Celebrate Mardi Gras With King Cake Shots!

The Keto Rumchata is a low carb take on the Rumchata, which a rum drink with the wonderful flavors of Horchata. This Keto Rumchata is refreshing, dead simple, and absolutely delicious. Even though it has dairy, it makes for an amazing warm weather cocktail that everyone will ask for!

Keto Rumchata

oz (59 milliliters) Unsweetened Almond Milk

oz (59 milliliters) white rum

1.5 oz (44 milliliters) Keto Simple Syrup

tsp (7 milliliters) heavy cream

vanilla extract

salt

nutmeg (optional)

In a shaker glass add the almond milk,...

In a shaker glass add the almond milk, simple syrup, heavy cream, cinnamon, vanilla extract, nutmeg, salt, and rum.

Add ice and shake for ten seconds

Strain into a highball glass over ice.

Keto Rumchata is a delicious adult beverage made in the spirit of horchata. But, horchata and rumchata are NOT keto or low-carb friendly. So, I made a version that IS keto and low-carb friendly. When someone who doesn't like rumchata or dairy like cocktails tried it, they simply said 'wow!'

You can drink this rumchata neat, on the rocks, in coffee, or with other cocktails. And if you like - you can even leave out the rum and enjoy a... 'chada'!

INGREDIENTS
- 2 oz Unsweetened Almond Milk
- 2 oz white rum
- 1.5 oz Keto Simple Syrup (How to make: https://youtu.be/VLqWlywGKdw)
- 1 tsp heavy cream
- ¼ tsp ground cinnamon
- ¼ tsp vanilla extract
- dash of ground nutmeg
- pinch of salt

DIRECTIONS
1. In a shaker glass add the almond milk, simple syrup, heavy cream, cinnamon, vanilla extract, nutmeg, salt, and rum.
2. Add ice and shake for 10 seconds.
3. Strain into highball glass over ice.
4. Enjoy!

Add all ingredients to a blender and mix...

RUMCHATA CARAMEL MARTINI

Bailey's Irish Cream

Rumchata liqueur

caramel ice cream syrup (or sauce)

ice (approximate)

Cool Whip (for garnish)

caramel sauce (for garnish)

Kraft caramels (for garnish)

salt (optional)

Drizzle caramel sauce into the martini glass or coupe glass.

Fill a cocktail shaker half full with ice.

Add Irish cream, Rumchata, heavy cream, and caramel syrup. (Add a pinch of salt if desired.)

Replace the lid and make sure it&#39;s tight. Shake for about 15 seconds to combine and chill the ingredients. (I sing the alphabet song in my head. 😅)

Remove the top of the shaker and strain it into your prepared glass.

Add a spoonful of cool Whip and another drizzle of caramel syrup on top. Serve immediately. Cheers!

A wonderfully buttery, vanilla, and cinnamon-flavored cake filled with boozy rumchata liquor.

RUMCHATA POUND CAKE

butter (salted or unsalted (either),

rumchata liquor (like this)

all-purpose flour (sifted then measured)

eggs (at room temperature)

Ingredient list is correct (there is no baking powder/soda)

butter (melted)

sugar (aka confectioners)

Preheat the oven to 325°F. Grease a (10-inch, 12 cups) bundt or tube pan with solid vegetable shortening and sprinkle with sugar (or you can use flour). Alternately, you can use Wilton Cake Release. Position the oven rack in the center of the oven.

Sift then measure all-purpose flour into a bowl.

In the bowl of an electric stand mixer, using the paddle attachment, beat the butter at medium speed, for about 3 minutes, until very creamy. Stop the mixer and scrape the sides and bottom.

Add the sugar and beat for about 2 more minutes. Stop the mixer and scrape the sides and bottom, beat another 1 minute.

Beat in the eggs one at a time, beating for 20 to 30 seconds after each addition. Stop the mixer and scrape down the sides and bottom of the bowl with a rubber spatula.

Add the vanilla to the rumchata.

At low speed, beat in the flour mixture in 3 additions, alternating it with the rumchata and vanilla. Begin and end with the flour mixture.

Scrape down the sides of the bowl thoroughly after each addition.

Stop the mixer and scrape the batter. Mix again then evenly spoon the batter into the prepared pan. Bake for 75 to 85 minutes, or until a pick comes out clean or with dry crumbs. (You know your oven, bake accordingly, 80 minutes worked for me. As well dark vs light pans will cook differently.)

Cool the cake in the pan on a rack for 30 minutes. Carefully, loosen from the pan and invert on a cake pan.
