Rigatoni Pasta with Chicken and Sun-Dried Tomatoes

olive oil

garlic

oz sun-dried tomatoes

lb chicken breast (, thinly sliced)

salt

paprika

oz rigatoni ((for gluten free, use gluten free rigatoni))

half and half

basil (, dried)

red pepper flakes

mozzarella cheese (shredded)

capers

pasta water

salt (to taste)

Note: if using sun-dried tomatoes in oil (in a jar), make sure to drain sun-dried tomatoes from oil, before using them. Reserve 2 tablespoons of this drained oil for sautéing as described below:

In a large pan, on high heat, sauté garlic and sun-dried tomatoes (drained from oil) in 2 tablespoons of oil (reserved from the sun-dried tomatoes jar - see note above) for 30 seconds until garlic is fragrant.&nbsp; &nbsp;Add thinly sliced chicken breast, sprinkle with salt and paprika, and cook on high heat for 1 minute on each side. Remove from heat.

In the mean time, cook rigatoni pasta al dente. Reserve some cooked pasta water. Optionally, you can drain and rinse the rigatoni with cold water (to stop cooking).

While the rigatoni is cooking, make the pasta cream sauce.&nbsp; Add half and half to the skillet with the chicken.&nbsp; Add 1 tablespoon of basil, at least 1/4 teaspoon of red pepper flakes.&nbsp;  Bring to a gentle boil.&nbsp; Add Mozzarella cheese. Immediately reduce to simmer and cook, constantly stirring, until all cheese melts and creamy sauce forms.&nbsp;&nbsp;

Add capers.  Stir to combine. If the sauce is too thick - don't worry - you'll be adding some cooked pasta water soon.&nbsp;

Add cooked rigatoni to the skillet with the cream sauce, and stir to combine.

Add about 1/2 cup reserved cooked pasta water because the cream sauce will be too thick (do not add all water at once - you might need less or more of it). This will water down the thickness of the cheese sauce and make it creamier. Immediately, season this creamy chicken rigatoni pasta with salt and more red pepper flakes, to taste, if needed. Let it simmer for a couple of minutes for flavors to combine.

Note: Make sure to salt the dish just enough to bring out of the flavors of basil and sun-dried tomatoes.

Traditionally made in Rome, rigatoni is popular all over Italy, from the capital city to the Mediterranean climes of Sicily. Rigatoni itself comes from the Italian word rigato, pronounced ree-ga-to, meaning ridged. The distinctive grooves which run along the length of this pasta shape mean that it beautifully captures thicker meat or vegetable-based sauces. Both our creamy Sicilian sausage and fennel rigatoni or vegetarian rigatoni alla norma are the perfect solution to a quick but delicious at-home dinner.

How to Make Fresh Rigatoni Pasta

On a clean work surface or wooden board, pile the flour mix onto the mound.

Make a well into the centre of the mound and crack the eggs into the well.

Beat the egg mixture with the fork, slowly folding in the flour from the sides until the egg has all been absorbed by the flour. As the mixture thickens, add 1-2 tablespoons of olive oil and start using your hands or a scraper to incorporate the flour.

Knead the dough for around 5 minutes, until it becomes smooth and malleable.

Cover with a tea towel or plastic wrap and rest for 30 minutes on your countertop. This allows the gluten to relax and leads to a soft and pliable dough.

Set up the extruder attachment with your rigatoni extruder. With your sharp knife, cut off sections of the dough and roll into walnut-sized balls. Feed the dough balls into the top of the extruder, a few at a time until they are all gone. As the pasta dough is forced out of the die of the extruder, cut them into 2-3 centimetre pieces. Lay these out on a lightly floured wooden board.

When you’ve finished extruding all of your rigatoni, bring a large pan of water to a boil with a generous sprinkle of salt. Cook your pasta in the water for 2-3 minutes until al-dente.

Strain your pasta, reserving a little bit of the pasta water. Serve with a sauce of your choice.

rigatoni (cooked and drained)

spaghetti sauce (24 ounces each)

In a large bowl, mix together cooked rigatoni, spaghetti sauce, browned ground meat, 1 cup mozzarella cheese, Italian seasoning, and parmesan cheese.

Pour mixture into a 9x13” casserole dish and top with remaining 2 cups of mozzarella.

Bake at 350F for 25 - 30 minutes, until warmed through and cheese is melted and bubbly. If you are using a broiler safe dish, you can turn on the broiler in the last couple minutes to brown the cheese, but watch closely!

RIGATONI PASTA BAKE

Carbone Spicy Rigatoni Vodka

1 lb Rigatoni boil and drained

3 tbsp olive oil

2 tbsp butter

½ white onion diced

1 Calabrian chili pepper finely

cloves

¼ cup tomato paste

¼ cup vodka

1 cup heavy cream

water

⅓ cup Parmesan cheese

Season a large pot with olive oil and butter on medium heat. Add the onion. Season with a generous pinch of salt and cook for 5 minutes, cook until onions are softened and translucent.

Add the Calabrian chili peppers and garlic and cook for 2 minutes, until fragrant.

Add the tomato paste mix to combine with the other ingredients, cook the tomato paste for approximately 5-7 minutes, letting the tomato paste brown on the bottom of the pan. If the pan is drying up, add a little more olive oil.

Add the vodka into the pan, and scrape up all golden brown bits from the bottom. Mix all of the ingredients together. Adjust the heat to low and add the heavy cream. Stir until combined and let it simmer on low heat.

Add the cooked pasta, 1 cup pasta water and shredded Parmesan to the sauce and stir together. Taste to make sure the levels are salt are to your liking. If you want the sauce to be more &#8220;saucy,&#8221; add more pasta water. Enjoy immediately.

Baked Rigatoni

Tablespoon Olive Oil

Preheat oven to 350 degrees.  Spray a 9x13 inch baking dish and set aside.  In a large pot bring water to a boil and cook the rigatoni according to package directions.

In a medium sized sauce pan over medium high heat add the olive oil, onions and garlic.  Sauté until tender.

Add in the ground beef and sausage and cook and crumble until no longer pink.

Add in the italian seasoning, salt and pepper to taste, and marinara sauce.  Reduce heat and let simmer.

Drain the pasta and return to the large pot.  Add the meat sauce to the pot and stir until combined.

Spread half of the pasta in the bottom of your 9x13 inch dish.  Layer with half of the pasta.

Layer with half of the cheeses.  Repeat with remaining pasta and cheese.

Cover with aluminum foil and bake for 20 minutes.  Remove the foil and bake for an additional 15-20 minutes or until bubbly.

This makes SO much. I ended up taking half to a friends house. So good, but I’m gonna half it from now on

Made it.  Turned out great.  My Grandson told me it was Amazing!  I agree.

Made this tonight for supper. I omitted the sausage &amp; the salt &amp; pepper &amp; added 2 cups of cottage cheese to the middle layer. I will be making this again, possibly even as a freezer meal.

My family thought it needed more flavor.  Maybe fennel, or spicy Italian sausage. I felt the pasta was too much; maybe half pound or 3/4 pound at most.
