Herby Cauliflower Salad with Chickpeas

fine sea salt,

black pepper

lemon

extra virgin olive oil

red pepper flakes, optional for some heat

I added a cup full of salted spanish peanuts.  I love the combination!

Just made this and ate some!  So good!  Wish I could find salad like THIS. Instead of pickled onions I added chopped of raw papaya from a leftover papaya salad (from last nights thai order). It was already pickled in their sauces and was perfect!  I packed the rest for work meal prep

I’ve made this twice and LOVE it. I’ve been adding pickled jalapeños (chopped) to it as well. At first I thought it was too much lemon but after it sits, it actually subsided and could’ve used more.

So yummy!!!! Started weight watchers recently and am looking for vegetable and salad recipes. This one is so yummy, used a can of mixed beans and a mix of parsley and dill.  Filling and delicious!

Simple and bright cauliflower salad, prepared Mediterranean-style with chopped veggies, garlic, and a zippy dressing of fresh lemon juice and extra virgin olive oil. This is a great way to gluten free tabouli!

Mediterranean Cauliflower Salad

cauliflower

parsley (stems partially removed)

Roma tomatoes (very small diced or chopped)

English cucumber (hot house cucumber, chopped)

red onion (finely chopped)

garlic

Kosher salt and pepper

lemons

Extra virgin olive oil

Place the cauliflower florets in the bowl of a food processor fitted with a blade. Pulse a few times until the cauliflower turns rice-like in texture.

Transfer the finely chopped cauliflower into a larger bowl. Add the parsley, tomatoes, cucumbers, and onions. Give the salad a quick toss to combine.

Now, add the minced garlic and season with salt and pepper. Finish with fresh lemon juice and a good drizzle of extra virgin olive oil (about 2 tbsp). Give the salad one more good toss to combine.

For best results, set the cauliflower salad aside for a few minutes before serving to allow the cauliflower to soften and absorb some of the dressing. You can also cover and chill for later. Enjoy!
