Oven-roasted corn on the cob with homemade garlic butter is buttery, juicy, crunchy, and perfectly charred on the outside — without a grill.

Oven-Roasted Corn on the Cob

unsalted butter, softened

garlic,

salt

black pepper

cobs of corn, peeled

In a small mixing bowl, cream together the butter, garlic, salt and pepper.  Spread the butter mixture over each corn.

Wrap each corn in aluminum foil and place on a large half sheet baking pan. Roast in the preheated oven for 40 minutes, turning the corn over halfway.

Take out the corn and open the foil on top to expose it. Turn on the broiler function on the oven and place corn back in. Broil on high for 2-3 minutes.

Serve with a piece of butter on top. Sprinkle more salt and pepper as desired.

Loved this! Super easy and tasty. It's a great side dish, but I prefer to eat it simply as a snack haha.

Oven Roasted Corn on the Cob with Garlic Butter

Super sweet and juicy oven-roasted corn slathered with sweet and spicy honey chili butter is a true summer treat.

Oven Roasted Corn with Honey Chili Butter

corn (1.20)

Tbsp butter, room temperature (0.37)

Tbsp honey (0.12)

tsp chili powder (0.05)

salt (0.01)

Preheat the oven to 350ºF. Prepare the ears of corn by cutting off the very tip of the ear to remove most of the silk, and removing the outer husks (the thicker bright green layers), leaving the inner layers (the thinner lighter green husks).

Transfer the prepared ears of corn to the fully preheated oven, placing them directly on the oven rack. Roast for 35 minutes.

While the corn is roasting, prepare the honey chili butter. In a small bowl, combine the butter, chili powder, honey, and salt. Whip the mixture with a fork until smooth and evenly combined.

After 35 minutes the husks on the corn should be slightly browned and papery in appearance. Carefully remove the corn from the oven using oven mitts or a thick towel. Let them rest for about five minutes, then carefully pull back the husks and remove any remaining silk.

Serve hot with the bowl of honey butter for smearing over the kernels just before eating.

Roma tomatoes (chopped)

red bell pepper (chopped)

black eyed peas, 15 oz. each (drained & rinsed)

Place corn in a bowl with oil, toss to coat; place corn on baking sheet and bake at 450 degrees for 18-20 minutes. Cool.

In a jar, combine salt, cumin, lime juice, oil and cider vinegar. Shake well.

In a large bowl, combine the cilantro, red onion, tomatoes, red bell pepper, garlic, black eyed peas and roasted corn. Stir in dressing and chill.

Before serving, add avocado.

Preheat an oven to 350 degrees Farenheit.

Using a knife or kitchen scissors, cut off the excess corn silk from each ear of corn. Remove any loose outer pieces of husk.

Place ears with husks on directly onto the oven grates, spacing them out evenly. Bake for 35 minutes.

Remove the corn from oven and allow it to cool slightly before peeling off the husks. Season as desired (we like butter or olive oil, kosher salt, and freshly ground pepper).
