red beans

Hungarian gulyas (goulash) is the inspiration here, but this one is a vegetable dish. It has a deep, rich flavor redolent of paprika, garlic, lots of sweet peppers and onions. I like to serve this with noodles, or over thick slices of country bread. Note that soaking the beans is not absolutely necessary, but I find that they cook more evenly and have a more uniform, pillowy texture if I do.

Red Bean Stew

extra virgin olive oil

medium or large onion, chopped

Drain the beans through a strainer set over a bowl. Place the beans in a large soup pot or Dutch oven. Measure the soaking water in the bowl, and add enough water to it to measure 2 1/2 quarts. Add this to the pot with the beans, turn the heat to medium-high and bring to a gentle boil. Skim off any foam and/or bean skins.

Meanwhile, heat 1 tablespoon of the oil over medium heat in a large, heavy skillet and add the onions, carrots and peppers. Cook, stirring often, until the vegetables are tender and fragrant, about 8 to 10 minutes. Add 2 of the garlic cloves and continue to cook for another minute or so, until the garlic is fragrant. Season to taste with salt, add another tablespoon of oil and add the paprika. Cook, stirring, for a couple of minutes, until the vegetables are well coated with paprika and the mixture is aromatic. Add a ladleful of simmering water from the beans to the pan, stir with a wooden spoon or heatproof spatula, scraping the bottom and sides of the pan to deglaze, then stir this mixture into the beans. Add the tomato paste and bay leaf, reduce the heat, cover and simmer 1 hour.

Add the oregano, the remaining garlic cloves, salt to taste, cayenne, vinegar and sugar, and continue to simmer for another hour. The beans should be thoroughly tender and the broth thick and fragrant. Taste and adjust salt, and add more cayenne if desired. For a thicker stew, strain out 1 heaped cup of beans with a little liquid and purée. Stir back into the stew.

Just before serving, stir in the parsley. Serve over noodles or thick slices of country bread, topping each portion with a large dollop of drained yogurt.

In an extra-large stockpot, add red kidney beans. Fill water to top then cover with foil. Let beans soak at least 12 hours or more. I soak them overnight or about 14 hours. 

Drain water from beans. In a large stockpot, combine beans, bay leaves, and 8-10 cups water. Bring to boil; 30 minutes. Stir occasionally.

In a separate saucepan, add diced andouille sausage, celery, green pepper, and diced onions. Brown over medium heat, stirring occasionally, about 4 minutes. Add in garlic and ham. Cook 2 minutes. Add mixture to red beans pot.

Reduce heat to medium-low and simmer(I usually set the heat to level 3 or 4), uncovered, about 2 hours, stirring occasionally. Beans should thicken in the pot.

With 30 minutes remaining, add in Creole Seasonings and dried parsley. Add more or less, according to taste preference. Continue to cook until the beans are tender and creamy. TIP: The texture should not be soupy or watery. If it is, simply keep cooking until the mixture is very thick and almost paste-like.

Remove from the heat. Remove bay leaves. 

Serve with cooked rice. Spoon beans into a dish. Add chopped green onions. Add several dashes of hot sauce. Serve with rice in the same bowl.

These creamy Dominican beans, flavored with garlic, onion, cubanelle pepper, and adobo seasoning, cooked in the Instant Pot or pressure cooker, make the perfect vegetarian side or meatless main dish.

Put beans in the pressure cooker or Instant Pot and cover them with water so there’s 2 inches over them (10 cups).

Soak overnight, but don’t drain.

Next day, cover and seal the pressure cooker (or Instant Pot) over medium heat, when the pot comes to pressure cook high pressure 20 minutes. Natural release.

While the pressure releases, in a large skillet, heat oil over medium-low heat and add garlic, tomato paste, cilantro, red onion, pepper, bouillon cube and saute about 10 minutes, stirring.

Open the pressure cooker when the steam releases, take 25% of the beans and liquid and transfer to the blender. Puree well then return to the pot.

Add adobo seasoning and salt (about 1 teaspoon), or to taste. 

Add the sauteed vegetables to the beans and bring to a boil over medium heat. (In the Instant Pot use the saute button.)

Boil uncovered over medium-low heat until the texture becomes creamy and the liquid reduces, about 30 minutes stirring often. 

Remove cilantro, pepper and onion and serve over rice. Makes 9 cups.

Dominican Beans (Habichuelas Guisadas)

The Instant Pot makes soaking beans so quick and easy. The next time you can't wait to soak beans over night, try this method.

Power Soaking Red Kidney Beans

beans

Measure one lbs of dry red kidney beans (approx. 2 ⅔ cups).

Remove any bad beans and rinse thoroughly.

Add the beans to the pot, then add the water. Remove any floating beans.

Add the salt, baking soda, and olive oil. Thoroughly, stir the ingredients in the pot.

Close the pot, set the pressure release valve to "Sealing" and set the pot to the "Manual" or "Pressure Cook" function for 0 minutes.

Once cooking has completed, allow the pot to do a full Natural Pressure Release "NPR". This will take approximately 45 minutes.

Once the NPR has completed and the pin has dropped, open the pot.

You may either rinse the cooked beans in a strainer or use the beans with the remaining liquid broth in the pot for your recipe. The amount of bean broth remaining in the pot can vary between 2 ½ to 3 cups. If using the broth, substitute for an equal amount of water and adjust the salt in your recipe accordingly.

Habichuelas Guisadas Recipe (Stewed Red Beans): part of La Bandera Dominicana (dominican traditional lunch), it lies between stew and sauce for rice.

