This is not strictly speaking a tagine recipe, as the term really refers to the cooking pot. This red cabbage and preserved lemon tagine recipe makes a lovely Middle Eastern side dish.

Red cabbage and preserved lemon tagine

olive oil

garlic cloves, peeled but whole

cinnamon

tbsp sultanas

tbsp wine vinegar

brown sugar

Preheat the oven to 180°C/ fan 160°C/gas 4. Heat the olive oil in a flameproof casserole with a lid over a medium heat. Fry the garlic, cloves and cinnamon quite briskly, until the garlic starts to brown. Add the cumin and onion and stir to coat in the spicy oil. Add the cabbage and stir again.

Halve the lemons, then discard all the soggy bits inside. Slice the skin thinly and add to the cabbage. Add the sultanas, vinegar, sugar and stock or water and stir well again. Cover and put in the oven for 50 minutes, until the cabbage has softened.

Remove from the oven and rest, covered, for another 30 minutes. Discard the cinnamon and serve with chopped fresh coriander, if you like.

Add the the cinnamon, ground allspice and freshly grated nutmeg and cook for a couple of minutes before tumbling in the shredded cabbage and diced apples. Pour in the cranberry or apple juice, light brown sugar, pomegranate molasses or red wine vinegar and dried cranberries.

Stir well, cover with a lid and simmer on a very low heat for about 2-2 1/2 -3 hours - stirring every now and then to make sure the cabbage isn't sticking to the bottom of the pot, adding a little more cranberry/apple juice if needed.

Cut the cabbage, shredding  into thin, 1/8&quot;-1/4” thick slices. Put half the shredded cabbage into a medium sized heavy pot.

Grate one-half of the apple on top of the cabbage in the pot. Poke the whole cloves into the other half of the apple and add to the pot.

Add the remaining shredded cabbage on top. In a small bowl add vinegar, water, sugar, salt and pepper. Stir to combine. Pour over cabbage.

Add 2 Tablespoons butter and cover the pot with a lid. Bring to boil, reduce heat to simmer, and cook 1 1/2 - 2 hours.

Remove apple with cloves and discard. Stir mixture and serve.

This German Braised Red Cabbage is an easy side dish that pairs well with almost any entree!

Braised Red Cabbage

red cabbage, thinly sliced

Granny Smith apples, sliced (peel on)

bacon grease (or sub with butter)

cider vinegar

Salt and pepper,

Saute the cabbage, onion and apple in the bacon grease until soft, about 15-20 minutes.

Stir in remaining ingredients; cover and braise until very soft (about 15-20 more minutes). Taste and season with salt and pepper, if necessary. Serve warm or at room temperature.

Tasty - and super easy with only 7 simple ingredients! Chock full of flavor with goat cheese, toasted walnuts, and balsamic vinegar.

Roasted Red Cabbage Recipe

tsp kosher salt

goat cheese crumbles

walnuts (chopped and toasted)

tbsp balsamic vinegar

thyme

Preheat oven to 425 degrees. Lay foil on a baking sheet and spray lightly with nonstick spray.

Slice the cabbage in half, then slice the half into 4 wedges.

Drizzle with half of the olive oil, then sprinkle half of the salt, pepper. Roast in the oven for 15 minutes.

Remove from oven, flip cabbage wedges over and drizzle with remaining olive oil and seasoning. Place back in the oven and roast for another 15 minutes or until the cabbage is tender.

Remove from oven, and place wedges on a platter. Sprinkle goat cheese, walnuts, and thyme over the top. Drizzle with balsamic vinegar and serve.

Season with additional salt, pepper, and vinegar to taste! Enjoy!

A simple, comforting side dish that goes particularly well with pork.&nbsp;

German red cabbage with apples (Rotkohl)

apple (or 1/2 large)

tbsp butter (or vegetable oil, as you have/prefer)

(or 1/4 tsp ground cloves)

tbsp red wine vinegar

orange juice (or you can use apple cider/cloudy apple juice)

Dice the onion in a small dice (or you can slice, if you prefer), shred the cabbage relatively finely and peel and grate the apple. 

Warm the oil or butter in a pan and add the onion. Cook for a couple minutes until it softens. Add the cabbage, part at a time as needed to help it wilt down a little to create more space, and cook for a couple minutes so it starts to soften, stirring now and then to coat with the butter/oil.  

Add the vinegar, cloves and orange juice and mix. Add the apple and mix in well then cover. Reduce the heat and allow it to steam/sweat for around 30 minutes until tender, stirring now and then to make sure it doesn&#39;t burn on the bottom. If it gets too dry, add a little water or extra juice.

Remove the cloves, if using whole cloves, and serve.

A couple of juniper berries worked great to add flavor and counter the vinegar. I ate it with German brats and mustard, which neutralized the vinegar.

Excellent recipe! I made this for the family instead of green cabbage to go with corned beef brisket and potatoes. It was delicious! Soft, tender and sweet.
