Frenched Rack Of Lamb

Season the lamb racks with lemon juice and season with salt and pepper on both sides.

Rub the garlic all over them and sprinkle with rosemary.

Set the racks fat side up on a large rimmed baking sheet lined with foil if desired and let stand for 1 hour.

Preheat the oven to 450°F.

Roast the lamb in the upper third of the oven for about 25 minutes for medium-rare meat, or until a thermometer reaches 130F (or longer if you like your cooked medium or medium-well). Simply insert the tip of the thermometer through the side of the chops and into the thickest part of the meat, careful not to touch the bone (which is hotter than the meat that surrounds it).

When that spot reaches 130°F, it’s finished. The temperature will continue to rise an additional 5 degrees as the lamb rests.

Transfer the lamb racks to a carving board and let them rest, tented with foil for 10 minutes.

Carve the lamb in between the rib bones and transfer to plates.

Serve right away. Trim fat before eating*.

In the bowl of a small food processor fitted with a blade, add the garlic, olive oil, parsley, rosemary and red pepper flakes. Run the processor until the mixture is well-combined and everything is finely chopped.

Season the lamb all over with kosher salt and pepper.

Rub each rack of lamb all over with the marinade. Let the lamb marinate for 20 to 30 minutes at room temperature (or if you have the time, up to 1 hour).

Heat the oven to 450 degrees F and place a rack on the top 1/3 of the oven.

Arrange the lamb racks (fat side pointing up) on a sheetpan. Place the sheetpan on the top oven rack for 15 minutes. Carefully remove it from the oven and turn the rack of lamb on the other side. Return to the oven and cook for another 5 to 10 minutes depending on how you like your rack of lamb (rack of lamb is typically served rare or medium-rare, but you can also serve it medium).

Remove from the oven and tent with foil. Allow the lamb about 10 minutes to rest (the temperature will rise and the lamb will continue to cook some more).

Cut the lamb chops in between the bones and arrange on a platter to serve. (Add a side of Tzatziki sauce if you like).

Roast Rack of Lamb with Garlic Herb Marinade

For rack of lamb that's evenly medium-rare from edge to edge, sous vide cooking is by far the best approach.

Sous Vide Rack of Lamb Recipe

(8-bone) racks of lamb, about 2 pounds (900 grams) total

salt and black pepper

Aromatics, thyme garlic (optional)

(30 milliliters) vegetable, canola, or rice bran oil

unsalted butter

Preheat a sous vide cooker to desired final temperature according to chart above. Season lamb generously with salt and pepper. Place racks in two individual sous vide bags, along with herbs, garlic, and shallots (if using), and distribute evenly. Seal bags using a vacuum sealer, or seal plastic zipper-lock bags using the water displacement method. Place bags in preheated water bath for desired time according to chart above.

Remove lamb from bags and carefully pat dry with paper towels.

Turn on your vents and open your windows. Add vegetable, canola, or rice bran oil to a heavy cast iron or stainless steel skillet set over the hottest burner you have. Preheat skillet until it starts to smoke. Gently place lamb, meaty side down, in skillet, using your fingers or a set of tongs. (Work in batches if pan is not large enough to accommodate both racks.) Add 1 tablespoon butter per rack, along with fresh aromatics. Sear first side, moving rack around pan and basting it with hot melted butter and herbs, until well browned, 30 to 45 seconds. Flip and brown second side, about 30 seconds longer. Transfer to a wire rack set in a rimmed baking sheet to rest, then repeat with second rack if necessary, using fresh butter and aromatics.

Lamb can be immediately carved and served as directed in step 5. Alternatively, allow it to rest for up to 10 minutes while you set the table. To re-crisp, reheat pan drippings until smoking-hot, then pour them over resting lamb racks just before carving and serving.

Transfer cooked lamb to a cutting board. Carve it by holding rack upright (the bones make a good handle) and slicing down after every two rib bones with a sharp knife. You'll have to work your knife around a little bit to find the joint between the vertebrae as you reach the bottom. (Don't force your knife through a bone, or you may chip or dull it.) Serve immediately.

Marinate lamb: Mix marinade ingredients in a ziplock bag (Note 2). Place lamb in bag, massage to coat, then seal and marinate for at least 24 hours and up to 48 hours.

