Delicious, crispy breakfast potatoes roasted to perfection in the oven. These easy roasted breakfast potatoes are heavily flavored with warming spices like turmeric, garlic and cumin, and are wonderful served with eggs, avocado, sausage or bacon! A must-make for breakfast or brunch.

Perfectly Crispy Roasted Breakfast Potatoes

For the potatoes:

russet potatoes,

olive oil

For the spice mix:

garlic powder

cumin

coriander

turmeric

paprika

red cayenne pepper

salt

black pepper

Preheat oven to 425 degrees F. Coat large baking sheet with nonstick cooking spray to prevent sticking.

Add potatoes to a large bowl, drizzle with 2 tablespoons olive oil, then add the following spices: garlic powder, cumin, coriandr, paprika, ground turmeric, red cayenne pepper, salt and pepper. Use clean hands to toss potatoes to coat the the potatoes in oil and spices. Add potatoes to the baking sheet and spread out evenly.

Bake for 20 minutes, then use a metal spatula to toss potatoes, increase heat to 475 degrees F and cook potatoes for another 15-20 minutes until they are golden brown and slightly crisp to your liking.

Serve with ketchup or hot sauce! Serves 6-8.

Roasted Homestyle Breakfast Potatoes

lbs. potatoes (I like red or Yukon gold)

yellow onion

green bell pepper

olive oil (*optional)

smoked paprika (or other herbs/seasonings)

Salt

Preheat oven to 425°F (220°C).

Rinse potatoes, then pat dry with a towel. (This helps for crispier potatoes.)

Dice potatoes into about 3/4″ cubes. Dice onion and bell pepper into smaller pieces, about 1/2″.

Place them all on large rimmed baking pan and drizzle with a small amount of olive oil (*optional).

Add salt and smoked paprika or other desired herbs. (I also like garlic powder and dried basil.) Toss to thoroughly combine.

Roast for about 45-50 minutes or until potatoes are desired tenderness, stirring halfway through.

Freshly minced garlic, south Louisiana seasonings in a buttery/olive oil sauce make these roasted Cajun potatoes just as flavorful as they are easy.

Roasted Cajun Potatoes

butter

garlic cloves, minced

onion powder

parsley flakes

Crystal hot sauce

black pepper and cayenne pepper

onion, chopped

green bell pepper, chopped

celery ribs, cleaned,

red peppers, chopped

Preheat oven to 400 degrees F.

Melt the butter in a small pot.

Add the remaining sauce ingredients to the pot, and cook until just heated through, about 45 seconds. Remove from heat.

Pour the chopped potatoes into a well-greased cast iron skillet.

Add the chopped Cajun trinity veggies and the sauce to the potatoes.

Stir until all of the ingredients are fully combined.

Bake uncovered for 50 to 60 minutes or until the insides of the potatoes are tender and the outsides are crispy, flipping the potatoes with a metal spatula every 15 minutes.

Serve immediately.
