Rice Krispie Sugar Cookies

unsalted butter (, at room temperature)

sugar

salt

vanilla extract

baking soda

all-purpose flour

Rice Krispies cereal

Preheat.

Preheat oven to 300°F. Line two large baking sheets with parchment paper; set aside.

Mix.

In a large mixing bowl, beat the butter and sugar until light and fluffy. Combine the vanilla with the baking soda and add to the butter/sugar mixture. Stir in the flour 1 cup at a time. Gently stire in the Rice Krispies. Do not over mix.

Bake.

Scoop 2-tablepoon sized mounds onto prepared baking sheets, making sure to space them at least 2 inches apart. Bake 15 minutes. Remove from oven and quickly but gently flatten with a spatula. Return to oven (rotating pans front to back, top to bottom) and bake an additional 25 minutes, until lightly golden and cracked on top.

Cool.

Remove from oven and let cool on baking sheet 8 minutes before transferring to wire rack to cool completely.

Preheat and Prep

Preheat oven to 375°F. Line a baking sheet with parchment paper or spray with nonstick spray.

Cream Butter and Sugars

Add butter, brown sugar, and granulated sugar to the bowl of a stand mixer, or a large mixing bowl if you&#8217;re using an electric mixer. Cream together on medium speed for 2-3 minutes.

Add Wet Ingredients

Add egg, vanilla, baking powder, baking soda, and salt to the creamed butter and mix until incorporated. Scrape down the bowl if needed.

Add Dry Ingredients

Add flour and shredded coconut to the cookie dough. Mix only until the flour mixture is combined, being careful not to overmix.

Add Cereal and Chocolate Chips

Stir in Rice Krispies and chocolate chips until they&#8217;re mixed in. Be gentle so the Rice Krispies don&#8217;t get smashed.

Scoop Cookies

Scoop cookies using a two-tablespoon-sized cookie scoop, or medium cookie scoop, and set them on the prepared baking sheet.

Bake

Bake cookies in the preheated oven for 8-10 minutes. Be careful not to overbake the cookies. They should be golden brown and a little underset in the middle. Leave the cookies on the baking sheet for 2-3 minutes after removing them from the oven. They&#8217;ll continue to bake while on the cookie sheet. Remove to a wire cooling rack to cool completely.

Scoop the dough into large balls, I like to use the ¼ cup cookie or ice cream scoop. Top cookie dough with a few more pieces of chocolate and some flaked salt.

Bake the cookies for 11-13 minutes. Sprinkle with a little extra salt if desired.

These cookies are soooo good and addicting. Added to my bookmarks because I’ll definitely be making them again! I was surprised at what a dry dough it was but they turned out very tasty and chewy and crispy. Highly recommend!
