Kids Will Freak Out Over This Fruity Pebbles Sushi

As fun to say as they are to eat – these yummy Scotcheroos are packed with peanut butter, marshmallows, chocolate, and butterscotch, an easy crispy cereal treat that you won&#039;t be able to get enough of! 

Scotcheroos

marshmallows (divided)

peanut butter

vanilla

salt

rice crisp cereal

milk chocolate chips

buttersctoch chips

Line a 9x13 inch pan with foil or parchment and preheat oven to 350 while you move on to next step.

In a large pot over medium heat, melt butter.

Reserve 2 cups of marshmallows and set aside. Stir remaining marshmallows into the pot.

Add peanut butter and stir until marshmallows are completely melted and mixture is smooth.

Stir in vanilla and salt, then stir in reserved marshmallows for 1 minute until semi-melted. Stir in cereal.

Spread into prepared pan, pressing down slightly (not too much) to create an even layer in the pan. (see tip)

Sprinkle milk chocolate and butterscotch chips all over the top and transfer to preheated oven for 5-10 minutes until chocolate/butterscotch chips are semi-melted.

Use a spoon or spatula to spread chocolate/butterscotch into an even layer. Allow to cool completely before cutting into bars and serving or storing in airtight container.

Take your Rice Krispie Treats up a notch by adding Cinnamon Roll flavor! You can't keep your hands off these.

In a large saucepan, melt butter over medium heat. Add marshmallow and stir with a spoon until completely melted. Remove from heat.

Whisk in the cinnamon sugar. Add cereal.

Press mixture into a parchment paper lined 9inch square baking dish. Cover with plastic wrap and allow to set, about one hour.

For the glaze, whisk sugar and milk together....

Peanut Butter Rice Krispie Treats (Vegan)

rice krispies (or brown rice crispies)

no-stir creamy peanut butter

agave syrup

sea salt

vanilla extract (optional)

Coating and Mix-Ins:

LIne an 8&#215;8 baking pan with parchment paper, or spray it with spray oil, and set it aside.

Place the rice crisps in a large mixing bowl, and set them aside.

Whisk together the creamy nut butter, agave or maple syrup, and sea salt in a small saucepan.

Bring the ingredients to a quick bubble/boil. Reduce the heat to medium-low and simmer for 3 minutes, stirring frequently often to prevent burn. The nut butter and syrup mixture will begin to resemble a thick texture and appearance similar to caramel sauce.

Remove the saucepan from the heat, and mix in the vanilla. Then, quickly combine the mixture with the rice crispies in the mixing bowl. Stir quickly to combine!

Once mixed, press batter into the prepared baking pan and gently press it down using a spatula or hands.

Chill the pan in the fridge for 30-45 minutes before slicing and decorating the rice krispie treats.

Melt the chocolate or white chocolate in a double boiler or in 30-second increments in the microwave, stirring often.

Spread the melted chocolate on top of the set rice krispies pan, and let the chocolate cool before slicing.

Thank you!  I have now made 4 batches of these!  They are sooo good!  I like the ones with the agave syrup better than the maple syrup.  The ones with the agave syrup cook quicker so watch them closely.  I made mine into balls, a recipe makes 30-32 balls.  I found that my hands got too sticky after 5-6 balls, rinsing them under cool water allowed me to get back in business quickly.  I tried coating them in chocolate like a truffle, that was too much chocolate.  I ended up drizzling chocolate over the top and putting sprinkles on them.  They are my cookie exchange entry this year!  Thank you for a great recipe!!!
