Cavatelli with Tomato Ricotta Sauce

Cavatelli Pasta (homemade

olive oil

garlic (minced)

tomato sauce (or passata)

ricotta cheese

Romano cheese (grated)

salt and pepper

Bring a large pot of salted water to boil. (While waiting for the water to boil, you can prepare the sauce).

Over medium heat, heat the olive oil in a large saucepan.

Sauté the garlic about 3 minutes until fragrant -texture should still be soft-do not allow to brown.

Stir in tomato sauce and cook until sauce is thickened (about 7-10 minutes).

Add your homemade cavatell to the pot of boiling water. (Cavatelli are done when they rise to the surface).

Remove from heat and strain pasta in colander.

Combine ricotta cheese with tomato sauce.

Toss cavatelli with the tomato ricotta sauce.

Serve in individual bowls.

Garnish with basil leaves and romano cheese.

Creamy Ricotta Spaghetti

In a large pot of salted boiling water, cook spaghetti according to package directions until al dente. Drain, reserving 1 cup pasta water, and return to pot.

In a large skillet over low heat, heat oil. Cook garlic until fragrant, 1 minute, then stir in ricotta, 1/2 cup pasta water, and lemon zest. Whisk until creamy, then add spaghetti and toss until fully coated.

Season with salt, garnish with red pepper flakes and basil, and serve.

Looks good, sounds good, tastes....TERRIBLE! Look I read the comments so I wasn't too surprised but I tried it anyway, I mean not everyone likes the same thing. I added more pasta water, then some butter, more garlic and salt and pepper and then some cream but no, it was just not good. Let's just say it was like eating spackle. My husband, like the ever supportive trooper he is ate what was on his plate. My Dad took two bites and that's it. Whoever is reading this who still wants to try this recipe add bacon or shrimp.....or anything to this to make it a little better. Oh and this definitely should be a side dish, not a main dish. Simple and good. You definitely need to make sure that it's well salted in step 3. Also, the red pepper flakes should be more than a garnish. I added about 1 and half tablespoons. Bright and quick.

This was not good at all.  I followed the recipe exactly and found it to be bland and very disappointing.

Ricotta Pasta

oz short pasta ((4 cups / 400 grams))

full fat ricotta ((250 grams))

½ cup freshly grated parmesan

pasta water ((120 milliliters))

Salt and pepper (to season)

ricotta ((250 grams))

Bring a large pot of salted water to a boil and cook your desired pasta shape until al dente making sure to reserve 1/2 cup of pasta water.

Pass the ricotta through a sieve and add to a mixing bowl with parmesan, salt and a generous amount of cracked black pepper.

Drain the pasta once cooked then add it back to the pot. Add the ricotta mixture and stir until completely coated.

Add a splash of pasta water and stir again to loosen, the pasta sauce should be smooth and creamy, serve.

Ricotta cheese and pepper version

Follow the same instructions as above but replace the parmeasn with lemon zest and instead of a generous amount of black pepper just sprinkle in a small amount.
