Copycat Cheddar Broccoli Rice-a-Roni is almost as easy to make as the stuff in a box but tastes so much better.

Cheddar Broccoli Homemade Rice a Roni

olive oil

white rice

orzo pasta

vegetable broth

unsalted butter

broccoli

cheddar

salt

black pepper

Heat the olive oil in a saucepan over medium heat. Add the rice and orzo, and stir to coat. Cook, stirring often, until the orzo turns golden brown, and the rice turns translucent.

Pour the broth in, bring to a boil, turn heat to low, and cover. Cook, covered, for 10 - 15 minutes or until most of the liquid is absorbed. Add the broccoli and cook for an additional 3 minutes.

Remove from the heat and add the butter, cheddar, salt, and pepper. Stir until well incorporated. Cover and let sit for 5 minutes. Serve and enjoy!

Good recipe but I used unsalted stock and it was way under salted &amp; my son said it needed more cheese.   Otherwise it was easy and and better than the boxed.

Ridiculously good. Added a spoonful of chicken base, some chopped garlic, and used arborio rice instead of white rice to give it more of a risotto feel. So good!

I tried it! It came out great and really tasty! was easy and for two people wasn't too large an amount.

Used the 10 min jasmine rice. I used butter instead of oil. Broccoli needs to be put in when there is still broth to help it cook more. Very tasty!!

I grew up on Rice-A-Roni and the broccoli au gratin was my favorite! So this recipe got me excited that I could make it from scratch rather than from a box. This really does taste very similar to the boxed stuff! I’m not vegetarian so I used chicken broth instead of veggie, added the broccoli in after sautéing the rice and pasta (which really enhances the broccoli flavor) and swapped out half the sharpe cheddar for mild. This homemade rice-a-roni is a blend of rice and pasta cooked in butter, chicken broth and seasonings until light and fluffy. An easy side dish that tastes WAY better than the store bought kind!

Homemade Rice-A-Roni

butter

spaghetti

chicken broth

garlic powder

onion powder

pepper

parsley

tomatoes (optional)

Melt the butter in a large pan over medium heat.

Add the pasta to the pan and cook until browned, about 3-5 minutes.

Add the rice to the pan and cook for 1 more minute.

Add the chicken broth, salt, garlic powder, onion powder and pepper to the pan.

Bring the mixture to a simmer. Cover the pan and turn the heat to low.

Cook for approximately 15 minutes or until all the liquid is absorbed. Fluff with a fork and sprinkle with parsley.

Stir in tomatoes if using, then serve.

Love this recipe. And it honestly is not much harder or time consuming than rice a roni. I always saute onion, celery, and carrots in the butter first and add diced cooked chicken or even ham right before covering and simmering. Comes out great every time.

Delicious!!!  Daughter is eating her 3rd bowl of it right now!  I followed the recipe.  Used angel hair pasta and in addition to the butter used a little red palm oil for color.  This recipe is a major keeper!!!

Have made numerous times. It is a requested family favorite, made just the way written, no changes.

The burning question here is exactly how does one break vermicelli into 1/2" pieces? I could buy video, use the vermicelli wrapped in a kitchen towel method...but 1/2"? Please advise so that we can enjoy your recipe.

I used Basmati rice and no tomatoes, but I needed an extra 1/2 cup of liquid to cook the rice all the way. I also used fideo pasta. Super delicious.

Homemade Rice a Roni Recipe

almonds

vermicelli noodles

basmati rice (see Notes)

onion

turmeric

chicken broth (or chicken stock, warmed)

Add the almonds and ghee to a small skillet over medium heat. Cook until the nuts are light golden and smell toasted, about 3 minutes, stirring frequently. Remove from the heat and transfer the almonds to a bowl. Set aside.

For the Buttery Toasted Almond Topping:

Add the oil and butter to a 3-quart saucepan over medium heat. Once the butter is melted, add the vermicelli noodles and cook until lightly toasted, about 2 to 3 minutes, stirring occasionally.

Stir in the rice and cook until it starts to smell fragrant, about 1 minute, being careful not to overcook so the noodles don’t burn.

Add the minced dried onion, salt, garlic powder, turmeric, black pepper, and chicken broth, and stir to combine.

Bring it up to a boil, and then cover the saucepan, turn the heat down as low as it will go, and cook until the liquid is absorbed, about 15 to 20 minutes. If the rice has absorbed all the liquid but isn’t tender, add a splash more hot chicken broth or water.

Once cooked, remove from the heat and let the rice sit for 10 minutes with the lid on. After that, fluff it with a fork.

Transfer the rice to a serving dish. Sprinkle on the parsley and buttery toasted almonds (if using). Serve.

I grew up loving Rice a Roni whenever my mom made it. She always paired truth Shake N Bake pork chops &amp; it was heavenly! Now I’m craving those too (lol)! Do you have a recipe for the pork flavored seasoning also? I can’t wait to make this for my family! I rarely cook anything processed in a box or from the frozen section.

Just made this again, for the third time! It's truly great as is, but this time,  I had some left over peas and carrots in the freezer, some tri-color frozen bell peppers, some diced ham,   and some scallions.  I added them all and it was a great compliment to your original recipe! Thanks for posting!
