Thanks to a light lemony dressing and lots of fresh herbs, this simple raw cauliflower salad recipe tastes surprisingly delicious and lasts in the fridge for days. The pickled onions are an optional ingredient, but they do take the salad to the next level. Here&#8217;s our recipe for pickled onions, so you can see how simple they are to make. Herby Cauliflower Salad with Chickpeas

fine sea salt,

lemon

extra virgin olive oil

red pepper flakes, optional for some heat

I added a cup full of salted spanish peanuts.  I love the combination!

Just made this and ate some!  So good!  Wish I could find salad like THIS. Instead of pickled onions I added chopped of raw papaya from a leftover papaya salad (from last nights thai order). It was already pickled in their sauces and was perfect!  I packed the rest for work meal prep

I’ve made this twice and LOVE it. I’ve been adding pickled jalapeños (chopped) to it as well. At first I thought it was too much lemon but after it sits, it actually subsided and could’ve used more.

So yummy!!!! Started weight watchers recently and am looking for vegetable and salad recipes. This one is so yummy, used a can of mixed beans and a mix of parsley and dill.  Filling and delicious!

Simple and bright cauliflower salad, prepared Mediterranean-style with chopped veggies, garlic, and a zippy dressing of fresh lemon juice and extra virgin olive oil. This is a great way to gluten free tabouli!

Mediterranean Cauliflower Salad

cauliflower

parsley (stems partially removed)

Roma tomatoes (very small diced or chopped)

English cucumber (hot house cucumber, chopped)

red onion (finely chopped)

garlic

Kosher salt and pepper

lemons

Extra virgin olive oil

Place the cauliflower florets in the bowl of a food processor fitted with a blade. Pulse a few times until the cauliflower turns rice-like in texture.

Transfer the finely chopped cauliflower into a larger bowl. Add the parsley, tomatoes, cucumbers, and onions. Give the salad a quick toss to combine.

Now, add the minced garlic and season with salt and pepper. Finish with fresh lemon juice and a good drizzle of extra virgin olive oil (about 2 tbsp). Give the salad one more good toss to combine.

For best results, set the cauliflower salad aside for a few minutes before serving to allow the cauliflower to soften and absorb some of the dressing. You can also cover and chill for later. Enjoy!

Mediterranean Tabouli Style Cauliflower Salad

This vibrant cauliflower salad is packed with crisp cucumbers, sweet peas, fresh herbs, and tossed in a creamy garlic yogurt dressing that gets even more flavorful as it marinates.

 Cauliflower Salad Recipe

peas

cauliflower,

cucumbers,

radishes,

salt

Italian parsley, chopped

mint

Greek yogurt (plain, full fat)

lemon juice

olive oil

honey (or other sweetener)

garlic, finely minced

Optional garnish: more herbs, Aleppo chili flakes, microgreens

Prep the veggies

Slice the cauliflower, cucumbers, and radishes. A mandolin makes this easy.  Place in a large bowl and toss with salt.

Make the yogurt dressing

In a small bowl, whisk together yogurt, lemon juice, olive oil, salt, pepper, honey, and garlic.

Combine

Drain any liquid from the bowl, add the peas, fresh chopped herbs, and green onions to the cauliflower mixture. Fold in the yogurt dressing and toss to combine.

Season and garnish

Add more salt or lemon if needed. Top with more herbs, Aleppo flakes, and fresh ground pepper.

I could not wait to make this again this year.

I absolutely loved this salad, so fresh!
As I was using up ingredients already to hand, I subbed frozen peas and broad beans for the fresh peas and parsley for the mint.
We had it as a side for one meal with sumac roasted beetroot and chickpeas and for lunch the next day with pitta.
I was pleased to have a little left for a lunch side.
Definitely planning to use this again. Would be great at a bbq.

Over 10 yrs later of reading and making a ton of Sylvia’s recipes and this still is one of my all time favorites. Refreshing and delightful.
