This silky smooth, super versatile vegetarian soup is perfect for a dinner party starter, everyday dinner or warming lunch. Plus it's two of your five-a-day

Roasted sweet potato & carrot soup

sweet potatoes,

carrots,

olive oil

onions, finely chopped

garlic cloves, crushed

vegetable stock

fraîche,

Heat oven to 220C/200C fan/ gas 7 and put 500g chunked sweet potatoes and 300g chunked carrots into a large <a href="https://www.bbcgoodfood.com/review/test-five-best-roasting-tins">roasting tin</a>, drizzled with 2 tbsp olive oil and plenty of seasoning.

Roast the vegetables in the oven for 25-30 mins or until caramelised and tender.

Meanwhile, put the remaining 1 tbsp olive oil in a large deep <a href="https://www.bbcgoodfood.com/content/five-best-saucepans">saucepan</a> and fry 2 finely chopped onions over a medium-low heat for about 10 mins until softened.

Add 2 crushed garlic cloves and stir for 1 min before adding 1l vegetable stock. Simmer for 5-10 mins until the onions are very soft, then set aside.

Once the roasted vegetables are done, leave to cool a little, then transfer to the saucepan and use a <a href="https://www.bbcgoodfood.com/content/top-five-hand-blenders">hand blender</a> to process until smooth. Stir in 100ml crème fraîche, a little more seasoning and reheat until hot.

Serve in bowls topped with a swirl of crème fraîche and a good grinding of black pepper.

Creamy and comforting, nothing beats this chicken soup.

1kg cauliflower (about 1 medium head, trimmed), cut into florets

(250 milliliters) pure (thin) cream

Excellent recipe as written.  I add in more carrots, just a personal preference.  For those doubting the touch of cream, it makes a world of difference and I guarantee the better restaurants that prepare from scratch use cream.  It's such a small amount, it is almost undetectable and provides a silky mouth feel and cuts the acid of the tomatoes without using sugar.  If you have access to fresh clams, it is worth the effort.  If you are not comfortable shucking your own clams, any good fish monger will do so for you.  Once you have made this, you will prepare a double batch next time around.

30 Minute Coconut Curry Noodle Soup with Chili Crisp Chickpeas

ginger

shallot, chopped

Thai red curry paste

(14 ounces) full-fat coconut milk

low-sodium broth

fish sauce ((or use soy sauce))

peanut butter

broccolini (or 3 cups spinach)

cilantro

egg or rice noodles

limes and peanuts,

(14 ounces) chickpeas, drained, plus patted dry

tamari/soy sauce

maple syrup

coconut

sesame seeds

chili oil

1. To make the chickpeas. Preheat oven to 425° F.2. On a baking sheet, toss the chickpeas with olive oil, tamari, maple syrup, and pepper. Bake for 15 minutes. Add the coconut and sesame seeds, toss and bake 5-10 minutes, until extra crisp. Remove and toss with chili oil.3. To make the soup. In a large pot, set over medium heat, cook the olive oil with the shallots, ginger, and red curry paste. Cook until fragrant, about 2 minutes. Stir in the coconut milk, broth, fish sauce, peanut butter, and a pinch of black pepper. Simmer over medium heat, 5-8 minutes. Stir in the broccoli or spinach, and the cilantro.4. Meanwhile, cook the noodles according to package directions. 5. Divide the noodles between bowls and ladle the soup over. Top each bowl with chickpeas, limes, and herbs.

How to make tomato soup from canned tomatoes, broth, &amp; onion – pureed in a blender until creamy! The easiest-ever tomato soup recipe that’s full of flavor, totally customizable, &amp; ready in 30 minutes.

3-Ingredient Tomato Soup from Canned Tomatoes

1½ Tbsp butter ((or oil))

yellow onion, rough chopped ((or ½ large onion))

oz canned crushed tomatoes ((or canned whole peeled tomatoes))

vegetable broth ((or chicken broth,

¼ tsp salt,

basil

basil leaves

croutons or pita chips

shaved parmesan

Melt butter (or heat oil) in a pot over medium-high heat. Add chopped onion and saute 4-5 minutes, until softened.

Add crushed tomatoes and broth, stirring to combine. If desired, season to taste with salt (depending on how salty your broth is).

Bring to a boil, then turn down the heat and simmer for 15-20 minutes. Allow to cool slightly before transferring to a blender.

