Build a beautiful, everyday salad that is not only packed with nutrients but tastes amazing too!

Healthy Everyday Rainbow Salad

spinach

de-stemmed and finely chopped kale

raw grated beet (about 1 small beet)

red cabbage

carrot (about 1 small carrot)

peeled, chopped and roasted acorn squash

broccoli

sunflower seeds and pumpkin seeds

avocado,

kelp flakes

water

big chunk of peeled, fresh ginger

tbsp tahini

tbsp maple syrup

tbsp miso paste

tbsp apple cider vinegar

soy sauce (or gluten-free tamari)

To make the salad dressing, blend all ingredients until smooth. If desired, add more water to adjust consistency. Season with salt and pepper, if desired.

To assemble the salad, add everything to a bowl and top with the dressing.

Rainbow Quinoa Salad with Lemon Dressing

lemon juice

olive oil

salt

black pepper (to taste)

cooked quinoa (from about 1 1/3 cups)

brussels sprouts

carrots

yellow bell peppers

mini cucumbers

cherry tomatoes

Combine lemon juice, olive oil, salt and pepper in a small bowl and whisk well.

Add one cup quinoa in each bowl. Top with 1/4 cup of each of the vegetables in rainbow order starting with purple, ending in red.

Pour the dressing over the salad, adjust salt and pepper, as needed.

A light and colorful rainbow salad with purple cabbage, cucumbers, peppers, tomatoes, mushrooms, olive oil and lemon. Easy, flavorful, vegan.

small red cabbage, (shredded in small pieces)

tomatoes, (diced)

yellow bell pepper, (seeded and diced)

persian cucumbers, (diced small with skin on)

white button mushrooms, (sliced)

Kalamata olives, (pitted)

extra virgin olive oil

sea salt, (or more to taste)

Combine all vegetables in a large mixing bowl and mix well.In a small mixing bowl, combine lemon juice, olive oil and salt. Pour over the chopped vegetables and toss to coat. Serve.
