Summer (pumpkin dhal) lovin', had us a blast. This recipe is also vegetarian and vegan friendly.

Summer pumpkin dhal

x 2cm-thick wedges Jap pumpkin, halved crossways

olive oil

1L (4 cups) vegetable stock

onion, finely chopped

garlic cloves, crushed

tsp ginger

tsp turmeric

(400 grams) red lentils

These air fryer roasted cashews are super easy to make and so addictive. They make perfect party snack, holiday gift or hostess gift. Great for Holiday season.

Easy Air Fryer Roasted Cashews Recipe

Raw Cashews

tsp Chaat Masala (or Seasoning of your choice)

tbsp Ghee (or Cooking Oil)

Gather Ingredients. Melt Ghee  in microwave. 

Add RAW CASHEWS to a Mixing Bowl. Pour Ghee or Cooking Oil on top. Mix well with a fork. 

Transfer the cashews to the Air fryer basket in a single layer. 

Air fry at 360*f for about 7-8 minutes till they get nice Golden in color. If you want to keep them little pinkish, then air fry for 6 minutes. Shake these in between for even air frying.

Take these air fryer roasted cashews in a mixing bowl. Add Chaat Masala or the seasoning of your choice (Cajun Spice Mix, Piri Piri spice Mix, salt &amp; pepper, Pub Style, Ranch seasoning) while it’s hot. Mix with a fork.

Cashews are soft when they are hot. They will harden up as they cool down. Don’t eat them while they are hot. It can burn your mouth. 

Serve these at room temperature. Or store these in air tight jar at the kitchen counter. They will last for good 3-4 weeks.

Coating nuts with little ghee or oil helps them retain their sheen. Also it helps in making the seasoning stick to the nuts. Although you can skip using it or use very little amount.

Please do not eat the nuts super hot or else it can burn your mouth. 

Make sure not to over-eat the nuts. It can be harmful. Always consult your doctor if you have dietary restrictions

This homemade Cashew Butter is so quick and easy to make. It&#039;s smooth, creamy, and naturally sweetened with a touch of honey and vanilla!

Cashew Butter Recipe

honey (or more, to taste)

coconut oil (melted and cooled slightly)

vanilla extract

salt

Preheat oven to 300 degrees F.

Place cashews on a baking sheet.

Roast for about 8-12 minutes, stirring half way through.

Let cool for 10 minutes.

Place roasted cashews into food processor and process until smooth. You’ll need to stop and scrape down the sides. This should take about 3-5 minutes.

Once creamy, add in honey, coconut oil, vanilla, and salt and process until well combined. This might take another couple of minutes.

Serve immediately or store in fridge in airtight container!

Easy Curried Roasted Cashews

raw cashews

water

tbsp coconut sugar ((or white sugar))

tsp salt

tsp oil

onion powder

tsp cumin

tsp coriander

paprika

turmeric

Preheat oven to 325 °F (160°C) and line a baking sheet with parchment paper.

Make the syrup. I found the best way to coat the cashews with salt and sugar evenly was first to dilute them in water. To do so, add the water, coconut sugar, and salt to a saucepan. Heat over medium heat for about 2 minutes or until the sugar is fully dissolved. Remove from heat.

Toss the cashews. Add the raw cashews to a mixing bowl. Pour in the syrup and oil and stir to combine. Add the spices and toss to coat.

Spread on a baking sheet. Spread the cashews on a baking sheet lined with a sheet of parchment paper. Ensure you spread the cashews in a single layer.

Roast. Roast the cashews for 12-13 minutes, stirring once halfway through baking. You don’t want to roast the cashews too long. Otherwise, the nuttiness will overpower the spices. I found 12 minutes at 325°F to be the perfect spot, yielding crunchy cashews without burning the spices.

Let cool. Remove the cashews from the oven and let them cool completely. You can store these curried cashews in an airtight container at room temperature for up to 2 weeks.

Wonderful recipe! I used Xylitol granules in place of the sugar and it turned out great.

Such a fantastic spicy snack option, my husband couldn't stop eating them. :)

I have always eaten raw cashews, I have never tried roasted or salted cashews. I really wanted to try this recipe because it looks delicious, and I just did. It's weird because now they taste like peanuts, I guess because they are roasted? Who knows! Anyway, this makes an amazing appetizer or snack, thank you for sharing the recipe!
