Use a vegetable peeler to peel the yellow squash into ribbons. Add the squash to a large bowl.

Add 1 teaspoon salt, 1 teaspoon pepper, the garlic powder, onion powder, and 1 teaspoon oregano, and toss well until the squash is coated. Set aside.

Heat the olive oil in a large pan over medium-high heat. Add the onion and garlic and cook for 5 minutes, until fragrant.

Add the ground chicken, the remaining teaspoon salt, remaining teaspoon pepper, remaining teaspoon oregano, and the thyme, and cook until chicken is lightly golden brown.

Add the crushed tomatoes, stirring to break up, and cook for 15 minutes, or until the sauce has reduced. Remove from the heat and set aside.

In a medium bowl, combine the ricotta, Parmesan, and eggs and whisk until smooth.

Grease a 9x13-inch (22x33 cm) casserole dish with cooking spray.

Spread about ¼ of the ground chicken and tomato mixture in the bottom of the dish. Top with about ¼ of the squash noodles and ⅓ of the cheese mixture. Repeat with the remaining ingredients, finishing with a layer of noodles

Bake for 30 minutes, or until the cheese is browned and melted.

What a simple appetizer recipe. We really liked the cool ranch flavor combined with the crunchy fresh peppers and olives. The hardest part of this recipe is letting the roll-ups chill in the fridge. Wrap them in a variety of flavored wraps to make them extra colorful and tasty. These are a great little finger food.

Veggie Cream Cheese Roll-Ups

package(s) cream cheese, softened, 8 oz

- envelope ranch dressing mix

green onions, chopped (can also use chives)

flour tortillas (can use wheat, spinach, or tomato tortillas)

celery rib, chopped

cup(s) green bell pepper, chopped

cup(s) red bell pepper, chopped

Ham and cheese roll ups

ranch seasoning packet

American cheese

tortillas

Stir ranch seasoning into softened cream cheese. (For extra creamy cream cheese, beat with a mixer for 2-3 minutes.)

Spread a thin layer of cream cheese mixture over top of the tortilla. Layer 1-2 pieces of ham and 2 slices of cheese down the middle of the tortilla.

Roll up as tightly as possible and then wrap in plastic wrap. Continue making rolls until ingredients are finished. Store in the refrigerator for at least one hour.

Once the rolls have chilled, remove plastic wrap and use a knife to cut off the ends. Slice roll into 1/2 inch rounds and serve.

Spread 1 tablespoon of cream cheese all over each tortilla. Place the smoked salmon in a single layer on the tortilla and sprinkle with dill and black pepper. Leave one edge with only cream cheese to act as "glue" when rolled.

Beef Enchilada Crescent Roll-Ups

can refrigerated Pillsbury Grands! crescent rolls (8 count)

(8-ounce) package Mexican blend shredded cheese (2 cups)

Preheat the oven to 350°F and lightly spray a 9x13-inch baking dish with nonstick cooking spray.

In a large skillet, brown the ground beef over medium heat until cooked through. Drain away excess grease. Add the salsa to the meat in the skillet and cook on low for about 5 minutes or until heated through. Add salt and pepper to taste. Allow to cool slightly.

Unroll the crescent rolls and place about 2 tablespoons of the meat mixture on the wide ends of each crescent. Add a generous pinch of cheese. Roll up each crescent and place it into the baking dish. It&#39;s a messy, imperfect process, so don&#39;t worry if some of the filling falls out.

Pour the enchilada sauce over the crescents and top with the remaining cheese. Leftover meat mixture or filling that fell out when rolling can be sprinkled over the crescents as well.

Bake for 25 to 30 minutes or until the crescents are golden brown. Allow to cool slightly then serve with toppings of your choice.
