Roasted Red Cabbage adds a splash of colour to any meal! The warm and comforting flavours of red cabbage and sweet apple in this easy vegan side dish are perfect served with all kinds of dinners. With minimal prep and lots of delicious flavours, it&#039;s simple enough to make on weeknights and impressive enough for holiday feasting. I&#039;ve even included instructions for transforming it from a side to a main by adding some vegan sausage while roasting!

Roasted Red Cabbage

kg / 35 oz or 1 small head red cabbage (thinly sliced)

onion (thinly sliced)

apples

thyme

sage

red wine vinegar

maple syrup

olive oil

Vegan Sausages ((Field Roast apple sage sausages are incredible with this))

Preheat oven to 400 ° F (200 °C).

To a large oven-proof dish add the red cabbage, onions, apples, thyme and sage.

Pour over the red wine vinegar, maple syrup/sugar and olive oil and sprinkle over the salt and pepper. Stir well to combine.

Cover with a lid or very tightly with foil, and bake in the oven for about 50 to 55 minutes, after which time the cabbage should be really tender and smell fragrant and delicious. If it&#039;s not, give it a few minutes longer. If you get caught up with something it&#039;s fine left in the oven longer. If it will be much over 30 minutes extra though turn the oven down a bit to 325°F (160 °C) after the initial 50 to 55 mins.

Check the seasoning before serving and add a little more salt and pepper if required. Be sure to stir it in well.

If you want to turn it from a side to more of a meal, add some vegan sausages. If using Field Roast sausages (or similar that are already cooked and just need to be heated through), slice them up and add them to the cabbage ten minutes before the end. If using raw vegan sausages like Beyond, cook them in a saute pan first while the cabbage is roasting, either whole or in slices until browned nicely and cooked through, then add them to the cabbage for the last 10 minutes of cooking time.

To turn from a side to an entree

With a honey balsamic marinade, this roasted red cabbage is an easy recipe with simple ingredients that is an incredibly versatile side dish. You'll never overlook this vegetable again.

Trim the bottom off the cabbage and cut it in half lengthwise. Then cut it into 1/2-inch-thick slices.

In a medium bowl, whisk together the olive oil, balsamic vinegar, honey, mustard, garlic powder, onion powder, red pepper flakes, salt and pepper. If possible, it helps to do this in a wide shallow bowl with a flat bottom.

Dip each cabbage slice on both sides in the marinade. Place the slices on a sheet pan in a single layer. They should not be touching or overlapping.

Roast the cabbage for 20-25 minutes until browned in spots and caramelized at the edges.

Red Cabbage Steaks

medium/large red cabbage

Tbsp garlic, chopped

tsp sea salt

tsp black pepper

Slice the cabbage steaks ½ inch thick starting from the top all the way through the bottom (leave the core in).

Lay the ‘steaks’ on a baking sheet and sprinkle with olive oil, garlic, salt and pepper.

While the steaks are cooking heat the balsamic in a sauce pan over medium-high heat. Lightly simmer until mixture has reduced by half.

Start with drizzling a ¼ cup of balsamic reduction on the steaks and top with more if desired

This roasted red cabbage recipe is super easy, garlicky and tangy, and vibrantly delicious! Perfectly crispy with tender centers, and a creamy yogurt dill sauce to top!

Quick &amp; Easy Crispy Roasted Red Cabbage Recipe

tbsp vegan butter, melted

garlic,

dill

Sea salt & black pepper

Prep: 

Preheat the oven to 425F, and line a baking sheet with parchment paper. Wash the red cabbage, and peel off any bad or worn leaves.

Slice: 

Slice the red cabbage in half. Then take one of the halves and slice it lengthwise to form a red cabbage steak. You should be able to get 3 slices out of one half. Repeat for the other half. (See blog post photos for reference). Place the red cabbage steaks onto the baking sheet.

Season: 

Brush the melted vegan butter on top of the red cabbage steaks. Then sprinkle on top the minced garlic, parsley, dill, sea salt and pepper evenly.

Roast: 

Place the baking sheet into the oven to roast for 30-40 minutes. The edges of the roasted red cabbage will be crisp.

Serve and enjoy! 

Serve your roasted red cabbage warm with yogurt dill sauce or as is along with your main. Enjoy!
