Horchata is a sweet, non-alcoholic Mexican beverage made from water, rice and cinnamon. My tasty version has a few ingredients that other recipes lack. Prep time does not include 3 hours soaking (best if overnight). Recipe video included.

Horchata Recipe (Oxarta)

water

white rice

cinnamon sticks (3-inch sticks) ((See Note 1))

almonds

milk

oz sweetened condensed milk

vanilla

tsp salt

cloves

In a bowl add the water, rice, cinnamon sticks and almonds to soak for 3 hours minimum or overnight, covered, at room temperature.

After the rice has soaked, transfer to a blender and remove 1 cinnamon stick (discard). Add the milk, sweetened condensed milk, vanilla, salt and ground cloves (optional).

Purée rice almond mixture until smooth for maximum flavor and a thicker consistency. Then strain and discard solids twice and chill.

When ready to serve, stir well (See Note 2) and pour over ice in glasses rimmed with cinnamon sugar (optional).

How To Make Horchata

It’s so easy and cheap to make your own Horchata! I wrote that it takes 24 hours to make because I really love it to be extra milky and the longer it sits, the milky-er it becomes. Try it!

Mexican Horchata

long-grain white or brown rice (uncooked)

cinnamon

plant-based milk (any variety)

sugar

vanilla extract

Pour rice, water, and cinnamon into a blender and blend it until the rice is broken up and the water looks milky, let it sit overnight in the refrigerator. 

Using cheesecloth or a fine-mesh strainer over a pitcher to remove the rice, pour the rice milk into a pitcher. 

Add the plant-based milk, sugar, and vanilla extract,  mix well and enjoy it poured into a glass of ice.

2 MEXICAN HORCHATA

Atole de arroz is a delicious Mexican drink made from tender rice, warming cinnamon, and creamy milk. You only need 4 ingredients and 20 minutes!

Atole de Arroz (Only 4 Ingredients)

soy milk

cane sugar

In a large pot, combine the water and cinnamon stick. Bring to a simmer with the lid on for a few minutes. In the meantime, rinse the rice until the water runs clear.

Add the rice to the pot of water and bring the mixture to a low boil. Turn the heat down to low and simmer with the lid on for 10-12 minutes, or until the rice is tender and the water has mostly absorbed.

Remove &frac12; - &frac34; of the rice (depending on your texture preference) and add it to a blender. Add the soy milk and sugar to the pot with the rest of the rice.

Ladle some liquid out to help mix the rice in the blender. Combine until smooth, then transfer the mixture back to the pot.

Simmer for an additional 8-10 minutes, stirring frequently. Taste and adjust the sugar to your preferred sweetness.

Serve your atole while warm with a sprinkle of cinnamon or berries on top. Serve on its own or with your favorite pastry. Happy drinking!