Puree soup in a blender or with an immersion blender. (If desired, blend with fresh basil to make a tomato basil soup.) Be careful as to not burn yourself!

Serve with croutons, fresh basil, parmesan, or whatever you like!

Once soup cools completely, store in an airtight container in the fridge for 4-5 days or freeze for 3-4 months.

Yields~5 cups of homemade tomato soup.

First I’m sharing how to make tomato soup with canned tomatoes—which is way simpler (and often tastier!) than using fresh tomatoes. Just simmer those crushed tomatoes with sautéed onion and broth, then blend!

And I like to serve that easy, creamy tomato soup with my ULTIMATE 3-cheese grilled cheese sandwich: with cheddar, Gruyère, and Swiss cheese on brioche bread! Of course, you can use more or less of whatever cheeses you want to make YOUR ultimate grilled cheese.

3-Ingredient Tomato Soup + The Perfect Grilled Cheese

A delicious, simple twist on my favorite broccoli cheddar soup...even cozier and yummier than you can imagine!

Broccoli Cheddar Noodle Soup

extra virgin olive oil

salted butter

yellow onion, chopped

carrots

all-purpose flour all-purpose flour

broth

milk

broccoli florets

bay leaves

garlic powder

regular or smoked paprika

cayenne

nutmeg

kosher salt and black pepper

cheddar cheese

thyme

egg noodles

1. Melt the olive oil and butter together in a large soup pot set over medium heat. Add the onion and carrots and cook until softened, 5 minutes. Whisk in the flour and cook about 2 minutes, then gradually whisk in the broth, and then the milk. 2. Add the broccoli, bay leaves, garlic powder, paprika, cayenne, nutmeg, and season with salt and pepper. Bring to a simmer, reduce the heat to medium, and cook, uncovered, until the broccoli is tender, about 10 minutes. 3. Remove the soup from the stove. Remove and discard the bay leaves, then pour about half the soup into a blender or use an immersion blender. Return the soup to the stove and set over low heat. Stir in the cheese and thyme, cook until melted and creamy.4. Meanwhile, cook the noodles according to package directions. 5. To serve, add the noodles to serving bowls, then pour the soup over the noodles and top with a little extra cheddar and fresh thyme. Enjoy!

Easy Chinese-style chicken and sweetcorn soup, made from scratch, in less than 20 minutes. A quick family favourite!

Chicken and Sweetcorn Soup

sesame oil

garlic (peeled and minced)

stock

chicken breast

white pepper

cornflour (cornstarch in USA) (mixed with 6 tbsp water)

eggs

salt

spring onions (scallions chopped)

Heat the oil in a large saucepan over a low-medium heat.

Add the garlic and cook gently, whilst stirring, for 1 minute.

Add the chicken stock and diced chicken, turn up the heat and bring to the boil.

Simmer for 5 minutes

Give the sweetcorn a bit of a mush with the end of a rolling pin, so that it’s a bit mushed up, but around half the sweetcorn kernels are still whole.

Add the sweetcorn to the pan along with the white pepper and mix together.

Bring back to the boil and simmer for a further 5 minutes.

Slow stir in the cornflour slurry to thicken the soup slightly.

Whilst slowly stirring, add the whisked egg in a thin stream. It should feather out in the liquid as it cooks.

Have a taste of the soup and add in the salt if needed (it depends on the saltiness of your stock).

Divide between bowls and garnish with chopped spring onions before serving.

Chicken & Sweetcorn Soup Recipe

Traditional Chinese soup combining spicy and tangy flavors with mushrooms, tofu, and silky egg ribbons.

Hot and Sour Soup

chicken or vegetable broth.

mushrooms, sliced.

wood ear mushrooms, soaked.

rice vinegar.

red wine vinegar.

soy sauce.

chili garlic sauce.

sesame oil.

white pepper.

bamboo shoots.

firm tofu, cubed.

cornstarch.

water.

eggs, whisked.

green onions, sliced.

Crispy chow mein noodles for garnish.

Make Broth

Combine broth ingredients, boil 6-8 minutes.

Add Proteins

Thicken

Stir in cornstarch-water mixture, simmer 1-2 minutes.

Add Eggs

Stir soup slowly while pouring whisked eggs to create ribbons. Let set 1 minute.

Finish

Adjust spice level, garnish with green onions and noodles.
