy.&nbsp;

Beat in the egg, vanilla extract and honey. Scrape down the sides of the bowl as necessary.&nbsp;

With the mixer on low speed carefully beat in the flour, cinnamon, baking soda and salt.&nbsp;

Mix in the quick oats and large flake oats.&nbsp;

Form the dough into balls about 1 to 1.5 tablespoons in size and place 2 inches apart on the lined cookie sheets.&nbsp;

Bake 1 cookie sheet at a time in the middle rack of your oven for 9-11 minutes, or until the tops look just set.

Cool the cookies on the baking sheet for at least 5 minutes before transferring to a wire cooling rack and continue cooling.

Who can resist the classic flavors of Chocolate Oatmeal No Bake Cookies (without peanut butter)? Not me. The perfectly cooked syrup will set up with the oats for a texture that is pure chocolate fudgy delight!

Chocolate Oatmeal No Bake Cookies (without peanut butter)

Combine the butter, sugar, and milk in a saucepan and bring to a boil over medium high to high heat (enough to bring the syrup to a rapid boil). Stir frequently to prevent burning or boiling over!

Once the syrup is at a full rolling boil, stir and cook for 1 minute then remove from heat.

Add the vanilla and cocoa, stir until the syrup is smooth. Add the quick oats and stir until evenly coated with the syrup.

Drop tablespoon sized portions onto waxed paper, use the back of a spoon to make cookie shaped (rather than a no bake cookie mound) if desired. Allow to set up for one hour.

Rolled Oats (90 grams)

Puffed Brown Rice (17 grams, or more Oats)

Chopped Almonds (30 grams)

Tbsp Chia Seeds

Maple Syrup (Stevia sweetened preferred)

Tbsp Unsweetened Applesauce (See notes for sub)

Cinnamon

tsp Vanilla Extract

Nutmeg

Egg White

Preheat oven to 300°F and line a baking sheet parchment paper.

In a large bowl, combine all the ingredients except egg whites: rolled oats, puffed rice cereal, almonds, chia seeds, maple syrup, applesauce, vanilla extract, nutmeg and salt if using, and mix.

In a small bowl, whisk egg whites until foamy - about 10 seconds with a hand mixer.

Add egg white to oat mixture and fold to combine. Make sure egg whites are completely mixed in.

Transfer mixture to baking sheet and spread out evenly evenly around the edges, leaving a hole in the middle, and press down to flatten.

Leaving the gap in the middle (like a donut) is required or the the center will remain soft while edges harden.

Bake for 45 minutes.

Let cool 30 minutes, then break into clusters.

Serve with yogurt, cold milk or just eat plain!

Caramel Apple Cheesecake Bars with Streusel Topping

Preheat oven to 350 degrees F. Line a 9X13-inch pan with foil (helps with cleanup but isn&#x27;t necessary). Lightly grease the foil with nonstick cooking spray.

For the apples, in a small bowl, stir together the chopped apples, two tablespoons sugar, cinnamon, and nutmeg. Set aside.

For the streusel, in a medium bowl, combine all the streusel topping ingredients and mix with a pastry blender or two forks (or your fingers) until crumbly. Set aside.

For the shortbread base, in a medium bowl, combine the flour, brown sugar, salt and cinnamon. Cut in butter with a pastry blender or two forks until mixture is crumbly but evenly and well combined. Press the crust evenly into the prepared pan. Bake for 10 minutes or until very lightly browned around the edges.

For the cream cheese layer, while the crust is baking, in a large bowl with an electric handheld mixer (or in a stand mixer fitted with the paddle attachment), beat the cream cheese with the 1/2 cup sugar until smooth. Add the eggs, one at a time and then the vanilla. Mix until evenly combined, scraping down the edges of the bowl as needed. Pour over the warm crust.

Give the apple mixture a good stir and spoon over the cheesecake layer. Sprinkle the streusel topping over the apples. Bake for 30-35 minutes until the filling is set.

For the caramel sauce, add the butter, brown sugar, cream, and salt to a saucepan and set over medium-low heat. Bring the mixture to a gentle simmer and cook while stirring gently for 5-7 minutes, until thickened slightly. Add the vanilla and cook another minute to thicken further. The sauce will continue to thicken as it cools. If the caramel sauce has been refrigerated, warm slightly to pour over the bars.

Cool the bars to room temperature. Drizzle with the caramel topping (or plate individual slices and drizzle with topping one by one).

Instant (or Rolled) Oats (45 grams)

Puffed Brown Rice Cereal (9 grams)

Cheerios (14 grams)

½ scoop Vanilla Protein Powder (15 grams, 2-3 Tbsp)

Peanut Butter Powder (64 grams)

Tbsp Almond Milk

Tbsp Maple Syrup (Sugar-free recommended)

Line a 8½ x 4½” loaf pan with parchment paper (or use moulds or a tray). Leave an overhang to lift out later.

In a large bowl, combine oats, brown rice puffs cereal, cheerios and protein powder.

In a small bowl, stir together peanut butter powder and almond milk until completely smooth.

Pour in peanut butter mixture and maple syrup into cereal. Use a spatula and fold to combine. It may take some time, but you will get a tough mixture that holds together.

Transfer to prepared loaf pan, spread and press down to smoothen.

Place pan in the fridge for about 15 minutes to harden.

Lift out of pan using lining, place on cutting board and using a sharp knife, slice into 8 bars.

Measure out 7 cups of quick outs and place them in a large bowl. Then add the remaining 3 cups of quick oats to your blender and blend until powdery. Pour the powdered oats into the bowl with the other oats.

Add the salt, brown sugar, and creamer to the bowl of oats, and stir until well mixed.

Next, you’ll divide up the mixture into your “packets.” Scoop 1/2 cup of the oatmeal mixture into each snack-sized ziplock bag, then seal each bag tightly. The recipe makes approximately 24 single-serving bags.

Empty one “packet” of oatmeal into a bowl or mug, then add 3/4 cup of water. Microwave on High for 1-2 minutes until hot. Let cool for a minute or so, add your favorite toppings, and enjoy!
