Preheat oven to 400° F.

In a large bowl, stir all ingredients together with a spatula. Transfer mixture to a serving dish that can be placed in the oven (a large pie pan works great!). Bake for about 20 to 30 minutes, or until dip is bubbling and nicely browned.

½ cups deli corned beef (chopped (about 6 ounces))

Preheat oven to 375°F.

Beat cream cheese, sour cream and dressing with a mixer on medium until fluffy.

Add remaining ingredients and gently stir until combined.

Spread into a 2 qt baking dish.

Combine topping ingredients in a small bowl.  Sprinkle over the dip.

Bake 18-22 minutes, or until hot and breadcrumbs are golden brown.

This cheesy, tangy spread might be even better than the actual sandwich.

(8-oz.) block cream cheese,

c. Russian (or Thousand Island) dressing

c. shredded Swiss cheese, divided

c. chopped corned beef, divided

c. sauerkraut, drained

Preheat oven to 350°. In a medium bowl, stir together cream cheese and Russian dressing until combined, then fold in 1 cup of Swiss, almost all the corned beef, and sauerkraut and season with pepper.

Transfer dip to a small baking dish and top with remaining 1/4 cup Swiss and corned beef. Bake until golden and bubbly, 18 to 20 minutes.

Garnish with parsley and serve with bagel chips.

Transfer the corned beef mixture to a 4 quart or larger slow cooker bowl.

Cook on LOW heat for 2 hours or until the cheese has melted and the dip is hot and bubbling.

Garnish with sliced green onion or parsley if desired. Serve with rye chips, crackers or bread. Enjoy!