Remove lamb from fridge 1 hour prior to cooking, to ensure even cooking.

Wrap bones in foil (optional): Wrap each bone with a small piece of foil. This keeps the bones white and looks prettier.

Preheat oven: Preheat oven to 200°C/390°F (180°C fan).

Sear: Heat 1 tbsp oil in a cast iron skillet (or other oven-proof, heavy-based skillet) over high heat. Sear one lamb rack on all sides until golden brown, including the ends. Remove and repeat with other lamb rack.

Roast: Place both racks in the skillet and roast for 15 minutes, or until the internal temperature is 57°C/135°F (for medium-rare). Remove pan from oven.

Baste: Add butter, smashed garlic and rosemary to pan. The residual heat of the pan will melt the butter. Spoon the butter over the lamb continuously for 30 seconds.

Rest: Remove lamb from skillet and place on a rack set over a tray. Pour butter remaining in the skillet over lamb. Cover loosely with foil and rest for 5 minutes.

Carve and serve! Cut lamb into individual cutlets or several cutlets per slice. Serve with Salsa Verde!

Roasted rack of lamb is an elegant yet easy to prepare recipe. Tender lamb is served with a red wine mushroom sauce for a gourmet dinner made right at home.

Rack of Lamb with Mushroom Sauce

Adjust the oven rack to the center position and preheat to 350°F.

Remove any excess fat from the lamb, leaving a thin layer. Dry with paper towels. Season both sides generously with salt and pepper.

In a large 12-inch skillet heat oil over medium-high heat. Once the oil is hot add lamb fat-side down, cook until both sides are browned about 3 to 4 minutes per side. Sear the bottoms and sides for 30 to 60 seconds until browned, 8 to 10 minutes total for searing all sides.

Transfer skillet to the oven and roast lamb fat-side up, until the center of the meat reaches 120°F to 125°F for medium-rare about 10 to 20 minutes, and 130°F to 135°F for medium, about 20 to 30 minutes.

Allow meat to rest for 10 minutes before slicing. Meanwhile, make the red wine mushroom sauce.

Rack of Lamb

In a medium skillet heat oil over medium heat. Add garlic and onions, saute for 30 seconds.

Add mushrooms to the pan, saute until softened, 6 minutes.

Add wine and chicken stock to the pan, turn heat to high. Simmer until liquid is reduced to ¾ cups.

Turn off heat, whisk in butter and thyme. Taste sauce and season with salt and pepper as desired.

Serve lamb with mushroom sauce and pair with Zinfandel red wine.

Red Wine Mushroom Sauce

This Rack of Lamb with Herb Crust recipe is juicy, tender and delicious. Cooked in the oven to a perfect medium-rare and encrusted with parmesan cheese &amp; fresh herbs.

lamb (approximately 1¼ pounds, frenched)

Tablespoons extra-virgin olive oil (divided)

bread crumbs

Parmesan

rosemary (or 2 teaspoons dried)

Heat a large skillet over high heat. Drizzle lamb with 1 Tbsp. olive oil and season with salt and pepper. Sear until browned on all sides, about 3 minutes per side. Place on a rimmed baking sheet and let rest 20-30 minutes, until cool.

Preheat oven to 450-degrees.

Meanwhile, in a medium bowl, combine bread crumbs, Parmesan, rosemary, parsley and garlic. Stir in olive oil and season with salt and pepper. Pat the breadcrumbs over the lamb rack in an even layer.

Bake 20-30 minutes, to a temperature of 120-degrees for medium rare (the temperature will continue to rise to 125-degrees as the lamb sits). Let rest 10 minutes then slice between the bones into individual chops, allowing about two per person.

This Dijon herb crusted rack of lamb is an easy, crowd-pleasing, show-stopping dinner recipe! Succulent, juicy and full of flavor!

Dijon Herb Crusted Rack of Lamb

Trim the majority of the fat cap off the top of the lamb, then season on both sides with salt and pepper. Heat vegetable oil in a large skillet over high heat, then sear the lamb until browned on all sides.

In the meantime, combine breadcrumbs, lemon zest, mint, parsley, rosemary, salt, and pepper in a bowl. Drizzle olive oil over top, then mix until breadcrumbs are thoroughly coated.