Soak the beans overnight.

Remove the beans from the soaking water and boil in fresh water until they are very soft (may take up to an hour, or about 20 minutes in a pressure cooker.

If you are using dry beans

Separate the beans from the boiling water. Set both aside.

In a pot heat the oil over medium heat. Add oregano, bell pepper, onion, garlic, auyama, tomato sauce, celery, thyme and cilantro. Cook and stir for half a minute. Add the beans and simmer for two minutes.

Pour in 4 cups of the water in which the beans boiled (complete with fresh water if necessary). Once it reaches a rolling boil, lightly mashed the beans with a potato masher to break them out of the skin and making creamier habichuelas. Cook until it reaches a creamy consistency.

Remove the chunks of onion, as well as any stray twigs or large bits of herbs if you used fresh herbs. Season with salt to taste.

Serve with the other components of La Bandera Dominicana.

Red Beans and Rice Recipe (Better Than Popeyes!)

Prep your veggies: chop the onion, bell pepper, and 2 stalks celery. I like to chop the ends of the celery (so that some of the leaves get chopped also) instead of pulling off the stalks. Whichever way you choose will work!

Heat the oil in a large pot over medium high heat. Once it is hot and shimmering, add the chopped onion, bell pepper, and celery. Saute for 6-8 minutes, until the onions start to become translucent.

Mince 2 tablespoons garlic. In a small bowl, combine 1 and 1/2 teaspoons kosher salt, 1/2 teaspoon cayenne pepper, 1 teaspoon thyme, 3/4 teaspoon sage, 1 tablespoon parsley, 1 teaspoon Cajun seasoning, and 1 tablespoon sugar.

Add the garlic and spices to the pot and saute for 1-2 minutes, until fragrant.

Add 1 teaspoon Better That Bouillon Chicken Base.&nbsp;

Add about 7 cups of water and 1 pound of rinsed red beans. Add the ham bone or ham hock. Add 2 bay leaves.

Stir it all together over high heat until it comes to a boil. Turn the heat down to a low simmer, so that it is just barely bubbling. 

Cover with a lid and keep it at a low simmer for 2 and 1/2 to 3 hours. About halfway through the cooktime, either remove the lid or tilt it so that the beans can vent.&nbsp;

After 2-3 hours, taste the beans. They should be tender and flavorful. If they are at all dry or chalky, keep cooking.&nbsp;

Add another half teaspoon or so of salt, or to taste. Add more Cajun seasoning to taste. 

Remove the ham bone and bay leaves. Chop any meat left on the bone and return the meat to the beans. Discard the bone.&nbsp;

Add 2 tablespoons of cooking oil to a medium-sized heavy-bottomed pot over medium-high heat. Once it has warmed, add the salt pork and sazón. Fry until the fat has rendered and the salt pork is golden, about 4 minutes.

Lower the heat to medium and add the onion. Cook for 2 minutes, then add the garlic. Cook for 1 minute until fragrant.

Add the tomato sauce, sofrito, chicken bouillon, and vinegar. Cook for 5 minutes over medium heat, reducing the sauce and developing the flavors.

Add the green bell pepper and the sweet potato. Cook for five minutes.

Add the beans and enough water to cover them. Stir and taste the broth. Add salt to taste.

Cook uncovered over medium heat for 20 minutes until the sweet potato has softened. If halfway through the cook, the liquid in the beans reduces too much, add 1/4 cup of water.

For the rice, set a heavy-bottomed pot over medium heat and add 2 tablespoons of oil. When the oil has warmed, add the rice, mix it into the oil and let it toast for a minute. Next, add the boiling water and 2 teaspoons of salt to the rice and stir.

Cook uncovered until the water begins to evaporate and you see little steam holes form over the surface of the rice, about 5 minutes. Stir the rice once, reduce the heat to low, and cover the pot tightly with a heavy lid, so steam does not escape.

Cook the rice without stirring until the grains are tender, about 15 to 20 minutes. After you portion out the rice, scrape up the crispy bits on the bottom of the pot to serve on top of your rice.

Authentic Cajun Red Beans are the Monday supper tradition in Louisiana. These Red beans keep extremely well and taste just as good a couple of days later.

Authentic Cajun Red Beans

Sort and rinse the red beans. Cover the beans with cold water about 2 inches above the red beans. Let the beans soak overnight. Drain and rinse the beans under cold water before cooking them. (This does not include water listed in the recipe)

Place the ham hocks, 9 cups of water, celery, yellow onions, green bell peppers, bay leaves, and seasonings in a 6-quart sizeable Dutch oven; stir the mixture well. Cover the Dutch Oven with a tight-fitting lid and bring to a full boil over high heat. Remove the cover, reduce the heat, and simmer for 1 hour, stirring occasionally.

Remove the ham hocks from the Dutch Oven and set them to the side. (Shred the ham hocks while waiting) Do not discard the water in the Dutch Oven

Add the drained and rinsed beans and about 4 more cups of the water to the Dutch Oven; bring to a boil, reduce heat, and simmer 30 minutes, stirring occasionally.

Next, add two more cups of water and simmer for 30 minutes, stirring often. Add the sliced andouille sausage and continue simmering for about 25-35 minutes, Stirring the bottom of the Dutch oven to ensure the beans do not stick.

Add the shredded ham hocks to the Dutch Oven and cook and stir for 10 minutes more.

Serve over long-grain rice and add hot sauce and green scallions for a little more kick.