Remove the lamb from the pan and set on a baking sheet. Spread the Dijon mustard over the top in an even coating, then press the breadcrumb mixture on top. Gently pat the breadcrumbs down so that they stick and form a crust.

Roast on the top rack of the oven until the lamb reaches an internal temperature of 130 degrees for medium-rare. If the breadcrumbs are not browned by the time the meat is done, you can broil it until golden. Be sure to watch closely, as it can easily burn.

Remove from the oven and allow to rest for 5-10 minutes. Carefully cut into double chops &#8211; you will lose some breadcrumbs in the process but that&#8217;s okay. Arrange on plates and top with any remaining breadcrumbs. Serve with mashed potatoes, vegetables, or other appropriate sides.

Rack of Lamb with Parmesan-Rosemary Crust

lamb ((frenched, about 1¼ pound))

olive oil ((divided))

Line a rimmed baking sheet with aluminum foil. Set aside.

In a heavy medium skillet over high heat, heat until very hot. Meanwhile, rub 1 tablespoon olive oil all over the lamb. Season with salt and pepper generously. Place the lamb in the skillet and sear all sides until golden brown, about 3 minutes per side. Transfer to a large plate or baking sheet (not the prepared one). Let it rest for 30 minutes.

Preheat the oven to 450˚F (230˚C).

Tear the bread into cubes, including the crust. Put them in a food processor, process until they turn into fine crumbs. It’s ok that some are finer and some are bigger. Measure ½ cup of crumbs and put in a medium bowl. Add parmesan, rosemary and garlic. Mix well.

Have the lamb rack sitting bone side down. Rub 1 tablespoon of olive oil on the top side. Pat the bread crumbs on the top in an even layer. Carefully transfer the lamb to the prepared baking sheet.

Roast in the oven until 120˚F (for medium-rare) in the center of the meat, about 25 – 35 minutes. Check the crust occasionally. If it starts to get too brown, cover the crust with a piece of aluminum foil. Remove the lamb from oven. Cover loosely with aluminum foil and rest until the internal temperature reaches 125˚F, about 10 minutes. Carve the lamb rack into chops and serve immediately.

Preheat oven to 450 degrees. In a roasting pan, add the red onion and apricots. Season with salt and pepper, and drizzle with olive oil. Roast in the oven for about 10 minutes just to get them going and set aside.

Clean the lamb and pat dry. Season thoroughly with salt and pepper. Heat a large heavy skillet over medium high heat until hot. Add a drizzle of olive oil to the pan and sear the rack of lamb on both sides. Combine all the spices and herbs in a small bowl and rub the mixture onto the seared lamb.

Transfer to a roasting pan and roast in the oven uncovered for about 12 minutes for medium rare. Remove from the oven, cover with foil, and allow the meat to rest for another 10 minutes before serving.

To make the lamb:

In a small saucepan over medium high heat, heat 2 tablespoons olive oil. Add the cumin and curry powder and fry for about 5 seconds. Then add the chickpeas along with a bit of salt.  Stir everything around to warm and crisp up the chickpeas, about 2 minutes. Set aside.

Toss the sliced onion with the flour until it’s all lightly coated. Heat the vegetable oil in a small saucepan. Test the oil temperature by tossing in a piece of onion. If it sizzles vigorously, it’s ready. Fry the onions in batches until crisp, about 2 minutes. Transfer to paper towel lined plate and sprinkle with salt. In a big bowl, toss together the cooked rice, parsley, cilantro, raisins, pistachios, chickpeas, crispy onions, and salt and pepper to taste.

To make the rice:

Stir together all the ingredients in a bowl.

To make the Cucumber Yogurt Sauce:

The marinade flavors the meat and gets crispy with the floral peppercorns slightly numbing your tongue and lips. This cilantro lamb sauce recipe is divine. 

Szechuan Lambypops with Cilantro Chimichurri

If your lamb bones came unfrenched remove the fat cap from the broad side of the lamb and the trim excess fat from in between and around the exposed boes using a boning knife.

Mix the oil, garlic, rosemary, kosher salt, and pepper in a bowl.

Coat each rack with the garlic mixture and then wrap in plastic wrap, place in an aluminum pan and marinate in the refrigerator for at least 2 hours, preferably overnight.

Light the smoker or set up the grill for indirect cooking with a smoker box and preheat to 225° F.
